Energy-efficient electro-treatment process for the fruit
sector.
The PE3F2 project aims to develop an alternative pasteurisation
technology designed for industrial quantities of fruit- and vegetablebased juices and processed products in profitable economic conditions.

The stated objectives of the project :

The project plans to adapt Electrical Impulse Field (EIF) technology to fruitand vegetable-based processed products (fruit juices, compotes, purées) and
make an industrial prototype.
The purpose is to:

reserve the organoleptic properties of fruit-based products (desserts,
purées, squashes, juices) to an unprecedented degree
>G
uarantee a safe healthy product free of any degradation product caused
by heat treatment
> Verify the effect of EIFs on enzymes
>P
reserve the nutritional properties of fresh fruit (vitamins, minerals,
polyphenols, etc.)
