FOR MUFFINS:
1.Preheatovento375ºF(190ºC).Coatastandardmuffintinwithnon-stickcookingspray.
2.Inalargebowl,stirtogetherflour,sugar,pumpkinpiespice,bakingpowder,bakingsoda,andsetaside.
3.Inaseparatebowl,whisktogetheryogurt,butter,andegg.Makeawellinthecenterofthedryingredientsandaddyogurtmixture.
Stiruntiljustmixed,andfoldincarrots.
4.Spoonbattertothehalfwaymarkofpreparedmuffincups.Bakefor20minutesoruntilatoothpickinsertedinthecentercomes
outclean.Transfertorackandcool.
FOR GANACHE:
1.Placethechocolateintoamediumbowl.Heatthecreaminasmallsaucepanovermediumheat.Bringtoaboilandpouroverthe
choppedchocolate.Whiskuntilsmooth.
2.Allowtheganachetocoolslightly.Dipeachmuffinintotheganacheanddecoratewithamarshmallowdippedinganache.

Method:
1.Preheatovento425ºF.Rinseturkeybreastundercoldrunningwaterandpatdrywithpapertowels.
2.Inasmallbowl,combinehoney,salt,pepperandoil.Brushtheturkeybreastalloverwiththehoneymixture.
3.Scatterthechoppedonionsandcarrotsinthebottomofacasseroleorroastingpan.Placetheturkeyontopofthevegetablesand
roastfor20to30minutes.
4.Reduceoventemperatureto350ºF.Coverthetopoftheturkeywithbaconslices.Sprinklethymeovertheturkeyandaddthebay
leaves.Pourstockintotheroastingpanandcook,bastingwithstockperiodically,foranadditional40to50minutesoruntilthe
internaltemperatureregisters165ºFonameatthermometer.Letstandfor10minutesbeforecarving.Serve.
