NOS SELECTIONS – Bordeaux - Blanc SAUTERNES « Château Haut Bergeron » Producer : R. LAMOTHE & Fils Grape-variety : 7500 feet / ha with 90% Sémillon, 8% Sauvignon, 2% Muscadelle. Age of the vines : ≈ 50 years old Situation : In the communes of Preignac, Bommes, Sauternes and Barsac. A part of the vineyard is closer to the Château d’Yquem Soil : Gravely-Clay and sandy in Sauternes, clayey-limestone in Barsac. Production area : 25 ha 54. Vinification : “Cot” pruning, traditional culture, organic improvement, thinning out the leaves at the end of August in the grapes. Mainly manual grape-harvest with a consecutive sorting out (4 to 6 times in botrytised grapes). Traditional vinification at thermo-regulated temperature. In funnel and then a fermentation in oak barrels for about 18 months (30 to 50% in new barrels) Alcoholic Content : 14° Tasting : Powerful wine with a big fineness, a great unctuousness and a subtle bouquet, liquored, very alcoholic and have honey, lime and acacia flavours. Serving temperature : 6°C to 8°C. Suggested dishes : Aperitif or with some “fois gras”, pike with white butter, sole or calf sweetbread, frog legs, roquefort, walnut cakes, Pithiviers and sorbets Ageing : 4 to 25 years or more.
