L’HISTOIRE
Château Pauillac est situé au nord du village
de Saint Lambert. Il forme une enclave
parmi les plus célèbres crus de l’appellation
de Pauillac. Tout semble indiquer que les
vignes de cette propriété sont là depuis
toujours. Château Pauillac a réussi a rester
une propriété familiale malgré l’intérêt des
châteaux voisins. Elle appartient à Pierre
Peyronnie depuis 1971.
LE VIN
Le vignoble de 20 hectares est planté dans
un sol graveleux et les racines sont encrées
si profondément qu’aucunes autres vignes
plantées dans le médoc ne peuvent avoir les
mêmes caractéristiques.
Les vendanges se font manuellement. Les
vignes âgées de plus de 60 ans
Le vin est élevé 18 mois en barriques de
chêne français.
Cet assemblage de 60% cabernet sauvignon,
15% cabernet franc, 20% merlot, 5% petit
verdot et malbec a été assemblé par Mr Eric
Boissenot.
Le vin a une couleur rouge sombre. Le nez
développe des arômes de mures et de cassis.
En bouche, ce vin est élégant, souple et
rond avec des notes boisées bien enrobées.
Délicieux avec une finale bien persistante.
Servi à température ambiante, ce vin
accompagnera à merveille les viandes rouges
grillées ou rôties et les fromages.

THE STORY
Château Pauillac is on an outstanding
vineyard site located north of the tiny village
of Saint Lambert. It forms an enclave among
the finest great growths in the Pauillac
appellation. Everything seems to indicate
that vines have been grown there for a very
long time. Château Pauillac has managed to
stay independent and family owned despite

the appetite of the prestigious estates around
it. It has been in the family of the present
owner, Pierre Peyronie since 1971.
The 20ha vineyard is planted on gravel beds,
reaching a greater depth than any found
elsewhere in the Médoc.
THE WINE
The 60 years old stumps are low yieldling
and the grapes are handpicked.
This blend of 60% Cabernet Sauvignon,
15% Cabernet Franc, 20% Merlot, 5%
Petit Verdot and Malbec has been crafted
by famous left bank winemaker: Eric
Boissennot.
The wine has been matured for 18 months in
French oak barrels.
This wine has a deep and intense colour. The
nose is aromatic with notes of cherry and
black currant. The palate is elegant, subtle
and round with an oak character. The finish
is delicious and long.
Served at room temperature, it will be the
perfect accompaniment to all roasted, grilled
red meats and cheeses.
