GRAPES: 75% Syrah, 20% Grenache noir, 5% Mourvèdre.
20 year old vines. Yield: 35 hl/ha. 5000 vines/ha.
TERROIR: a 320 m high limestone plateau sliced apart by a natural gorge 100
m deep and 150 m wide. Plot selection of the rockiest part of this plateau for a
deeper style.
Warm and dry Mediterranean climate, tempered by the altitude and a
continental influence from the Larzac plateau.
VINIFICATION: hand-picking with sorting of the grapes. Destemming.
Fermentation in glazed concrete tanks with temperature control and daily
pumping overs. Long maceration of the Syrah (15-20 days). Malolactic
fermentation.
AGEING: 10 months in demi-muids for 1/3 of the cuvée, in concrete tanks for
the rest of the cuvée.
TASTING:
Colour: dark red colour.
Nose: expressive jammed fruit aromas with spicy notes.
Palate: intense structure and sucrosity.
To be tasted at 16-17°C with a grilled rib steak, a game stew or matured cheese.
Can be laid down for up to 8-10 years.
