CHAMPAGNE AND SPARKLING WINES
Champagne is a more diverse and food friendly wine than it’s given credit for. Our house
champagne comes from the long established family owned house of Henriot, who specialise in
a Chardonnay-rich, elegant style. The 1996 was one of the greatest of all champagne vintages
while the prestige Cuvee des Enchanteleurs is from 1990, another great vintage approaching
maturity and a reminder that great champagne is great white Burgundy with a few bubbles.

A wonderfully diverse world of fizz – don’t miss the sparkling Shiraz, with its unique notes of

NORTHERN EUROPEAN WHITES – FRANCE
ALSACE
In first place for a reason, these are the most reliable of food wines. They are the meat eater’s
white wine, while the fresh fruit, generally low alcohol and lack of oak also make these wines
versatile with more complex and spicy dishes. The Hugel Gentil (formerly Fleur d’Alsace) is a
great introduction to what Alsace has to offer, while the Clos Ste Hune is almost unopposed as
the greatest of dry Rieslings.

SOUTHERN EUROPEAN WHITES – SPAIN AND ITALY
SPAIN
Spanish white wines have been transformed by investment in new technology, especially for
cool fermentation which retains fresh fruit character and avoid oxidation. The Albarino, from
Rias Baixas on the Galician coast above Portugal, is a new classic match for seafood. But the
greatest Spanish white is of course sherry – as well as the halves of fresh appetising
Manzanilla, we have wonderful Palo Cortado and Pedro Ximenez by the glass.

ITALY
Not just Pinot Grigio, although the Puiatti, from the inventor of modern Pinot Grigio, is a
marvellously full and flavoursome example. Italian whites are easy on the oak, invariably
refreshing, and wonderful with food. The Lugana, from the shores of Lake Garda, is a classic of
this type. The southern varieties – Fiano, Greco and Malvasia – offer great alternative to
Viognier.

NORTHERN EUROPEAN WHITES – GERMANY AND AUSTRIA
GERMANY
A century ago the finest German wines were considerably more expensive than first growth
claret. The wines are as fine now as they were then, but now they’re hopelessly out of fashion,
which makes them relative bargains for the discerning.
The first group of wines, from the best sites of the central Rhine, are new wave Riesling, dry on
the palate but full of fruit flavour. Erstes Gewachs is the German equivalent of “Grand Cru”.

The following are more traditional, medium German wines, with distinct sweetness balanced by
racy acidity, and surprisingly versatile with food. The Rheingau Spatlese offers pure lime fruit;

UNITED STATES
The Acero Chardonnay from Marimar Torres is unoaked, with wonderfully pure and intense fruit,

AUSTRALIA
The Lehmann Semillon is unoaked, low in alcohol, but full of sherbert, citrus flavour and
refreshing crispness, while Tyrell’s Vat 1, still a baby at 7 years old, is the best example of one
of the most distinctive wine styles of the world, Hunter Valley Semillon. The Pitchfork
Chardonnay is great value and full of melon fruit. But Australia’s greatest white variety is
Riesling: the Lehmann Reserve is a rare chance to try an example with a few years’ bottle age
and correspondingly developed minerality.

NORTHERN RHONE
The vines start just south of Lyon and in some ways have more in common with Burgundy than
with the southern Rhone – from a single variety (Syrah), medium bodied, often marked by exotic
spices. The wines of Hermitage and Cote Rotie are among the finest in the world – we have
outstanding growers from the very fine 1999 and 2001 vintages.

Cabernet Sauvignon based and more long lived than the Merlot wines of the right bank. Marked
by blackcurrant fruit and the pencil-box aromas of subtle oak ageing, these are the wines
everyone in the world tries to imitate – and no-one succeeds. They have unparalled ability to
age and are unmatched with food. The communes retain their distinctive character – the
chewiness of St Estephe, the power and elegance of Pauillac, the balance and fruit of St Julien,
the fragrance of Margaux, the minerality of Graves.

UNITED STATES
If you want to find the world’s most obsessive winemakers, those who love nature and hate
chemicals, and genuinely want wines to have a sense of place at all costs, don’t bother with a
gnarled French paysan; look for an philosophy professor from Stanford like Paul Draper of
Ridge, or a retired TV actor like Fess Parker. No wine producers have such dedication to the
highest standards of viticulture and vinification as those in California, Oregon and Washington.
The Napa Valley Cabernet from Atalon is a classic explosion of ripe fruit, while the Ridge
Montebello is in a more elegant, “European” style. Cristom’s single vineyard bottlings from
Oregon are the pure essence of Pinot Noir.

All our Argentinian wines are from Salta and Mendoza, home of the world’s highest vineyards in
the shadow of the Andes, where the hot days and cool nights create slow ripening and a
character which valley wines simply can’t match. The Corbec is a wine made by Venetians in
the style of Amarone della Valpolicella.

Bordeaux blends towards a new love affair with Mediterranean varieties. Thelema’s “Mint”

Underripe Pinotage is notoriously unattractive – ours, from hot inland Swartland, retains the
quirky character of the grape while being well made and balanced.

Our Australian collection offers a real alternative to the big “South East Australian” branded
wines, grown in the heavily irrigated inland desert and providing a reliable but slightly dull
experience for the supermarket shopper. The following are all wines with a sense of place, and
mostly from the cooler regions of Australia, allowing for long slow ripening and the
development of character. Don’t miss the Red Horse, a St-Emilion blend at the lighter end of
Australian wine, gorgeously scented, and with good table manners.

The Sancerre, from Pinot Noir, is light and dry. We move towards fuller and fruitier roses with
the Scalabrone; the South African and Australian roses, while still dry wines, are bursting with
