The weather was more moderated during summer, with a sunny august that enabled to stop the growth of the grapes and start the maturation process. Harvest was later than the previous vintage because of the rain. TERROIR Sandy gravel on clayey subsoil IN THE VINEYARD Flowering : From May 28th to June 20th, 2012 Veraison : From July 31st to August 31st, 2012 Harvest : -Merlot: from the 4th to the 5th of October, 2012 -Cabernet Sauvignon: from the 12th to the 15th of October, 2012 100% manual Surface in Production : 7ha 26a 72ca WINEMAKING Sorting : The whole bunches of grapes are systematically sorted in the vineyard at first, then destemmed before sorted by hand on vibrating sorting table. Wine-making follow-up : Thermoregulated concrete or stainless steel vat Vinification by selected parcels Fermentation around 25-26°C Gentle extraction by pumping-over / punching of the cap / adapted releases Length of maceration is determined by tastings and depending on the grape variety and the parcels: average of 21 days Pressing : Use of rotating vertical wine press, to obtain gentle extraction. Press wine systematically separated. Further tasting of press wine will determine its addition to the finished wine or not Maturing : Malolactic fermentation takes place in barrel Traditional maturation in barrel (of which 50% are renewed each year) Duration: 14 months.
