BAMBERG RAUCHBIER 5,2% Arôme : Fumé (bacon), toffee, caramel venant du malt. Apparence : Brune avec une mousse persistante. Goût : Fumé, toffee, caramel, amertume d’houblon modérée et final moyennement séche. Texture : assez ronde, moyennement carbonatée et douce. / Aroma: A moderate smoke (bacon-­‐like) aroma, toffee and caramel from the malts. Appearance: Brown color and good cream head. Taste: Smoked, toffee, caramel, a moderate hop bitterness and a medium dry finish. Mouth feel: Medium body, medium carbonation, smooth. Cette bière est fait avec des malts importés de haute qualité et du meilleur café du secteur de Haut Mogiana. Le café est acheté directement du producteur. Le Mo í est torréfié avec des critères rigoureux. Le nom Demoiselle est un hommage simple au grand brésilien Alberto Santos Dumont, dont la famille était propriétaire de plantation de café dans le secteur de Ribeir ã o Preto. L'avion Demoiselle créé par Santos Dumont en 1907 est jusqu'à aujourd'hui une icône de style et de simplicité, qui s’applique aussi bien à la bière Colorado Demoiselle, une bière élégante et simple. / Beer that is as dark as night, color taken for the coffee. DADO BIER BREWERY DADO BIER BELGIAN ALE 8,5% Bière à haute fermentation, dorée et haute en alcool. Fait avec de la levure importée de Belgique, le meilleur houblon du monde, de l’eau minérale et un mélange de cinq malts. / The Dado Bier Belgian Ale is a special beer of high fermentation, golden color and high alcoholic text (8,5%). Elaborated with special yeast imported of Belgium, some of the best hops of the world, mineral water and a blend of five barley malts. Le malt conventionnel est grillé (toasté), ce qui justifie son amertume et sa pigmentation plus sombre. Son processus de production dure en moyenne 28 jours. La Cervejaria Colorado a obtenu trois étoiles dans le guide « Pocket Beer Book» de Michael Jackson. La bière Colorado Indiaca a été aussi acclamé comme "la Bière de l'Année" en 2008 par le magazine « Les Plaisirs de la Table » et a été récemment mentionné parmi les 10 meilleures bières de spécialité au Brésil. / Darker due to the toasted grain with a good and present 1
tempting. The flavour has the caramel upfront, banana in the middle and maple in the lightly bitter finish. Nicely balanced and not too sweet. The sweet, malty aroma is full of caramel. Nice clarity and depth of colour to the body, but the head retention and lacing lets the appearance down somewhat. Sweet aroma of caramel drizzled bananas and little else isn't exactly complex, but sure is BLACK OAK BREWING CO. ONTARIO BLACK OAK PALE ALE 5% Corps moyen, belle couleur dorée, belle texture et finale houblonnée rafraichissante. / This is our flagship beer. Medium body, beautiful golden colour, good mouth feel and a refreshing hop finish. BLACK OAK NIT BROWN ALE 5% Goût riche, légèrement rôti et chocolaté. Moins houblonnée mais quand même très bien balancée avec le malt. / This is a darker offering from Black Oak. Rich smooth taste, slightly roasty and chocolaty. It's a bit less hopped, but still has a fantastic balance with the malt. BLACK OAK NUTCRACKER PORTER 5,5% Porter épicée avec de la cannelle. Parfaitement balancée avec du malt torréfié et le goût subtil de houblon lui donne caractère et saveur. COLOMBIE-­‐BRITANNIQUE RED RACER IPA 6,5% Pale ale classique, produite en petite quantité où l’on retrouve du malt Maris Otter d’Angleterre et du houblon de la vallée Yakima a Washington. Cette pale ale a des arômes d’agrumes, une bonne présence maltée. / Red Racer Classic Pale Ale is handcrafted in small batches using Maris Otter barley from England and hops from Washington’s Yakima valley. Finale fruitée et quelque notes de bois de pommier. / Roasted coffee and cocoa flavours front this darkly coloured but medium bodied brew, but then come the fresh, green, Hop flavours of juniper, herbs, and light citrus undertones. With some soft fruit towards the finish and a slight hint of applewood. SMASHBOMB ATOMIC IPA 6% Première odeur évidente d’houblon citronnée. ETATS-­‐UNIS ALLAGASH BREWING CO. MAINE ALLAGASH WHITE 5% Brassée avec beaucoup de blé et notre mélange spécial d’épices, cette bière est légère et un peu brouillée en apparence et aux arômes épicés. / Brewed with a generous portion of wheat and our own special blend of spices, this beer is light and slightly cloudy in appearance, with a spicy aroma. ALLAGASH TRIPEL 9% ALLAGASH BLACK 7,5% Cette bière dorée a des arômes de fruit de la passion et d’herbe accompagnée de suggestions de bananes et mie. La finale est longue et satisfaisante. / This golden hued ale is marked by passion fruit and herbal notes in the aroma, with subtle suggestions of banana and honey surfacing from its deep and complex palate. The Tripel's finish is remarkably long and soothing. Allagash Black, notre nouvelle stout belge, est faite à partir de malt 2 row allemand, avoine et blé torréfiés, balancée par l’usage de sucre candi foncé. Fermentée avec des levures belges et refermentée en bouteille selon la méthode champenoise pour rendre cette bière vraiment unique. / Allagash Black, our new Belgian style stout, is brewed with German 2 row barley, Torrified wheat and oats, balanced by a large addition of Belgian dark candi to give the Black a full and silky mouthfeel. Roasted malts give this stout its classic chocolate, toast and malty taste, and contribute to chocolate notes and a hint of roasted coffee in the aroma. The Black is fermented with a Belgian yeast strain and refermented in the bottle with the methode champenoise to make this beer truly unique. 10% Allagash Four est brassée avec quatre malts, quatre houblons, quatre sucres et quatre levures belges. Pendant sa fabrication, on ajoute du sucre de dates. Ensuite, à l’ébullition, du sucre candi clair, foncé et des mélasses claires. Après la première fermentation avec la première levure, on ajoute d’autre sucre candi et la bière est refermentée avec la deuxième levure. Le processus est répété jusqu’à la quatième levure qui est utilisé pour la fermentation en bouteille et qui sera ensuite placée au cellier pour vieillir. / Allagash Four is brewed with four malts, four hops, four sugars and four Belgian yeast strains. During the mashing process, we add Date Sugar to the mash tun. Later, during the boil, we add Light Candi, Dark Candi, and Light Golden Molasses. After primary fermentation with the first strain of yeast, we add more Candi Sugar, and referment the beer with a secondary strain of yeast... that process is then repeated with a third strain of yeast, and finally a fourth for bottle conditioning in the cellar. ALLAGASH CURIEUX 11% Triple Ale vieillie en fût de bois, ayant contenu du Jim Beam, pendant 8 mois au cellier. Pendant le processus de vieillissement, cette bière est transformée et développe des flaveurs de noix de coco, vanille et de bourbon. / The first beer in our series of Barrel Aged beers, Allagash Curieux. To make the Curieux (French for "curious"), we age our Tripel Ale in Jim Beam barrels for 8 weeks in our cellar. During the aging process in bourbon barrels, the beer is totally transformed, and many new flavors and aromas develop. Most notably, the beer picks up soft coconut and vanilla characteristics...and also a hint of bourbon flavor! ALLAGASH DUBBEL 7% D’un rouge profond et un goût complexe de malt avec des notes subtiles de chocolat et noix. The intense dry-­‐hop nose and the rich malt body are perfectly balanced for a caramel candy-­‐like finish. This is a serious beer for serious beer afficianados and it only gets better with age. Cellarable for 3 years. THE REVEREND BELGIAN-­‐STYLE QUADRUPEL ALE 10% Son cœur de sucre candi, cette bière est faite avec des malts importés de Belgique, beaucoup de sucre candi belge. Divinement complexe, on dénote le goût de cerise noire, raisins de Corinthe et de mélasses, complémentée par un côté épicé et une finale diabolique douce. / The Reverend, was created in tribute to the life of Sales Mgr. Tom Boogaard's grandfather, an ordained Episcopal Reverend. Tom was inspired by the life of his grandfather and wanted to create a tribute beer that contained his sterling traits. True to both our "small brewery, BIG BEERS" philosophy and to the spirit and character of the departed Reverend, this beer is assertive, and pure of heart, a heart of candy sugar. It contains as many authentic imported Belgian specialty malts as the brewers could cram into our mash tun, and lots of Belgian dark candy sugar stirred into the brew kettle. Much like its namesake, this imperial IPA is regal, intense and mighty. With hops and malts as his servants, he rules both with a heavy hand. The Maharaja flaunts his authority over a deranged amount of hops: tangy, vibrant and pungent along with an insane amount of malted barley -­‐ fashioning a dark amber hue and exquisite malt essence. JOE’S PILSNER 4,7% Merveilleusement houblonnée qui lui donne une merveilleuse amertume et une abondance florale. Houblons nobles allemands, c’est un bel exemple d’une Premium American Pilsner. / A contemporary rendition of a classic style, Joe's is hopped with purpose: beautifully bitter and dry with an abundance of floral, Noble German hops. Enlightened, duganA IPA was born: A brutally bitter, dank, piney and resinous ale designed for those seeking a divine hop experience. BALLAST POINT BREWING CO. CALIFORNIE CALICO AMBER ALE 5,5% Cette Ale ambrée contient des houblons américains distincts, ce qui lui donne ce côté mordant amer afin de balancer le malt mais qui dégage aussi des arômes floraux. Quatre malts différents sont utilisés pour produire cette ambrée. Le mélange de crystal malts lui donne des goûts de caramel et toffee. Un mélange d’houblons Cascade et Centennial est pour contre balancer le malt. PALO SANTO MARRON 12% Non filtrée, cette ale brune est vieillie en barils de bois. On distingue des notes de caramel ,vanille, et une complexité venant du bois exotique paragayen Palo Santo qui est utilisé dans son procédé de fabrication. Goût de rôti et de malt. / Palo Santo Marron (Holy Tree Brown) An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to 4
this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree" and it's wood has been used in South American wine-­‐making communities. Highly roasty, and malty brown ale aged on the Palo Santo wood. RAISON D’ETRE 8% Bière aux couleurs de l’acajou, elle est brassée avec du sucre de betteraves, raisins verts et levures belges. Elle est faite avec du malt aromatique et de la cassonade caramélisée. / A cross between a Scotch Ale, an I.P.A., and an American Brown, this beer is well-­‐hopped and malty at the same time. It is brewed with Aromatic barley and caramelized brown sugar. Extreme malt and caramel flavor, sweet up front, finishing with high hop bitterness and aroma. Aged four month yet could easily use for more. Clear dark brown pour, almost no carbonation and wonderful aroma of boozy caramel, sea salt and chocolate. Flavor is also silky caramel, boozy toast, nuts and finished pleasantly boozy and warming on the aftertaste. BOURBON BARREL BARLEY WINE 14,5% NINE 10% ALDEBARAN 8,5% An Imperial Red IPA made with caramel rye malt and many other exotic malts. Made with very generous quantities of Summit and Newport hops, this beer is quite a balanced treat. Our brewers decided they wanted more out of an IPA so they used a Belgian yeast strain giving it a wonderful belgian like aroma. SIMCOE SILLY 8,5% This amber-­‐golden colored beer is made with Simcoe hops, Belgian yeast and candy sugar. It exhibits a medium bitterness and finishes with the flavors of coriander and orange peel. Our beer has many aspects that make it truly unique. Aromas of banana, bubble gum, orange and spices are subtly noticed while the strong American hop character fives it a well balanced finish MAUI BREWING CO. HAWAII BIKINI BLONDE 4,5% Our lightest beer, made from 100% malted barley. This blonde lager is what sailors really swam to shore for; it's light, with very little bitterness and a slight malt finish. Noticeable herbal notes and bitterness from the hops never overpower the balanced malt backbone and allow the estery qualities of our yeast to shine through. PIKE BREWING CO. Ommegang, our first brew, was inspired by the centuries-­‐old brewing practices of the Belgian Trappist monks. This porter is the creme de la creme. Monks brew at 6 breweries in Belgium. Tripels were originally marked with 3+s for strength. Big, full bodied and complex with yeasty nose, fruity esters and malty dryness. HAZELNUT BRWON NECTAR Monks originally marked double ales with 2+s. Our double is named for the Finkel’s bicycle. Rich, round and complex with flavors of fruit, freshly baked bread and treacle. XS RUSSIAN IMPERIAL STOUT Full bodied velvety malt texture; hints of chocolate licorice and espresso. An Imperial bitter with exotic traditional floor malts, citrusy, hoppy flavor, stupendous hop aroma. PIKE TANDEM PIKE XXXXX STOUT PIKE DOUBLE IPA 7% 8% Weighing in at 8% alcohol and 80+ IBU’s it is strong yet balanced. It features Columbus; Chinook; Centennial; Cascade; and Amarillo hops -­‐ and is dry hopped with Amarillo and Columbus giving the beer a wonderful aromatic nose. PIKE OLD BAWDY BARLEY WINE 9,9% Fruity and rich with more of everything – malt, hops, yeast and hearty flavour. ROGUE ALES OREGON DOUBLE MOCHA PORTER 8,2% Double Mocha Porter is a huge mouthful of malt and hops, with notes of bitter rich 6,2% 11% Imperials originally were brewed with large quantities of hops and a high alcohol content to withstand long, unrefrigerated journeys. BRUTAL IPA 6,2% MORIMOTO SOBA ALE 5% XS IMPERIAL RED 9% CHIPOTLE ALE 5% The delicate flavor of our roasted Soba brings a nutty finish to this light and refreshing ale. A big beer with a spicey fruity aroma, chewy mid palate of figs and spice and a long lingering finish. Deep burgundy in color with tremendous drinkability. Chipotle Ale is based on Rogue's American Amber Ale, but delicately spiced with smoked jalapeno (chipotle) chile peppers. Deep amber in color with a tight head, rich malty aroma, delicately smooth and crisp flavor, and subtle chipotle chili finish. 7
SMUTTYNOSE BREWING CO. NEW HAMPSHIRE ROBUST PORTER 6,1% This hearty, mahogany colored ale is brewed to evoke the dark, full-­‐bodied ales that were a favorite of dockworkers and warehousemen (hence the name “Porter”) in 19th century London. It is a good bet that when Dickens’ Mr. Pickwick sat down for a pint, we would have been drinking an ale much like our Robust Porter.This is a smooth and very drinkable beer, characterized by its well-­‐balanced malt and hops, plus subtle notes of coffee and chocolate. BIG A IPA STAR ISLAND SINGLE 9,7% 5,6% This medium-­‐bodied golden ale features a slight residual sweetness from Honey Malt and hints of citrus and tropical fruits from the unique Belgian yeast it is fermented with, leaving a crisp dry finish. OLD BROWN DOG 6,5% Old Brown Dog has been cited as a classic example of the “American Brown Ale” style of beer. Compared to a typical English Brown Ale, Old Brown Dog is fuller-­‐bodied and more strongly hopped. SHOALS PALE ALE 5,4% Our interpretation of a classic English beer style is copper-­‐colored, medium-­‐bodied and highly hopped. Its flavor is delightfully complex: tangy fruit at the start, with an assertive hop crispness and a long malty palate that one well-­‐known beer writer has compared to the flavor of freshly-­‐baked bread. SOUTHAMPTON BREWING NEW YORK CUVEE DES FLEURS 8,2% Southampton Cuvee des Fleurs is a special Saison-­‐style brew lightly flavored with a blend of edible flowers including English Lavender (L. angustifolia), Roman chamomile (A. nobilis), Marigold (C. officinalis), Dog Rose (R. canina) and of course, H. lupulus. DOUBLE WHITE ALE 6,6% A "double strength" version of classic Belgian-­‐style "white" ale. A deceptively light ale spiced with Curacao Orange Peel and coriander seed. SAISON MULTI 6,5% SAISON DELUXE 7,5% Southampton Saison Deluxe is a special version of this Belgian Farmhouse classic. This unusually complex and refreshing ale is brewed to stand the test of time. Its fresh, vibrant flavors will change gracefully with time. BARLEY WINE ALE 11,3% The über malty, super hoppy mega beer that you know and love (and apparently depend on for your sanity and continued wellbeing) is here. We're glad to tell you without the slightest modicum of modesty: it's delicious. STONE BREWING CO. CALIFORNIE STONE IPA 6,9% Deep Golden Color. Light-­‐medium malt character with a heavy dose of over the top hops! Two full weeks of "dry hopping" give this beer its abundant hop aroma and crisp hop flavor. ARROGANT BASTARD 7,2% Arrogant Bastard Ale is an American strong ale. It is marketed by warning potential consumers that they are “not worthy” of such a sophisticated beer, suggesting most people cannot appreciate a beer of such quality and depth. It is a popular beer among craft beer aficionados. Dark, Complex, Bitter, Hoppy, Warming. STONE LEVITATION 4,4% STONE RUINATION IPA 7,7% Big hoppy character with rich malt flavors and citric overtones. This massive hop monster has a wonderfully delicious bitter flavor on a refreshing malt base. STONE SUBLIMELY SELF-­‐RIGHTEOUS ALE 8,7% STONE CALI-­‐BELGIQUE IPA 6,9% First brewed in 2007 as Stone 11th Anniversary Ale, this beer was an instant hit. We re brewers whose substantial mettle and idiomatic approach to brewing allows us to consistently create works of art such as this justifiably self righteous ale. Its bitterness hits our sweet spot. Its blackness lightens our hearts. Its liquid dichotomy pulls it all together in this sublimely sacrosanct ale. He results is both completely new and different, while still being recognizable as a Stone brew — and Stone IPA in particular.
