DOMAINE DU MAS MELLET « PARI FINESSE 2013»
Variety and location:
Carignan 20%, Grenache noir 20%, Syrah 60 % from plots planted
on slopes to the dome and are selected for aromas of fruit they bear.
The winery:
Harvested and selection done by hand at aromatic maturity
Total destemming
Wine without sulfur
Indigenous yeast
Extraction work done with softness
Fermentation temperature quite mastered
Fermentation during 8 to 10 days maximum
Running off and ageing to keep the fruit and freshness
The wines are neither clarified nor filtered for bottling
Tasting Notes:
At first the nose deliver notes of caramel then a bunch of spices and a
strong flavor of black Zan (licorice). Chiseled tannins, a bit of
minerality, but also a stunning length in mouth!
