! ! Our philosophy on wine… Welcome to Passionfish! We would like to use this page to introduce you to our wine list. First you may notice our close-to-retail prices are comparable to your best neighborhood wine shop. While the general restaurant practice is to mark up wine by 200-300%, we choose to keep ours at a 50-80% markup. Why do we price our wines this way? Because we are crazy about wine, and great food deserves great wine at a reasonable price. We hope this will excite and tempt you to try something new, unique and off the beaten path. Our generous pricing policy has allowed us to purchase in a different manner than is customary. You will find that our list highlights small production wineries as well as grape varieties that are under the radar. We take care to offer classic favorites as well, at unconventional price points. Our pleasant staff is primarily educated in house. They participate in the wine purchasing process and are happy to suggest their favorite wines of the moment. We want you to explore our world of wine. Tell us what you like and look for, and we will work with you to find the perfect wine for your meal. ! As you browse through the wine list, you may notice this symbol ❦ appearing next to certain wines. We use it to acknowledge wineries that are doing their part to practice any form of sustainable wine production. We believe in recognizing these wineries because farming sustainably on land directly affects the sustainability of our oceans. ! We charge a $20 corkage fee for those who care to bring in their own special bottle of wine. Half of the corkage fee goes directly to the Tag-A-Giant Foundation, whose mission is to support scientific research and conservation of bluefin tuna. We are deeply concerned about the decline in population of these incredible creatures, and supporting Tag-A-Giant will help to ensure they will be around for future generations to enjoy. ! The Love Page- We created our Love Page to be an ever-evolving, seasonally focused list of the wines we are currently craving. The theme of this edition of “Love” revolves around California winemakers that we view as “game changers”. These wines are produced by dedicated, hardworking folks who make wines that will make you think twice about a grape, a region, or a method of winemaking. From sourcing nearly forgotten grapes to playing around with more familiar ones, they have created intriguing wines that shine a new light on what California and its range of grape varieties is capable of. Please allow us to introduce you to a few stars of the 7%! ! !Counoise Ambyth, Paso Robles ‘10 46 ❦ Counoise is commonly found in France’s Chateauneuf-du-Pape blends and the great rosés of Provence. Ambyth’s version highlights its spicy character, finishing with floral notes and vibrant acidity. ! Charbono Harrington, Fratelli Vineyards, Santa Clara ’12 36 Extensively planted in the Santa Clara Valley in the 1800’s, Charbono could be considered one of the founding grape varieties of California’s wine culture. Harrington’s version displays clove, concentrated black plum and bright acidity; this is a fabulous representation of the lone 80 acres that exist state-wide today. Graciano Sheldon, Ripkin Vineyard, Lodi ’10 56 Graciano is finicky in the vineyard and rarely seen bottled on its own. Its acreage is dwindling in Rioja, Spain and there are just under 12 acres are planted in California. Red currant, cola notes and white pepper make this a great alternative to a spicy Pinot Noir. !!
