The city also serves up modern, creative and innovative cuisine, inspired by the great Parisian movement le Fooding®. Current food trends range from a rise in popularity for street food to the craze for multidisciplinary restaurants. The cuisine on offer is always state-of-the-art and inventive. You can dine at a mini restaurant or in a grocer’s, watch professional chefs cooking, try out a unique set menu, or even take lessons from a Michelin-starred chef. NEW PLACES AND TRENDS New fashions, new concepts: the Fooding® spirit brings a modern touch to Parisian gastronomy! > Latest trends Without doubt, the most important culinary trend of the moment is street food. The association Street food in Movement, presided over by Thierry Marx, has just been launched with the aim of ‘supervising and developping’ street food. Several food trucks, like in Brooklyn, have created a huge stir in recent months in Paris. The burgers of the Camion qui fume, by Kristin Frederick – trained at Grégoire Ferrandi and at Apicius – the first to arrive in the capital in November 2011, even won the ‘Fooding® d’honneur’ Guide 2013. Since then a dozen or so new ‘gourmet food trucks’, which besides burgers also serve icecream, chips and tacos, circulate in the capital with the same standards: quality products and cooking. And an itinerary that can be followed via the social networks. But this craze for street food extends beyond food trucks. Burgers, hot dogs, and dim sum, eaten for a quick bite at specialist food stalls that have popped up all around the city, have never been so popular. As for burgers, Blend, Big Fernand and Le Comptoir de Brice have been much talked about. La Candelaria launched a trend for tacos with trendies in the Haut-Marais, the L de Liza has specialized in Lebanese sandwiches and the empanadas at Clasico Argentino have been such a success that the food outlet opened three new addresses during the year. Hot dogs are also popular. Enjoy them with a cocktail at Glass, a trendy bar at Pigalle, or French style at Little Fernand, or even USA style at the Hot Dog House. There is also a huge trend for Asian food stalls with the opening of several single-food outlets. Each to their own speciality: Japanese ravioli at Gyoza bar, small bread products with meat from the province of Shaanxi at La Taverne de Zhao or steamed bouchées at Yoom. Restaurants housed in former fishmonger shops, bird shops or dairy shops. Their original decor gives these new places a singular charm. After Le Plongeoir tea room at the Hermès boutique, housed in a former art deco swimming pool, or the trendy Argentineans Anahi and Unico, in a former butcher’s shop, the Josefin restaurant has opened in a former bank at the Banke Hotel and features voluminous spaces and theatral decor. The trattoria Vilia is installed in a former fur merchant’s, whilst Chez Aline, voted ‘Best snack 2013’ by Fooding®, is housed in a former horse butcher’s. And finally, the restaurant Pan, a former light shop, was awarded the Fooding® 2013 Prize for the best decor. Another big trend: ‘open kitchen’ restaurants, like those in New York and Asia. Watching chefs working and creating dishes, in front of a counter, provides entertainment and creates a convivial atmosphere. Alain Dutournier’s restaurant Pinxo or the Atelier de Joël Robuchon at Saint-Germain started the trend a few years ago, and in 2012, several other open-kitchens opened. Anne-Sophie Pic, with three stars in the Michelin Guide, has opted for a glassed-in kitchen in her new restaurant La Dame de Pic, which offers passers-by in the street a view of the cooking in the kitchen. In the same vein: restaurants organized around a wood-burning grill for roasting meat in front of customers. The newest on the scene: Beaucoup, opened by the talented and trendy team Glou and Jaja, L’Atelier Vivanda, the new address of starred chef Akrame Benallal, and Le Drugstore Steakhouse at the Publicis Drugstore. Tables d’hôtes in grocery stores, shop areas in restaurants, bars to eat at in markets, tasting areas in shops, hotel restaurants and restaurants which are also bars or even clubs and art galleries … the trend is for breaking down frontiers and blurring genres, and for restaurants designed as lively places, and especially a trend for concept establishments. After Le Thoumieux by Jean-François Piège, chef Flora Mikula opened her Auberge Flora, a restaurant-bar-hotel, which has brought a touch of originality to the 11th. Also much in vogue, grocery stores with a few tables for finishing off one’s shopping with a light meal: at Claus, there are great breakfast products that you can also taste on the premises. At the Alain Milliat shop, people come from afar for high-quality fruit juices that you can enjoy with flavoursome and healthy snacks. At Causses, you’ll find the best gourmet products, from charcuterie to dairy products, as well as fruit and vegetables, and small tables d’hôtes enable you to enjoy a snack while doing your shopping. Finally, La Boutique des saveurs strives to showcase producers from France’s national parks and whose products bear the label ‘Parc Naturel’. At the covered market of Saint-Martin, you’ll find … Au Comptoir de Brice, run by Brice Morvent: here, you’ll enjoy hamburgers and other dishes according to market produce. Very hip on this market is the recently-arrived Allen’s Market, the new address of New Yorker Joe Allen, and where you can also enjoy a 100 % USA snack in the grocery section. Taking the idea of a global venue even further, Le Purgatoire, a large loft in rue de Paradis, is a lively place where you can party, create culinary dishes, carry out research, make culinary discoveries and encounters, and find out more about food products and related professions. This movement which has taken off in Paris and abroad is a concept, an art, a state of mind, a new way of seeing and experiencing cooking. Le Fooding® advocates creative and trendy cooking full of surprises and new things. Events like Fooding® Week and the Grand Summer Fooding® are organized throughout the capital to familiarize the public with this innovative approach to cooking. Plus, every year, the Fooding® bureau publishes a guide, which from the 2013 edition covers the whole world, and which enables the public to discover new culinary talents and daring gourmet initiatives according to a new classification: restaurants that are ‘so good’, ‘atmospheric’, ‘budget’, ‘feel good’ or even where you can ‘see and be seen’. In 2012, the event took on a new global dimension, by becoming the first travelling cooking festival with 12 global cities, including Paris, over the year, hosting the caravan-big top, (sweet and savoury) chefs’ master classes and other evening functions. Since 2010, the public have also been able to enjoy Omnivore dinners organized twice per month at the Centquatre, an alternative cultural centre in Paris. Great chefs have taken up residence in Paris and proudly wear their stars awarded by the Michelin Guide. While the 2012 guide – the 103rd edition – did not add any restaurants to the élite club of three stars in Paris, it awarded their first star to 11 new restaurants. And two other restaurants won their second Michelin star: Sur mesure by Thierry Marx and L’Abeille. Paris now has 10 three-star, 15 two-star and 45 one-star restaurants.
