The Bordeaux region offers a maritime climate with hot summers, mild winters and oceanborne rain. This relatively inconsistent climate is one reason for the variability in the character of wines from one vintage to the next. The Gironde and its tributary the Dordogne divide the Bordeaux region into two major areas: the left bank and the right bank. These are distinguished particularly by the nature of the soil: on the left bank, gravel predominates while clay predominates on the right bank. Cabernet Sauvignon, which thrives on gravel, is the main grape variety on the left bank. Clay-loving Merlot is mainly present on the right bank. producing regions in France. Burgundy owes its reputation as much to its whites as to its reds. In contrast to Bordeaux, good Burgundies are rare since Burgundy produces only one-quarter of the quantity of wine produced in the Bordeaux region. Burgundy offers a continental climate (hot summers, cold winters). The vineyard is impeccably kept, with complete ploughing, moderate improvement of the soil with the sole use of manure. The harvest is also given much attention. The picking of the grapes is made with delicay, in 40 kg caskets. Within 30 minutes, the grapes are sorted out in the vine- yard and a second time in the cellars, the raw material nearing perfec- tion. The cru, which corresponds to an individual wine-growing area, is the particular combination of grape variety, ‘terroir’ and climate. The three Champagne varieties have their own individual characteristics which evolve and are expressed differently depending on the ‘terroir’, but they each have one dominant theme: strength from Pinot Noir, fruitiness from Pinot Meunier and finesse from Chardonnay. This dominant character is always accentuated in a blend which includes only wines of a single variety. So a Blanc de Blancs contains only white Chardonnay grapes. Louis XIII THE END OF PROSPERITY : France was profoundly marked by the Revolution in 1789. The absolute monarchy was abolished, as were the privileges of the nobility and the clergy. Certain estate owners were dispossessed, and Saint Robert Convent was among the properties to suffer this fate. The estate already featured on the map of France drawn by Cassini, the cartographer to Louis XV. At the time it was an attractive, prosperous place of leisure comprising a chapel, an elegant farmhouse and a spring which was said to have medicinal virtues. Over the centuries, however, it fell into ruin, a shadow of its former self.
