Word from the Director
Despite summertime and vacations period, intensity
of work at STELA/INAF has not changed. The
STELA initiated a project of a Canadian research
network on milk and milk products and the letter of
intent submitted to Agriculture and Agri-Food
Canada ABIP program (Agricultural Bioproducts
Innovation Program) was accepted for presentation
of a more detailed research program. The
researchers contacted previously must now propose
research projects in accordance to the objective of
the program which is to develop milk and dairy
bioproducts in order to develop a biobased economy
and increase competitiveness of the dairy sector.
The program is focused on the economic, social and
environmental impacts of the network and on
knowledge and technological transfer towards
organizations able to commercialize innovations.
The proposed research project, transfer and
innovation support amounts to $10 millions for 3
years. Forty-nine researchers from the Universities
of Moncton, Montreal, Manitoba, Alberta, Laval,
McGill and Guelph, as well as researchers from
Agriculture and Agri-Food Canada, INRS-Armand
Frappier and Trans-Biotech are joining the network.
A second project of strategic research network on
milk and dairy products (MDF.Net) was presented to
the NSERC Strategic Network Program on March
31st, 2007 and the deadline for the complete project
is April 2008. The objective of this network is
academic applied research and the proposed project
amounts to $4 millions for 5 years.
Otherwise, the STELA Symposium took place on
May 28 and 29, and welcomed more than 200
participants who very much appreciated the
conferences presented by STELA and University of
Guelph students and researchers and also by the
invited speakers Louise Lambert-Lagacé, clinical
dietician, Dr. Toon Van Hooijdonk, R&D and Quality
Assurance Director at the international cooperative
Campina and Dr. Michael Zemel, Director of the
Nutrition Institute at the University of Tennessee. As
many as 45 students presented posters, from which
23 ran for the best poster contest. Four prizes were
awarded (further details in other section).
We are very happy to reveal the conclusions of the
STELA Research Centre’s evaluation by the
Research Commission of l’Université Laval (CRUL).
In its report, the CRUL says that: “The Centre has
obtained a reputation worldwide with an experience
of more than 20 years. The scientific research
program enriched with the health and nutrition
aspects has brought more researchers and
increased the multidisciplinarity. (…) Integration with
the Institute of Nutraceuticals and Functional Foods
(INAF) is a development strategy that has revealed
successful for STELA. The Centre preserved its
identity while contributing to the development of new
research activities at the INAF. The STELA research
team’s importance is comforting and it is also
remarkable in terms of scientific collaborations for
the conception of research projects, their realization,
the dissemination of scientific results and student
training”.
The CRUL acknowledged the Centre’s high
productivity, such as the number of publications,
holders of diplomas and length of graduate studies:
“In conclusion, the STELA is no doubt a high-
performance research centre”. With such results, the
Laval University Council unanimously accepted to
renew the STELAs’ status of research centre for 5
more years.

At the STELA Symposium, Master’s students and
Ph.D. Candidates soon resuming their training had a
special area with their picture and a CD of their
Curriculum Vitae to
hand over to potential
employers. The “CV Area” was remarkable in the
Hotel hall with information on research at the Faculty
of Agriculture and Food at Université Laval and
students interested in meeting employers.
Influence of our Members
Two STELA/INAF students, Julie Audy and Patricia
Savard, received a prestigious invitation to present
their research results at the “2nd International
Symposium on Propionibacteria & Bifidobacteria:
Dairy and Probiotic Applications” that took place in
Norway from June 5 to 8, 2007. Julie Audy is a
Ph.D. candidate, supervised by Dr. Gisèle LaPointe,
and she presented “Evaluating the metabolic state of
Bifidobacterium longum through the measurement of
gene expression by quantitative real-time RT-PCR”.
Patricia Savard is a Master’s degree student
supervised by Dr. Denis Roy, and she presented
“Differential expression of arabinoxylan related
genes in Bifidobacterium longum NCC 2705”.
A magazine article entitled: « La voie lactée » was
published in the May 2007 edition of Québec
Science. The article talked about dairy research at
the STELA Research Centre, more precisely the
research project in partnership with Advitech
supervised by Dr. Sylvie Gauthier and Dr. Yves
Pouliot. It concerns knowledge of the action mode of
the Dermylex, a nutraceutical commercialized by
Advitech for the control of light and moderate
psoriasis. Advitech and STELA also test rats for the
treatment of gut inflammatory diseases. “In tiny milk
components, researchers think they can find
medicines against high blood pressure, cancer,
Crohn disease and diabetes”.
Information on the conference “Old Cheese Starters
and New Cheeses” presented at the STELA
Symposium by researcher Dr. Jean-Christophe
Vuillemard (STELA), Dr. Daniel St-Gelais and Dr.
Claude P. Champagne (AAFC – St-Hyacinthe), was
picked up by two newspapers: Le Soleil and Au fil
des événements. The researchers developed new
cheese curds with starters from Ontario Cheese
dairies preserved by a researcher from AAFC since
the years 1960. Those cheese curds are tastier and
have greater conservation properties.

Another conference of the STELA Symposium on
“Omega-3 in Milk: Technology vs Production” by
STELA researcher, Dr. Yvan Chouinard, and AAFC
researcher, Dr. Michel Britten, gave an article in the
Média Matin (the free newspaper produced by the
Journal de Québec’s journalists on strike) with the
title: “Les animaux aussi se mettent aux oméga-3”.
The March and April 2007 editions of the magazine
Vie & Santé published articles on probiotics and
whey protein isolates. Dr. Sylvie Turgeon
demystified the latter and Dr. Denis Roy gave
information on probiotics. Sylvie Turgeon also
detailed the different types of ingredients used in
commercial milkshakes as thickeners and texture
agents for the CBC TV show L’Épicerie,.
La métagénomique du fromage is the title of a
complete article in the May-June 2007 edition of the
magazine Découvrir after an interview with Dr. Denis
Roy.

Prizes
At the last STELA Symposium, 23 posters were
presented for the best poster contest and four prizes
were awarded:
Zafir Gaygadzhiev, Ph.D. candidate supervised by
Dr. Milena Corredig of University of Guelph, won the
first prize which consists in a trip to the IDF World
Dairy Summit at Dublin in Ireland for his poster: “The
impact of fat globule interfacial layer on the
rheological and light scattering properties of rennet
milk gels”.

The second prize ($750 Scholarship) went to Safaa
Lamhoujeb, Ph.D. candidate supervised by Dr.
Julie Jean, for her poster: « Évaluation de la
persistance des norovirus humains infectieux sur les
aliments par la technique NASBA en temps réel ».
Samira Roufik, Post-doctoral fellow supervised by
Dr. Sylvie Gauthier and cosupervised by Dr. Sylvie
Turgeon, obtained the third prize ($500 Scholarship)
for her poster: « Caractérisation de la fraction
protéique mineure d’isolats de protéines de
lactosérum commerciaux ».
Véronique Delcenserie, Post-doctoral fellow
supervised by Dr. Denis Roy, was awarded the
fourth prize ($350 Scholarship) for her poster
« Comparaison des génomes des souches β.
longum ncc-2507 et β. longum crc-002 par
hybridation suppressive soustractive». Véronique
also won the 2nd prize for this same poster at the “2nd
International Symposium on Propioni-bacteria &
Bifidobacteria: Dairy and Probiotic Applications” that
took place in Norway in June 2007.
