Peler les châtaignes
Avant de préparer vos châtaignes fraîches, faites-les tremper dans de l’eau.
Celles qui flottent à la surface sont creuses et bonnes à jeter.
Si vous souhaitez réaliser des conserves de châtaignes au naturel (voir page 24),
des marrons glacés (voir page 41) ou congeler les fruits entiers (pour ensuite les
faire bouillir), il est essentiel d’ôter l’écorce et le tan.

elle se retire assez facilement,
surtout si vous utilisez un petit
couteau à châtaignes. Sa lame
crochue est particulièrement
adaptée à la rondeur du fruit et
n’endolorit pas trop les mains.
À défaut, un couteau de table
à lame courte et bien aiguisée
fait très bien l’affaire.
Retirer le tan à l’eau bouillante
(méthode plus largement utilisée)
1. Immergez une trentaine de châtaignes écorcées dans une casserole d’eau bouillante (avec
un trait d’huile pour faciliter le travail) et laissezles frémir 1 minute.
2. Couvrez la casserole. Sortez les châtaignes
une à une et retirez leur tan. Pensez à remettre
chaque fois le couvercle pour maintenir les fruits
au chaud. Si vous craignez la chaleur, munissezvous d’un torchon.

Retirer le tan au four
RetiReR le tan (seconde peau)
1. Disposez une vingtaine de châtaignes écorcées sur une grande plaque de cuisson.
Cette seconde peau amère et âpre
doit impérativement être retirée
pour ne pas gâcher la dégustation.
il est vrai que cette étape
préparatoire est fastidieuse,
mais à plusieurs et en faisant
des pauses, le travail s’accomplit
plus aisément.
2. Faites-les griller au four à 230 °C pendant 2 à
3 minutes, jusqu’à ce que le tan se craquèle.
3. Retirez-le en travaillant de petites quantités
de châtaignes pour éviter qu’elles ne refroidissent trop vite (l’épluchage devient alors
plus difficile).
4. Si vous ne parvenez pas à enlever le tan facilement, repassez les châtaignes au four pour
1 ou 2 minutes maximum, ou mettez-les de
côté afin de faire de la purée (voir page 20).
Pour éviter que les châtaignes ne se dessèchent, enveloppez-les dans un torchon
humide et stockez-les dans une boîte hermétique, au réfrigérateur, avant de les cuisiner.

PURÉE DE GRAINES
DE COURGE TOASTÉES

arce qu’il est encore difficile de se procurer de la purée
de graines de courge, j’ai eu envie un jour d’en préparer
moi-même. Il suffit d’un bon hachoir et d’un peu de temps
pour obtenir une purée qui change de la traditionnelle purée
d’amande et qui entrera par exemple dans la composition
de tartines et de toasts, de sauces pour crudités et légumes
cuits, de veloutés de légumes, de pâtisseries et entremets.

Pour 1 petit pot
100 g de graines de courge
2 c. à c. d’huile de pépin de courge
(ou de tournesol)
1 pincée de sel de mer gris

Mettez les graines dans une poêle sans matières grasses et
faites-les griller sur feu doux, en remuant de temps en temps.
Quand elles commencent à « chanter », retirez-les du feu
et laissez-les refroidir. Mettez-les ensuite dans le bol d’un
hachoir et mixez 10 à 15 minutes, en faisant une pause toutes
les 2 minutes pour éviter que l’appareil ne surchauffe. Vous
obtenez rapidement une poudre fine (décollez régulièrement
celle qui adhère aux parois), puis la consistance s’épaissit.
Lorsque vous êtes sur le point d’obtenir une pâte, ajoutez l’huile
et le sel. Versez dans un bocal. Conservez au réfrigérateur et
consommez rapidement.
Astuce : mon mixeur n’étant pas assez performant, j’utilise le hachoir
de ma machine à laits végétaux. Si vous souhaitez utiliser votre mixeur,
multipliez les proportions par deux ou par trois, de manière que les
lames ne tournent pas dans le vide.
Variante : purée de graines de courge crues
Faites tremper les graines dans un grand volume d’eau pendant 12 heures.
Rincez-les et faites-les sécher 10 à 12 heures au déshydrateur (à 40 °C).
Laissez refroidir, puis mixez comme indiqué précédemment, en
remplaçant l’huile de pépin de courge par de l’huile de tournesol.

abriquer soi-même son lait végétal ? Pourquoi pas ! Ici, la
saveur typée des graines de courge est adoucie par celle des
amandes : on obtient un lait tout cru, d’un joli gris perle, qui
accompagne à merveille granolas et céréales du petit déjeuner.

Pour 800 ml de boisson environ
60 g de graines de courge
60 g d’amandes non mondées
800 ml d’eau
1 c. à s. de sirop d’agave (facultatif)
1 pincée de sel de mer gris

La veille au soir, mettez les graines de courge et les
amandes à tremper dans 2 bols d’eau froide. Le jour même,
rincez-les bien, puis mondez les amandes en les pressant
entre le pouce et l’index ou en utilisant un couteau pointu.
Mettez les graines et les amandes dans le bol d’un mixeur ou
d’un blender. Mixez grossièrement, puis ajoutez l’eau petit
à petit, ainsi que le sirop d'agave si vous le souhaitez et le
sel. Mixez 1 à 3 minutes. À l’aide d’un sac à laits végétaux,
d’une étamine ou d’un tissu fin, filtrez la préparation.
Pressez bien la pulpe restante pour récupérer le plus de lait
possible, puis versez dans une bouteille.
Conseil : ce lait se conserve 3 à 4 jours au réfrigérateur. Comme
il a tendance à décanter, veillez à bien agiter la bouteille avant
de servir.
Astuce : ne jetez pas la pulpe ! Incorporez-la telle quelle dans
vos pâtes à gâteaux, à crêpes, à tartes ou à biscuits. Humide,
elle se garde 3 à 4 jours au réfrigérateur. Pour la conserver
plus longtemps, faites-la sécher au four ou au déshydrateur (à
une température de 47 à 50 °C), puis mixez-la finement : vous
l’utiliserez ensuite pour remplacer tout ou partie de la farine
dans vos recettes préférées.

de patate douce au four
Voici une recette apéro complète, vite et bien faite,
pour ne pas avoir à regretter les frites baignant dans l’huile et salées :
un cornet de wedges (grosses frites) de patate douce cuites au four,
au goût sucré, accompagné de deux sauces
aux saveurs et arômes bien contrastés.

Préchauffer le four à 200 0C.
Éplucher les patates douces, les découper
dans la longueur pour former de grosses frites.
Les disposer dans un saladier. Y verser l’huile
d’olive, brasser pour en recouvrir les frites.
Étaler une feuille de papier cuisson sur une grille,
puis y disposer les frites.
Mettre les ingrédients de la sauce rouge dans
un plat à gratin. Disposer les ingrédients de
la sauce blanche dans un deuxième plat à gratin.
Enfourner la grille puis les plats à gratin et faire
cuire 15 minutes. Sortir la grille et retourner les
frites. Poursuivre la cuisson pendant 15 minutes.
Sortir les plats à gratin. Mixer les ingrédients
de la sauce rouge et verser dans un ramequin.
Mixer les ingrédients de la sauce blanche et verser
dans un deuxième ramequin. Sortir les frites
du four et les réserver dans un plat, à couvert.
Former un cornet avec le papier cuisson
et y disposer les frites. Servir avec les sauces.
