Students will get an understanding about the anatomy and pathophysiology of the kidney as a basis
for dietary implications in chronic kidney disease patients within different stages of the disease.
Students will be able to compile dietary advises according to international guidelines for pre-dialysis
and dialysis patients.

Learning objectives:

Physiology of the kidney (anatomy & function, assessment of renal function)
•
Protein and phosphate metabolism
•
Pathophysiology, diagnosis and treatment of acute kidney injury and chronic kidney disease
•
Chronic kidney disease: causes/risk factors, diagnosis, symptoms, progression
•
Treatment options of chronic kidney disease (conservative treatment, dialysis,
transplantation)
•
Nutritional objectives in pre-dialysis and dialysis patients (focus on energy, protein,
phosphate and potassium)
Practical course:
•
Identifying dietary needs in accordance to the disease state
•
Calculation of dietary needs of pre-dialysis and dialysis patients
•
Matching food according to protein content by using a food database
•
Compilation of protein/ potassium exchange tables by using a food database
•
Preparation/calculation of protein and energy contents of menus suitable for chronic kidney
disease patients
