Mark Gaffney is Irish, but he specializes in French food and works in Montreal, where he’s the chef at Garçon!, a high-end eatery on the city’s swanky Sherbrooke Street West strip. For about a year, Gaffney has been in charge of one of the best new restaurants in a city known for great food. His cooking is simple, light, and utterly delicious. As soon as he took the reins at Garçon!, Gaffney rebuilt the menu around original French-style creations made with local ingredients of the finest quality. Chef au restaurant Garçon !, situé sur le tronçon huppé de la rue Sherbrooke Ouest à Montréal, Gaffney dirige depuis près d’un an les cuisines de l’un des meilleurs nouveaux restaurants de la ville. Sa cuisine est simple, légère, mais délectable. Dès son arrivée chez Garçon !, Mark Gaffney a reconstruit le menu en créant une cuisine française inventive à base de produits du terroir de grande qualité. Sa particularité : les ingrédients doivent être frais, ce qui permet des préparations saisonnières où la présentation est toujours d’une importance capitale. It’s a real melting pot of cuisines,” he says in his thick Irish brogue. The chef moved to Canada less than two years ago to be with his beloved, a “French girl” he fell in love with six years ago. A deep sense of modesty prevents him from making a big deal of the impressive résumé that helped him walk straight into the kitchens of top restaurants such as Old Montreal’s Chez l’Épicier. A native of Cork, Gaffney discovered his culinary calling at the age of 15. He left school to learn about the secrets of fine cooking from the best French chefs in Dublin, Oxford, and Angers. His experiences convinced him that he had to make his life as a chef. The concept behind Garçon! suited him perfectly: creative, urban, contemporary, French. The restaurant, opened by former Chorus and Jongleux Café owner Patricia Hovington in 2004, draws a clientele of the city’s business moguls, who happily come to cut major deals over Gaffney’s latest inspiration and a glass of good wine. Gaffney is having a great time in Montreal. When he isn’t at the market discovering the latest offerings from local producers, or devising new combinations in his kitchen, he feels at home eating where he works (though he does cop to having been to Toqué!). He has a deep appreciation for the diversity of the city’s restaurants, which, he says, give an accurate reflection of the city’s multiculturalism. What’s next for Mark Gaffney? It wouldn’t be surprising to see him with his own bistro some day, but for the time being it’s a hard question to answer when you’re already doing what you love most. Sa grande modestie l’empêche de vanter les mérites de son parcours, pourtant impressionnant, qui lui a permis de trouver, sitôt arrivé, du travail dans plusieurs restaurants dont L’Épicier, dans le Vieux-Montréal. Originaire de Cork City, Mark Gaffney découvre sa passion pour la cuisine dès l’âge de 15 ans. Il quitte les bancs d’école pour découvrir les secrets de la gastronomie auprès de grands chefs français à Dublin, Oxford puis Angers. Son expérience le convainc définitivement : il deviendra chef de cuisine. Le concept chez Garçon ! le comble : créatif, urbain, contemporain et français. Ouvert depuis 2004, le dernier-né de Patricia Hovington, ancienne propriétaire du restaurant Chorus et du Jongleux Café, attire les magnats de la finance montréalaise qui y négocient volontiers d’importants contrats le midi, autour d’une des dernières créations du chef accompagnée d’un bon verre de vin. Gaffney se plaît énormément à Montréal. Quand il n’est pas au marché, avide de découvrir ce que les producteurs locaux ont à lui offrir ou occupé à essayer de nouvelles combinaisons, il dîne volontiers au restaurant (il avoue aussi être allé chez Toqué !). Il apprécie la diversité des restaurants de cette métropole gastronomique qui, selon lui, reflète tout à fait le côté multiculturel de la ville. Et ses projets ?
