PHIL IPPE PA S COË T H e is a chef, no doubt about it. Philippe Pascoët is an enthusiast who awakens in us the true meaning of the words Master Chocolatier. A world of flowers and fruit scents, brown tones and cream, alliances of exquisite perfumes ... Rosemary, sage, basil, mint, coriander create colour palettes and products spreading in his store, as in a watchmaker’s shop, an enchanting and quaint atmosphere. Philippe Pascoët est un passionné qui réveille en nous le vrai sens des mots Maître chocolatier. Un monde fait de senteurs de fleurs et de fruits, de tonalités marron et crème, d’alliances de parfums exquis… Romarin, sauge, basilic, menthe, coriandre créent ses palettes de couleurs et de produits diffusant dans son magasin, tels celui d’un horloger, une atmosphère envoûtante et suranné. Tel un poète, Philippe Pascoët nous raconte de gourmandes et belles histoires autour de la ganache mais aussi des tablettes, des macarons, des assortiments... Son inspiration ? Le quotidien : un jardin aux senteurs de verveine ou de menthe, l'atmosphère d'un fumoir, une odeur tendre de basilic... Ainsi est l’univers de ce créateur unique qui a su, au travers des années, se faire un nom. La profession lui octroie une reconnaissance avérée, le décorant de différents prix qu’il remporta dans le monde du chocolat. Ses magasins de Carouge et Genève le prouvent largement. Premier chocolatier suisse à recevoir le « 1er Prix de l’Artisanat » à Genève en 2006, il enchaîna les succès pour recevoir en 2008 le prix de « l’Excellence internationale » au Salon du chocolat à Paris, un cas unique dans les annales de la chocolaterie suisse. Il faut dire que ce breton d’origine est installé en Suisse depuis plus de vingt ans et qu’il s’est taillé une belle renommée de créateur du goût. Son « Mendiant au lait » est l’une de ses nombreuses références. Et goûter absolument ses « Fondants », c’est une pure merveille. Un univers unique, pour l’un des grands du chocolat suisse romand. - PESEUX - « FONDANT » Like a poet, Philippe Pascoët tells stories of gourmandise and tales around the ganache but also chocolates, macaroons, assortments ... His inspiration? Daily life: a garden with scents of verbena or mint, the atmosphere of a smoking room, a tender basil smell... Such is the universe of this unique creator who has managed, through the years to make a name for himself. His profession gives him proven recognition, decorating him with various prizes that he won in the world of chocolate. His stores in Carouge and Geneva are wide clear proof of that. First Swiss chocolate maker to receive the “1st Craftsmanship Award” (Prix de l’Artisanat) in Geneva in 2006, he confirmed his success in 2008 with the prize for “International Excellence” at the Chocolate Exhibition in Paris, a unique case in the history of Swiss chocolate. It must be said that this Breton by his origin moved to Switzerland over twenty years ago and has earned great fame as a creator of taste. His “Mendiant au lait” is one of his many references. And, absolutely, please taste the “Moelleux”, it is a marvel. A unique universe, for one of the greatest names in the French-speaking Switzerland chocolate business.
