CHÂTEAU SAINT-MAUR CRU CLASSÉ
UNE FIGURE HISTORIQUE DU PAYSAGE PROVENÇAL
Situé à Cogolin, au cœur d’un écrin naturel de toute beauté, le Château Saint-Maur, Cru Classé, est ancré dans l’histoire de la
Provence et de ses vins. Situé à 10 km de Saint-Tropez, à l’ouest de la plaine reliant les contreforts de l’impressionnant massif des
Maures à la mer, le domaine peut s’enorgueillir d’une splendide bâtisse construite à la fin du XIXème siècle dans un goût évoquant
l’Espagne mauresque, sur des éléments du XVIIIème siècle. Au loin, au sommet de sa colline, les vestiges du château de Grimaud.
Blotties à ses pieds, ses maisons serrées puis les vignes, couvrant les flancs des collines entre garrigue et chênes lièges.
Le Château Saint-Maur, qui tire sans doute son nom d’un ancien monastère établi sur le domaine appartenait à l’une des lignées
de la grande bourgeoisie marseillaise. En 1937, il fut acquis par un armateur, Jean Fraissinet, également patron de presse. C’était
la deuxième plus grande cave du bassin méditerranéen. Mais au fil des années, les générations se succèdent et ont involontairement délaissé le vignoble. Peu d’investissements de la vigne au chai, le Château Saint-Maur avait en quelques années perdu de sa
superbe.
Et pourtant… Son terroir béni des dieux est né pour produire de grands vins de Provence et nul doute qu’aujourd’hui il écrit une
nouvelle page de son histoire.
Un domaine à suivre de près.
CHÂTEAU SAINT-MAUR CRU CLASSÉ:
A HISTORICAL FIGURE OF THE PROVENCAL LANDSCAPE
Situated in Cogolin, in the very heart of an ever so beautiful natural setting, the Château Saint-Maur, Cru Classé, is steeped
in the history of Provence and its wines. Just 10 km from Saint-Tropez, to the west of the plain that links the foothills of the impressive Maures mountain mass to the sea, the estate boasts a splendid building erected at the end of the 19th century that evokes
Moorish Spain, on elements dating from the 18th century. In the distance, at the top of its hill, arise the ruins of Grimaud Castle.
Nestled at its feet are its packed houses, and then the vines that cover the hillsides between scrubland and cork oaks.
The Château Saint-Maur undoubtedly draws its name from an old monestary established on the estate belonging to one of the great
propertied families of Marseille. In 1937, it was bought by Jean Fraissinet, a shipping magnate who was also a press baron. It had
the second largest cellar in the Mediterranean basin. But as the years went by, and one generation followed another, the vineyard
was inadvertently allowed to become derelict. There was little investment from the vine to the cellar, the Château Saint-Maur had
lost its lustre in a few years.
And yet… Its land blessed by the gods was created to produce Provencal wines and is undoubtedly writing a new page of its history.
An estate to keep a close eye on.

UNE RENAISSANCE SIGNÉE ROGER ZANNIER
Déjà propriétaire, depuis plus de 25 ans, de la Quinta do Pessegueiro dans le Douro, Roger Zannier s’est lancé comme défi
de faire de Château Saint-Maur l’une des meilleures références provençales. C’est son gendre, Marc Monrose qui prend
en main les destinées de ce bijou Provençal. Passionné de vins, le leader de la mode enfantine Roger Zannier (Z, Absorba,
IKKS, Tartine et Chocolat etc.) a déjà fait ses premières armes de vigneron dans le Douro : depuis 2006, le projet de la Quinta
do Pessegueiro, fruit d’un travail conséquent, est mené en collaboration avec Marc Monrose. Ce modèle exemplaire, tant pour la
qualité des vins que pour son chai exceptionnel, est aujourd’hui reconnu de tous les connaisseurs.
En 2011, conscient du potentiel de Château Saint-Maur, de son histoire et de son ancrage dans le patrimoine local, il s’en porte
acquéreur et initie aussitôt un vaste programme d’investissements, avec la méthode Zannier : pré-définition d’objectifs qualitatifs
sans concessions et rapidité d’action. « Nous ne sommes pas connus dans le milieu du vin. On va forcément nous attendre au
tournant, donc on n’a pas le droit à l’erreur» résume sans détours Marc Monrose. En 2012, un chai impressionnant voit le jour en
un temps record de 9 mois.
Dans les vignes, le vaste programme de replantation et de complantation s’échelonnera jusqu’en 2018. Il sera alors optimal et
portera la surface du domaine à 58 hectares.
L’objectif ? Positionner Château Saint-Maur dans la catégorie des très grands vins, cultiver tout simplement l’excellence.
Aujourd’hui, parmi le club très restreint des crus classés, Château Saint-Maur possède tous les atouts pour briller. Il est prêt à entamer avec talent et passion ce nouveau chapitre de son histoire et à combler les amoureux de grands Côtes de Provence.
A RENAISSANCE BROUGHT ABOUT BY ROGER ZANNIER
Already the owner of the Quinta do Pessegueiro in the Douro for more than 25 years, Roger Zannier took up the
challenge of turning the Château Saint-Maur into one of the finest references in Provence, entrusting the fate of this
Provencal gem to his son-in-law, Marc Monrose. A wine buff, the leader in child fashion Roger Zannier (Z, Absorba, IKKS,
Tartine et Chocolat etc.) has already made his debut as a winemaker in the Douro valley: Since 2006, the Quinta do Pessegueiro
project, the result of a major undertaking, has been pursued in cooperation with Marc Monrose. This exemplary model for the
quality of the wines but also the exceptional wine storehouse, is know and appreciated by all connoisseurs.
In 2011, aware of the potential of the Château Saint-Maur, its history and roots in the local heritage, Roger Zannier proceeded to buy
it and to initiate a vast investment programme in accordance with the Zannier method: pre-definition of quality objectives without
compromise and speed of action. “We are not known in wine circles. They would undoubtedly be waiting to pounce, so we did
not have the luxury of making any mistakes,” Marc Monrose says matter-of-factly. In 2012, an impressive wine storehouse was
created in record time: 9 months.
In the vines, a vast re-planting and co-planting programme will be staggered until 2018, attaining optimal level and bringing the
estate’s expanse to 58 hectares.
The aim is to position Château Saint-Maur in the very great wine category, and to cultivate excellence without more ado. Today,
among the highly restricted club of crus classés [listed growths], Château Saint-Maur has every winning asset to stand out. It is
ready to embark on this new chapter of its history with talent and passion and to satisfy lovers of excellent Côtes de Provence wines.

UN SUPERBE TERROIR REMIS EN VALEUR
Ce havre de paix du Golfe de Saint-Tropez bénéficie d’une situation privilégiée. D’ailleurs, comme l’attestent des vestiges
gallo-romains sur le domaine, ici, la vigne a toujours été reine. A l’occasion des importantes opérations d’arrachage
(notamment des carignans) puis de replantation par des cépages plus adaptés (les rolles, syrah, cinsault et grenache), des
vestiges d’amphores ont surgi de cette terre rude, attestant l’antique vocation agricole et plus particulièrement viticole des lieux.
Quoi de plus évident, ici ?
Protégé du mistral au Nord et à l’ouest par le massif des Maures, mais bien ventilé, le vignoble jouit dans sa totalité d’une exposition
est-ouest. A l’abri des vents mais bénéficiant d’une douce influence maritime qui tempère les fortes chaleurs estivales, il s’étend
sur 54 hectares dont 38 sont actuellement exploités. Majoritairement argilo-calcaire, il tapisse la courbe des collines, s’élevant
graduellement jusqu’en lisière de forêt, en direction de Collobrières. Ici, les mica-schistes dominent tandis qu’en contrebas, au sud
de Grimaud, en bordure de la Giscle, la petite rivière qui se jette dans le golfe de Saint-Tropez, les sols se font sablo-limoneux :
ils sont dédiés, sur 14 hectares, aux IGP.
Acquise en 2012, une parcelle exceptionnelle de 12 hectares (2 sont en cours de plantation), les vignes du Clos de Capelune
tutoient le ciel, elles ont dans leurs rangs le cep le plus haut de l’appellation Côte de Provence (449 m d’altitude) Syrah, grenache,
cabernet-sauvignon et rolle s’y épanouissent avec une remarquable finesse.
Cultivées en lutte raisonné, avec des traitements réduits au minimum, les vignes font l’objet d’un important travail du sol notamment
en été selon le principe connu de tous les jardiniers : « un binage vaut deux arrosages » ! Un terroir exceptionnel, une situation
privilégiée, un site unique, le Château Saint-Maur, Cru Classé, renoue avec l’Excellence et ses propriétaires ont de hautes aspirations
pour ce vignoble illustre.
A SUPERB TERROIR REVIVED
This oasis of peace in the Gulf of Saint-Tropez is in an ideal location, where the vine has always reigned, as attested by the
Gallo-Roman ruins on the estate. During major uprooting operations (particularly Carignan vines), followed by the re-planting of
more suitable cultivars (Rolles, Syrah, Cinsault and Grenache), remnants of amphorae surfaced from this rugged land, attesting to
the ancient farming and more particularly winemaking activity on the premises. What could be more obvious, here?
Protected from the mistral in the North and by the mountainous mass of the Maures in the West, but well ventilated, the entire
vineyard is exposed East-to-West. Sheltered from the winds but enjoying a mild maritime influence that tempers strong summer
temperatures, the estate covers 54 hectares, 38 of which are exploited. The mainly calcareous clay soil covers the slopes of the
hills, rising gradually up to the edge of the firs, in the direction of Collobrières. Here, mica schists dominate, whereas lower down,
to the South of Grimaud, by the Giscle, the small river that flows into the Gulf of Saint-Tropez, the soils consist of sandy loam: 14
hectares of them are dedicated to IGP wines.
Acquired in 2012, an exceptional 12 hectare plot (2 hectares are being planted), the vines of the Clos de Capelune are on intimate
terms with the sky, with the highest vine stock of the Côte de Provence appellation (449 m of altitude), where Syrah, Grenache,
Cabernet-Sauvignon and Rolle are blooming with remarkable finesse.
Cultivated with environmentally friendly methods, where treatments are reduced to the minimum, the vines are subjected to extensive work on the soil, particularly in summer, according to the principle known to all gardeners: “ploughing once is better than
watering twice!” An exceptional terroir, a super location, a unique site, The Château Saint-Maur, Cru Classé, revives Excellence and
its owners have high hopes for this illustrious vineyard.

UN CHAI D’OEUVRE
Tout juste acquis par Roger Zannier que le Château Saint-Maur est doté d’un tout nouveau chai haute technologie. Situé
face au Château historique, ce chai d’œuvre s’intègre parfaitement au paysage et impressionne par la perfection de son
architecture. Matériaux nobles et bruts pour l’accueil, isolation parfaite, ergonomie optimale et équipements de pointe…
Ce chai nouvelle génération constitue un atout majeur pour renforcer le positionnement qualitatif des vins. Opérationnel
depuis le millésime 2013, le chai de Château Saint-Maur figure désormais parmi les plus performants de l’appellation Côtes de
Provence. Outre sa beauté qui s’intègre dans la douceur du paysage, il constitue une petite merveille de technologie d’une capacité
de vinification de 5000 hectolitres. Il est régi par les principes de gravité pour préserver au maximum l’intégrité des précieux raisins.
En sous-sol, il s’élève sur 3 niveaux et 10 mètres de profondeur, échelonnant la réception de la vendange, le pressurage puis, en son
cœur, les vinifications, l’élevage et le stockage. Un seul objectif : extraire avec autant d’intensité que de finesse le côté aromatique
des jus et maîtriser les robes, ce qui s’avère particulièrement important pour les rosés qui constituent 90 % de la production : des
rosés haut de gamme, de purs vins ciselés pour le plaisir ou la grande gastronomie.
Les opérations de pressurage qui s’opèrent sous inertage afin d’éviter toute oxydation des baies et des jus ainsi qu’une maîtrise
fine des températures (macérations pré-fermentaires à froid notamment) permettent d’élaborer des vins d’une grande pureté
d’arômes.
A MASTERLY WINE STOREHOUSE
No sooner was it acquired by Roger Zannier than the Château Saint-Maur was equipped with a brand new, high-tech wine
storehouse. Situated opposite the historical castle, this storehouse fits perfectly in the landscape and cuts an impressive architectural picture. High-grade and raw materials for the reception, flawless insulation, optimal ergonomics and
advanced equipment… this new generation wine storehouse is a major winning asset to bolster the quality positioning
of the wines. Operational since the 2013 vintage, the storehouse of Château Saint-Maur is now among the most efficient of the
Côtes de Provence appellation. In addition to its fine appearance that fits gently in the landscape, it is a small technological marvel
with a vinification capacity of 5000 hectolitres. It is governed by the principles of gravity to preserve the integrity of these precious
grapes to the maximum.
In the basement, it comprises 3 levels and runs 10 metres deep, spacing out the reception of the grape harvest, then, right in the
centre, the vinification, ageing and storage. One sole objective: extract the flavourful part of the grape juice with as much intensity
as finesse, and master the colour, which is particularly important for the rosé wines that constitute 90% of the production: upscale
rosé, pure wines delicately crafted for pleasure or high gastronomy.
The pressing operations are carried out under inerting to avoid any oxidation of the bays and the juices as well as for a fine temperature control (cold pre-fermentation maceration in particular) to produce wines with highly pure aromas.
