N’oubliez pas N’oubliez pas d’envoyer votre commande au plus tard le jeudi matin à 08h30 la semaine qui précède la livrai- Recette : Salsa mexicaine Ingrédients pour 4 portions 3 tomates italiennes 1/2 oignon haché finement 1/2 poivron rouge, coupé en cubes 30 ml (2 c. à soupe) coriandre fraîche 1/2 piment jalapeno épépiné, haché finement 10 ml (2 c. à thé) jus de lime frais Sel et poivre au goût Préparation En vedette cette semaine : LA TOMATE ITALIENNE ROMA La tomate est un fruit appartenant à la famille des solanacées. Les botanistes considèrent la tomate comme un fruit, car elle contient les graines de la plante. En cuisine, on l’utilise plutôt comme légume. Il existe plusieurs variétés de tomates cultivées à travers le monde. La tomate Roma est une tomate italienne qui est la plus populaire pour faire des sauces et des conserves. C’est une variété hâtive, extrêmement productive et résistante aux maladies. Les cuisines italiennes, provençale, grecque, mexicaine et espagnole ne peuvent se passer de la tomate dans leurs plats. Les coulis de tomates et les tomates concassées aromatisent et garnissent de nombreux plats. La tomate accompagne parfaitement le thon, la sardine, le bœuf, le poulet, le veau ou les œufs, sans parler des nombreuses sauces et préparations à l’italienne. Dans une casserole, faire bouillir de l’eau. Faire des petites croix à la base des tomates, puis plonger les tomates dans l’eau quelques minutes ou jusqu’à ce que la peau se détache. Retirer la peau des tomates et couper les tomates en dés. Réserver dans un bol. 2. Ajouter le reste des ingrédients dans le bol et bien mélanger. 3. Servir avec des tortillas de maïs. Monder une tomate?? Le fait d’enlever la peau d’un fruit (tomate, pêche) après l’avoir plongé dans l’eau bouillante est une étape que l’on appelle monder ou émonder. The reason botanists classify the tomato as a fruit is because it contains seeds. But from a cook’s perspective, it’s a vegetable. There are hundreds of tomato varieties around the world. The Roma (also known as Italian) tomato is a plum tomato popularly used both for canning and producing tomato paste. This productive, early maturing variety has the added bonus of being disease-resistant. Italian, Greek, Mexican, Spanish and Provençal recipes almost always include tomatoes. Chopped and puréed tomatoes add taste and appeal to many dishes, especially tuna, sardines, beef, chicken, veal, and eggs, not to mention any number of Italian sauces and culinary creations. Tomatoes are an important source of vitamin C and potassium, and a good source of vitamin A and folic acid. From http://wikibouffe.iga.net/wiki/tomate THIS WEEK’S RECIPE Recipe: Mexican salsa Ingredients : Serves 4 3 Roma tomatoes 1/2 onion, finely chopped 1/2 red pepper, cubed 30 mL (2 tbsp) chopped fresh coriander 1/2 jalapeño, seeded and finely chopped 10 mL (2 tsp) fresh lime juice Salt and pepper to taste Directions 1. Boil water in a large pot. Use a sharp knife to cut an "x" in the bottom of each tomato. Submerge the tomatoes in the boiling water for about 30 seconds, or until the skin comes loose. Remove the tomatoes with a slotted spoon. Once cooled, remove the skin and chop the tomatoes. Set aside in a bowl. 2. Add the rest of the ingredients in the bowl and mix well. 3. Serve with corn chips. What is blanching? Blanching is a cooking technique in which fruits or vegetables are briefly immersed in boiling water to help loosen the skin for easy peeling.
