Eau de Vie (5 cl)
The Studer Distillery is a family business, and has been in existence in Switzerland since 1883 in the
canton of Lucerne in the North-West foothills of the Swiss Alps. It produces eaux-de-vie and liqueurs
famous for their true character. This is possible due to a high quality distillation process using water from a
privately-owned source, as this is an important part in obtaining purity in distillates.

Etienne Sauzet (1903-75) founded a domaine of approximately 12 hectares and established the
Sauzet name as one of the top addresses in the village. The domaine was taken over by his son-in-law
Gérard Boudot, who arrived in 1974, but in 1991 the inheritance was split up between the three
grandchildren, one of whom (Jean-Marc Boillot) chose to take out his share.
The vineyards have been farmed organically since 2006 and after two years of experimentation all
switched to biodynamic cultivation from 2010. The grapes are sorted to remove grey rot where necessary,
then pressed without crushing and fermented in oak until racking into tank before the next harvest, for a
further six months élévage on the fine lees. The premiers crus receive between 20 per cent (La Garenne)
and 33 per cent (Combettes) new oak with 40 per cent for the grands crus.

A pioneer in the renewal of the Condrieu appellation, Domaine Georges Vernay has always made wines of
unique style, notable for their finesse, elegance and harmony. The property has become a major emblem of
Rhone Valley winegrowing, from the time when Georges Vernay saved the Condrieu appellation to the
international awards earned by Christine Vernay’s Côte-Rôtie (she was named 2012 Best Winemaker in
France by ‘Le guide Bettane et Desseauve’.
Three generations have left the mark of the philosophy on the estate, while perpetuating its traditions in the
greatest respect for both vines and winegrowers.

The legendary Vin Jaune
Vin Jaune (French for ‘yellow wine) is a special type of white wine made in the Jura region in Eastern France.
It is similar to dry fino Sherry and gets its character from being matured in a barrel under a film of yeast known
as the voile that forms on the wine surface, This is how the wine achieves its yellow color and nutty flavor
(minimum six years and three months after harvest).
The wine is then bottled in 62cl Clavelins, the traditional bottle of Vin Jaune, which alludes to the amount of
wine remaining after the evaporation process during the ageing.

Lucien Lemoine is a two person operation, Mounir Saouma and his wife Rotem established the
wionery in 1999 and produces only Grands Cru and Premiers Cru wines from the Côte d'Or.

Legendary Vineyards
Côte Rotie, which is translated as “the roasted hillside” in English and consists of
two main hills. The Legend says that a feudal landlord named Lord Maugiron gave
each of his daughters one of the two main hills. One slope went to the blonde haired
daughter while the brunette was awarded the other, Côte Blonde and Côte Brune.
Many people find the blonde to be more open, giving and sensual. The brunette, due to
its power is said to require more time to appreciate it.

More Burgundian than Bordeaux, both in the simple underground cellars where the
wines are vinified and in its graceful, silky-tannined wines, it is a quirky oasis in the
sometimes-sterile Bordeaux wine industry. The owner Francois Mitjaville, is one of the
most passionate winemakers you will meet, and cares far more about producing wines he
considers great than what certain illustrious press commentators think.
The wines are simply magnificent. Opulent, profound, packed with personality, and amongst
the best Merlot-driven wines anywhere in the world.

Off the Beaten Track
Hungary
David Alvarez, of Vega Sicilia, realized the enormous potential of the ancient Oremus vineyards and
invested in the region creating the Tokaji Oremus Company. Selected aszu berries (those affected by
noble rot) are added in varying proportions to the must of basic “dry wine” grapes. The puttonyos system is
still employed: a 27.2 kg basket of noble rotted grapes equates to 1 puttony, and the number of baskets
added to a given quantity (136 litres) of dry wine dictates the aszu number. The higher the number, the
sweeter the wine is.

Lebanon
Lebanon is among the oldest sites of wine production in the world. The Israelite prophet Hosea (780–
725 B.C.) is said to have urged his followers to return to Yahweh so that "they will blossom as the vine,
and their fragrance will be like the wine of Lebanon". The Phoenicians of its coastal strip were
instrumental in spreading wine and viticulture throughout the Mediterranean in ancient times. Despite
the many conflicts of the region, the country has an annual production of about 600,000 cases of
wine. Recently the sector has been witnessing an unprecedented growth. The number of wineries went
from 5 in 1998 to over 30 nowadays.

Dessert Wines
A sweet wine can be naturally sweet, rather by late Harvest and it may be Botrytized (affected by the
Noble rot or Botrytis Cynerea). However, techniques has been invented to produce fortified wine by the
addition of alcohol in the wine at the beginning of the fermentation with the aim of arresting it and
keeping the natural sugar present in the juice.
