Mais ce sont sûrement les Italiens qui ont inventé le risotto et, même si chacun a sa propre spécialité préférée, la préparation de la recette originale n’a pas de secrets. Il s’agit d’un heureux rendez-vous culinaire de quinze minutes, animé par des gestes habiles: on fait revenir le riz dans des oignons hachés fondus dans l’huile d’olive, puis on le mouille avec du vin blanc qu’on laisse évaporer avant d’ajouter de petites quantités de bouillon chaud, puis, en fin de cuisson, un juste dosage de beurre, de parmesan râpé et de safran en poudre. Ce risotto typique agrémentait la table des jours de fête des Milanais.
