“2007 Collioure Cosprons Levants
“A blend of Syrah, Mourvedre, and Grenache, the 2007 Domaine du Mas Blanc (Docteur
Parce) Collioure Cosprons Levants unfolds with air to shows deep, complex aromatics
of smoky dark fruits, raw, almost gamey meat, old wood/tree bark, herbs and freshly
crushed stones. With air, this gains in both richness and depth. In the mouth, the wine is
medium bodied with dense, rich fruit, solid underlying structure and a tight, compressed
finish. I think this will continue to evolve for another 2 to 4 years and then drink well over
the following 5 to 8.
2007 Collioure Clos du Moulin
A large scale, ripe effort, the 2007 Domaine du Mas Blanc (Docteur Parce) Collioure Clos
du Moulin is primarily Mourvedre with a splash of Counoise. It offers deep, licorice infused
dark fruits, roasted herbs, meat, iodine and an underlying charcoal, earthy character on
the nose. The wine opens up with air and gains a touch more freshness and precision. In
the mouth, it is full bodied, concentrated and presents of mouthful of ripe, lush fruit that
carries to the finish. There's enough acidity to keep the wine fresh and interesting. I think
this will drink well over the following 10 years.
2007 Collioure Les Junquets
The 2007 Domaine du Mas Blanc (Docteur Parce) Collioure Les Junquets is an intriguing
blend of Syrah, Roussanne and Marsanne. The Syrah shows on the nose with beautiful
and pure dark fruits, flowers, meat and oak aromas. With air, this picks up more floral and
subtle peach notes. The medium to full bodied palate carries impeccable balance, ripe
fruit, fresh acidity and a long, enjoyable finish. This changed the most with air; Going from
fresh and pure on the first night, roasted and rustic on the second and then back to fresh
and pure on the third.”
