So we have two things going on here (and has been going on for a long long long…time): copy editing style and actual liquor style. The big question is: Are WHISKEY and WHISKY just two different spellings of the same word, or are they two slightly different words describing two separate groups of spirits? Up until quite recently, The New York Times tackled the problem by spelling everything the American way, regardless of the country of origin. However, after receiving numerous complaints from discerning Scotch whisky drinkers (noticed there is no E!), the paper revised its and followed that of many specialised publications, spelling each style of spirit according to the way favoured by the spirit’s country of origin. A quick way to remember how some of the world’s biggest distillers spell their products: • Countries that have E’s in their names (UnitEd StatEs and IrEland) tend to spell it whiskEy • Countries without E’s in their names (Canada, Scotland, and Japan) spell it We at Hotel Muse love both, provide both and suggest you try both! THE SPEAKEASY 24th and 25th floors, Hotel Muse 55/555 Langsuan Road, Lumpini, Pathumwan, Bangkok 10330 - Thailand Tel. 02 630 4000 Fax 02 630 4001 [email protected] i facebook.com/hotelmusebkk instagram.com/musebkk www.hotelmusebangkok.com THE SPEAKEASY | HOTEL MUSE The term Speakeasy originated among the bartenders telling their patrons to "Speakeasy" when ordering a drink so as not to be overheard during the Prohibition era. Run by gangsters, the speakeasy was often an elaborated and upscale underground bar that served liquors amid live bands and shows. These saloons were often unmarked establishments or behind or underneath legal businesses. Their cheaper version was the "Blind Pig", or a dive for the less desirable drinker. Federal agents kept busting up these bars and taking bribes at the same time from bar owners who were given advance warning of an upcoming raid. THE SPEAKEASY | HOTEL MUSE 10 1 MEET | MUSIC | MUSE | AND ALL THE SECRETS MEET | MUSIC | MUSE | AND ALL THE SECRETS Meet our Chef Jean Baptiste Natali What is our new concept ? Jean Baptiste Natali is a Michelin Star Chef born in the small village of Colombey les Deux Eglises in France where the illustrious General de Gaulle liked to retire away from his public life. With his Italian Grand Father and his Grand Mother from Holland JB grew up between his dad’s Auberge and grand parents cook books. Jean Baptise new menus present food based upon his Grandmother’s recipes or “The Forgotten French Dishes,” but of course with his own twist. The concept is to bring the old-fashioned French bistro back to Bangkok but in a spectacular rooftop setting, elevated to a whole new level. He uses local ingredients of fine quality sourced from local distributors. He will revisit some of his grandmother’s old-fashioned recipes, but rendering them into new contemporary themes. After 11 years of travelling, where he learnt with Christian Willer La Palme d’Or, Hotel Martinez, Cannes; Daniel Boulud, New York; Hotel La Mamounia, Marrakech and The Connaught Hotel London, Jean Baptiste returned to his origins in 2001 to give a hand to his father. One year later he was the youngest chef to be awarded his first Michelin star, which he has been retaining since and received the same year the much coveted title of Young European Talent. In 2005, JB invested in a Country house. This beautifully renovated property is now showcasing his talent while offering elegant rooms opening onto an orchard and the surrounding hills in the Champagne region. Illustrious guests include Previous French President Sarkozy and German Chancellor Angela Merkel. Presented in light bites, finger food and cuisine for sharing at The Speakeasy French cuisine in an Asian style, creating an exciting new brasserie journey atop the extraordinary Hotel Muse Bangkok. Over the past ten years JB has made many trips to Asia in search of more culinary secrets where he has learnt the food and culture of the region. Calm down fellow Gin enthusiast, before you go all Al Capone on them, we at Hotel Muse will tell you that actually, Bathtub Gin is no “hooey”, it’s in fact…completely “Zozzle-able” but in an illegitimate way, we do advise discretion, of course... Bathtub Gin, created in the days of America’s prohibition era is a crude version of this magical recipe we refer to as just Gin and was made in the comfort of private homes for consumption in hidden backrooms and speakeasies. Gin was chosen because, unlike whiskey, Gin does not require a long aging process before it can be enjoyed. It was made by steeping grain alcohol with juniper berries and water in a large jar that was too large to be filled in a sink (hence filled in a “Bathtub”). During the prohibi- tion era distilling was illegal thus, sometimes it became a problem finding grain alcohol and as a substitute, bootleggers used denatured alcohol instead; this led to illness, blindness and even death in many cases. Want to know how to make your very own bathtub gin? Rent out a room at Hotel Muse for the night and we might just tell you at our “juice joint”… Vegetarian All prices are subject to 10% service charge and applicable government tax. Who knows, maybe you’ll find that perfect cigar to compliment your favourite glass of spirit. MARTINI COCKTAILS Small (350 ml) ............................................................ 350 So, are Cubans really the best? In the end, it all comes down to our own personal standpoint, Cuban cigars can be great but isn’t everyone’s cup of tea, or in this case, puff of smoke? Mai Tai (Original) ........................... The Prohibition Cocktail ................ Whiskey Sour.................................. Hemingway’s Daiquiri ..................... Gin & Sin Cocktail ......................... The Blackberry Bramble ................. B 52 Sex on the beach A good Cuban will accomplish something that is very difficult – a very full-bodied cigar that is still smooth. Not all cigars coming out of Cuba are full-bodied cigars. However, chances are, if you are new to the world of cigars, you may not like a Cuban and if Cuban is what you want, Cohiba, the ‘King of Cubans’ probably won’t be the best of choices for beginners due to the full-bodied nature of this brand. As your cigar tastes change, envision how you may have changed your taste in wine. Most people start with a sweeter wine such as a Zinfandel or even wine “coolers”. Then you may move into sweeter chardonnays and then dry chardonnays then something light from the red family (merlots, pinots, etc). Eventually after much “research” your taste buds may have you drinking mostly Cabernet and Bordeaux. Cigars work much in the same way. You may start out with a mild cigar and some time later work your way up to a full-bodied smoke. 330 Havana Club 7 year aged rum, orgeat, orange curacao, lemon, bitters Broker’s Gin, lillet blanco, apricot brandy .Jim Beam Bourbon, bitters, fresh egg white, lime juice Appleton white rum, Marashino, Grapefruit Broker’s gin, fresh lemon juice, orange juice, grenadine Chambord, broker’s gin, fresh lemon juice, soda Kahlua’s, bailey’s, cointreau Stoli vodka, peach puree, pineapple juice, cranberry juice All prices are subject to 10% service charge and applicable government tax. Although the image of hardened sailors drinking rum mixed with mint, lime and sugar may not match your vision of straight-from-the-bottle gulping pirates, the Mojito has been enjoyed as early as the 16th century. One story traces the origins of the Mojito back to 16th century Cuba, where the drink was called the “El Draque” in honor of explorer and sailor Sir Francis Drake. Legend has it the drink was first created as a means of covering up the often harsh taste of tafia/aguardiente, a primitive form of rum. The drink improved greatly during the 19th century with the introduction of copper stills that led to the modern (and much better tasting) form of rum. The contemporary name for the drink probably comes from a Cuban sauce called mojo, which is made from garlic, olive oil and citrus juice. Perhaps in reference to lime as a main ingredient, the drink became known as a cocktail with “a little mojo” or, in Spanish, a “Mojito.” While the Mojito may be one of the world’s first cocktails, it certainly has not waned in popularity over the years. In fact, the drink first invented to make bad rum tolerable popularity over the years. In fact, the drink first invented to make bad rum tolerable is now a widely popular cocktail around the world and is an especially popular and refreshing summer drink.
