Laboratoire des maladies métaboliques CHU Constantine, Algérie Email : [email protected] Objectif : Le comportement alimentaire humain et le sujet d’une abondante littérature scientifique. Son impact sur la santé de l’homme a été prouvé par plusieurs études dans le monde. Les mauvaises habitudes alimentaires et le mode de vie sédentaire augmentent le risque d’apparition précoce de certaines maladies chroniques telle que l’obésité. Une fois installés, ces comportements sont très difficiles à modifier par la suite d’où la nécessité d’agir dès le plus jeune âge. En Algérie, il existe très peu d’études publiées sur ce sujet. Le surpoids et l’obésité observée laissent supposer une évolution du comportement alimentaire. Le but de ce travail est d’étudier, chez les adultes la prévalence de la surcharge pondérale d’une part et les habitudes et la consommation alimentaire d’autre part. Matériels et méthodes : Nous avons réalisé une enquête transversale à visée descriptive, la population étudiée se compose de 318 adultes constantinois de 16 ans et plus. L’enquête a été réalisée par interview. L’outil de travail est un questionnaire sur les mesures anthropométriques, le niveau socioéconomique, le comportement et les habitudes alimentaires ainsi que l’activité physique. Résultats: Nos résultats confirment la relation entre comportement alimentaire et risque d’obésité. Les résultats de l’étude anthropométrique montre que 35,84 % des adultes présentent une obésité. La prévalence globale de l’obésité est significativement différente entre hommes (22.37%) et Femmes (40.08%). L’alimentation des enquêtés se caractérise par une importante consommation de produits amylacés, une faibles consommation des légumes et des fruits et une consommation des produits animaux protidiques qui augmente avec le niveau socio économique. Le petit déjeuner est le repas le plus négligé. Le diner est considéré comme un moment de convivialité et de partage. La télévision est regardée plus de 2h/jour par 49,06 % des enquêtés. Le grignotage des aliments à forte teneurs en glucides et lipides (sucreries et chips) est très pratiqué surtout devant la télévision. L’activité physique et la pratique du sport sont négligeables. Conclusion: Il ressort de cette étude que les adultes constantinois n’ont pas une bonne hygiène de vie. Le profil du comportement alimentaire des Constantinois enquêtés est le même que celui des adultes des autres pays. Pour corriger les déficits de ce comportement, les programmes d’éducation nutritionnelle dès le plus jeune âge sont nécessaires. C’est pour cette raison qu’elles doivent être soumises à un contrôle rigoureux. Les épices sont des parties de plantes séchées qui, par leur odeur, leur saveur et leur couleur, agrémentent les denrées alimentaires. Elles sont utilisées entières ou soumises à un processus de broyage ce qui facilite leur falsification. Matériels et méthodes: Suite à la diffusion de l’article intitulé: Algérie : Des épices mélangées avec du ciment et de la brique commercialisées sur le marché dans le journal El Khabar le jeudi 5 mars 2009, notre équipe s’est intéressée au contrôle de 5 épices : Anis vert (fruit), Cannelle (écorce et poudre), Carvi (fruit), Fenouil (fruit), Gingembre (rhizome et poudre) achetées chez des herboristes de Tlemcen, d’Alger, d’Annaba et de Guelma. Dans le but de réaliser une étude préliminaire de la conformité de ces épices utilisées en thérapeutique et comme condiments, nous nous sommes basés sur des critères tirés de la pharmacopée européenne 2005. Résultats: Nous avons remarqué que les épices étaient toujours disposées en vrac, exposées au soleil et à l’air libre: SOURCE D’ALTERATION. A l’étude macroscopique et microscopique (par le réactif de Gazet), nous avons noté souillure des épices par d’autres parties de plantes ou par des insectes à des pourcentages différents. Conclusion: Occupant une place primordiale en cuisine, les épices ont aussi des vertus médicinales. C’est pour cette raison qu’elles doivent être soumises à un contrôle rigoureux. Notre travail n’a concerné que quelques volets du contrôle, des études complémentaires sont envisageables. PREVALENCE OF METABOLIC SYNDROME AMONG KUWAITI FEMALE ADOLESCENTS USING TWO CRITERIA A.N. AL-ISA Faculty of Medicine - Kuwait University Email: [email protected] Objective: To assess the prevalence of MS among Kuwaiti female adolescents aged 10-19 years, using the diagnostic criteria developed by the International Diabetes Federation (IDF) and the National Cholesterol Education Program – Third Adult Treatment Panel modified for age (NCEP-ATP III). Materials and methods: A cross-sectional random sample of 774, apparently healthy, Kuwaiti female adolescents drawn from several randomly selected schools was studied for the prevalence of MS using the above mentioned two diagnostic criteria. Anthropometric and clinical assessments included measurement of waist circumference (WC), blood pressure (BP), fasting blood glucose (FBG), high density lipoprotein (HDL) and triglycerides (TG). Results: Using the IDF criteria, WC was found to be increased among 31%, TG among 1.1%m FBG among 2.1%, BP among 49.4%, and HDL was decreased among 39.6%. Using the modified ATP III criteria, WC was found to be increased among 13.2%, TG among 6.2%, FBG among2.1%, BP among 64.7%, and HDL was decreased among 26.7%. The prevalence of MS was 14.8% and 9.1% using the IDF and ATP III criteria, respectively. Conclusion: Even with the absence of criteria specific for Gulf Arab population, the prevalence of MS among the studied sample was high, using the two criteria. The IDF, however, tend to overestimate the prevalence of MS as compared with ATP III. Nonetheless, this require intervention measures to protect this group from especially such diseases as cardiovascular and type 2 diabetes mellitus. IMMUNOMODULATORY EFFECT OF SODIUM SACCHARIN AND POTASSIUM ACESULFAME IN BALB/C MICE A. REMIL, S. MEBREK, G. A. DRA, K. OULD YEROU AND M. BENALI Department of Biology, Djillali Liabes University, Biotoxicology Laboratory, National Research Center, Sidi-Bel-Abbes, Algeria Email: [email protected] Objective: Investigated the effect of two widely used sweeteners, sodium saccharin and acesulfame potassium on immune system. Materials and methods: BALB/c mice of both sexes aged 5 to 9 weeks were given low concentrations of sweeteners (0%, 0.5%, 1%, 2%) in drinking water for 90 days. During this period, a subcutaneous immunization is conducted. Blood is taken from the retro orbital sinus and the animals were sacrificed by cervical dislocation. Weight measurements and histological studies have involved spleen, thymus, bladder and lungs. Levels of immunoglobulins are measured by radial immunodiffusion reversed. The values were considered statistically significant when the p value was lower than 0.05. Results: A significant increase in the consumption of sweeteners is found in the groups receiving doses of 1% (147.69 ± 0.57ml) and 2% (154.44 ± 0.49ml) compared to control group (132.06 ± 0.45ml) (p[0.05). Animals consuming sweeteners have a low weight gain during the experimental period (1.08 ± 1.07g) compared to control group (0.85 ± 0.97g). Organ weight is not affected in both sexes (p>0.05). Histology showed no tissue abnormality of thymus and lung in groups consuming sweeteners; however histological disturbances of the spleen were observed in mice that received 2% of sweeteners for both sexes compared with control group (presence of numerous atypical cells). Histological study of bladder revealed hyperplasia in groups receiving doses of 1% and 2% sweeteners. Immunodiffusion assay shows no change in immunoglobulin levels in groups consuming sweeteners compared to the control group (p> 0.05). Conclusion: An excess of sweeteners has adverse effects on the immune system in general and the secondary immune response in particular. Excessive consumption of sweeteners in mice can cause histological abnormalities in the spleen and bladder, and decrease levels of immunoglobulins. EVALUATION DE L’ETAT NUTRITIONNEL CHEZ LES PATIENTS ATTEINTS DE STEATOSE HEPATIQUE AU SERVICE DE MEDECINE DE L’HÔPITAL MOHAMED SEKKAT ET AU SERVICE DE GASTROLOGIE DU CHU IBN ROCHD, CASABLANCA S.BENASSILA; A. AREZD; F. AL ARABI; N. LAHLOU; M. KABINE Ecole Supérieur de Nutrition et de Paramédical Casablanca/ Maroc Email : [email protected] Objectif : Ce travail de recherche se propose pour la première fois au Maroc : -d’identifier le profil type des patients atteints de stéatose hépatique ; - d’établir l’influence des habitudes alimentaires sur l’état nutritionnel de ces patients ; - d’étudier d’éventuelles corrélations entre la stéatose hépatique et certaines maladies nutritionnelles; - et de définir le profil nutritionnel de ces patients et les circonstances de découverte de la maladie au sein de la population marocaine afin de faciliter son dépistage. Matériels et méthodes: Notre travail de recherche s’est déroulé dans deux entités connues pour le traitement de la stéatose hépatique : L’hôpital Med SEKKAT, et le CHU IBN ROCHD de Casablanca. Notre étude a porté sur un échantillon aléatoire de 30 personnes atteintes de stéatose hépatique sans imprégnation alcoolique. Résultats: Les résultats montrent une forte corrélation entre la stéatose hépatique et d’autres maladies tels que l’obésité (80%), l’hyper-triglycéridémie (60%), le syndrome métabolique (43%) et le diabète type I (27%). Dans une moindre mesure, il existe une relation moins prononcée entre la stéatose hépatique et le diabète de type II. Ce travail de recherche a également permis de tracer le profil moyen du patient marocain atteint de stéatose hépatique dans le but de faciliter le dépistage de la maladie. Il s’agit de patiente de sexe féminin de 2ème âge, au foyer, souffrant d’une obésité androïde grade I et ayant une activité physique légère. Conclusion: ainsi ce travail a permis d’approcher les principaux facteurs de risque de la SHNA , les habitudes alimentaires des patients atteints de SHNA, le rôle de la nutrition dans l’apparition et la prise en charge de la maladie et de définir un profil type du patient marocain atteint de SHNA. CHITOSAN COATING IMPROVES QUALITY AND SHELF-LIFE OF EGGS) DR .DHUHA D. SALMAN AND DR. INAS M. K. AL-AUBADI College of Agriculture, University. Of Baghdad, Baghdad, Iraq Email : [email protected] Objective: The main objective of this study was to examine the effect of chitosan coating on the quality (Weight loss, Haugh Haugh unit, Yolk index and Albumen pH) of eggs during 4 wk of storage at 25◦C Materials and methods: Two chitosan with high(HMW1155KDa) and low(LMW720KDa)were used to prepare coating solutions by dolv dissolved it in 1%(v/v)acetic acid at 2%(w/v)concentration with 2%glycerol as a plasticizer. Eggs coated with Chitosan solutions then stored in incubator at 25◦Cfor 4 wk. Six eggs per each treatment were taken at 1wk intervals for determination of Weight loss, Haugh unit, Yolk index and Albumin pH. Results: Chitosan coating was effective in preserving the internal quality and extending the shelf life of eggs compared with uncoated eggs and eggs coated with 1%acetic acid during 4wk of storage. Chitosan (720KDa) was the best in reducing weight loss ,reduce Albumen pH, high Haugh unit, high Yolk index compared with chitosan(1155KDa),uncoated and 1%acetic acid coated eggs after 4wk of storage. Conclusion: This study demonstrates that Chitosan prepared by the simplified process from waste material (shrimp shells) and can be used for coating of eggs that does not require a pure chitosan product so the chitosan coating is attributed to protective barrier for moisture and gas transfer from the albumen through the eggshell, improved internal quality and extended shelf life of eggs for 4 wk of storage at 25°c Compared with noncoated and 1% acetic acid coated eggs. However, use of 2% LMW chitosan (720KDa) as a coating material is advantageous in reducing weight loss and obtaining more desirable albumen (high Haugh unit) and yolk (higher yolk index)quality during a 4 wk storage period. Further studies are needed to experiment the effect of chitosan coating on the microbial contamination. ETAT NUTRITIONNEL ET STATUT SOCIO-ECONOMIQUE EN RELATION AVEC LES PERFORMANCES SCOLAIRES W. MEKHANCHA SEMEP EPSP Benmhidi ; Laboratoire ALNUTS ; INATAA ; UMC Constantine Email : [email protected] Objectif : La relation entre santé et apprentissages est bien établie et le statut socioéconomique est reconnu comme déterminant de la réussite scolaire. Notre objectif sera d’évaluer l’influence de ces facteurs sur les performances scolaires. Matériels et méthodes : Etude descriptive concernant 223 élèves d’une école primaire sise dans un quartier dit favorisé de la commune de Constantine, réalisée en 2009. Un questionnaire a recueilli les données socio-économiques et les résultats scolaires en mathématiques et en arabe. Les données anthropométriques ont été prélevées du registre de la santé scolaire. Les indices nutritionnels T/A (z-score) et IMC (kg/m²) ont été calculés et analysés à l’aide du logiciel Epi Info 6.0. L’état nutritionnel a été évalué selon les références OMS (1995, 2007). Résultats : L’analyse de l’impact du statut nutritionnel sur les performances scolaires montre que la maigreur (4,9%), le surpoids (16,1%) et l’obésité (10,3%) n’influent pas sur ces dernières. Seuls les élèves atteints d’un retard de croissance modéré (6,7%), en majorité des filles, ont des acquis scolaires moyens en mathématiques et en arabe ; à l’inverse les garçons sont performants. Les élèves retardés en taille vivent dans des ménages de 4 à 11 personnes, la moitié d’entre eux perçoit l’allocation de solidarité, leurs parents ont un niveau d’instruction supérieur et 1/3 d’entre eux a déjà redoublé. Conclusion : L’école ne peut, à elle seule, relever un défi qui tient à des causes sociales et pas uniquement internes à elle. La santé physique et mentale et la nutrition devraient figurer dans toutes les actions visant à l’amélioration de la qualité de l’éducation et de la capacité des enfants à acquérir des compétences. Instaurer de partenariats forts à tous les niveaux permettrait de rassembler les conditions nécessaires au développement de l’enfant et à son bien-être. COMPORTEMENT ALIMENTAIRE DES MEDECINS INTERNES ET RESIDENTS DU CHU DE MARRAKECH K.DIYANE, G.EL MGHARI, N.EL ANSARI Service d’Endocrinologie. CHU Mohamed VI- Marrakech, Maroc Email : [email protected] Objectif : Le corps soignant notamment les médecins internes et résidents, sont souvent amenés à conseiller des mesures hygiéno-diététiques et à donner l’exemple de bonnes pratiques alimentaires. L’objectif de cette étude est de décrire le comportement alimentaire des médecins internes et résidents, et de vérifier son adéquation aux recommandations. Matériels et méthodes : Étude descriptive transversale prospective réalisée dans les différents services du CHU Mohamed VI de Marrakech. Elle concerne 200 médecins internes et résidents. Un questionnaire anonyme, inspiré des recommandations françaises « plan national nutrition santé PNNS » leur est administré. L'enquête alimentaire, par le rappel des 24 heures, porte sur l'ensemble des aliments consommés dans un jour de travail, du lever au coucher. Les autres éléments analysés sont essentiellement le schéma alimentaire, la pratique d’exercice physique et les mesures anthropométriques. Résultats : Les résultats sont en cours. Conclusion: La prise en charge hygiéno-diététique des patients s’impose, toute spécialité confondue, mais pour être convaincant et efficace, le médecin devrait avoir une bonne connaissance des règles diététiques mais aussi avoir un comportement alimentaire correct pour pouvoir donner le bon exemple aux patients. ASPECTS QUALITATIFS ET QUANTITATIFS DE L’APPORT ALIMENTAIRE DES DIABETIQUES JEUNEURS ET NON JEUNEURS DURANT LE RAMADAN H.CHEGOUR, G.EL MGHARI, N.EL ANSARI Service d’Endocrinologie Diabétologie et Maladies Métaboliques Marrakech, Maroc Email : [email protected] Objectif : Le mois de Ramadan s’accompagne de changements majeurs dans les habitudes alimentaires et l’activité physique chez les diabétiques jeûneurs et non jeûneurs. L’objectif de notre travail est d’évaluer l’aspect quantitatif et qualitatif de l’apport alimentaire des patients diabétiques jeûneurs et non jeûneurs au cours du Ramadan Matériels et méthodes : Étude descriptive prospective incluant 80 patients diabétiques vus en consultation de diabétologie durant le mois de Ramadan 2010, chez lesquelles une enquête diététique détaillée a été réalisée. Résultats : Parmi les 80 patients inclus on compte 40 diabétiques non jeûneurs et 40 jeûneurs (51,2%). Le groupe des jeûneurs : 32 diabétiques de sexe féminin (78%) et 8 de sexe masculin (20%), l’âge moyen des patients dans ce groupe est de 56 ans, l’ancienneté moyenne du diabète est de 6 ans, l’apport calorique moyen dans ce groupe est de 1442 Kcal/j (Apport protidique : 16,76%, apport lipidique : 26,68%, apport glucidique : 56,56%) Le groupe des non jeûneurs : 27 diabétiques de sexe féminin (67,5%) et 13 patients de sexe masculin (33,3%) ; l’âge moyen des patients dans ce groupe est de 49ans, l’ancienneté moyenne du diabète est de 9 ans, l’apport calorique moyen est de 1954 Kcal (apport protidique : 18%, apport lipidique : 26,60%, apport glucidique : 55,4%). L’analyse qualitative de l’apport alimentaire durant le Ramadan a montré une surconsommation des aliments à index glycémique élevé dans les deux groupes, il s’agit d’aliments préparés spécialement pour le Ramadan (chebbakia ; Mesemen; soupe smida, les dattes). Conclusion: Durant cette période, la manière de s’alimenter est ponctuellement modifiée. L’alimentation est beaucoup plus sucrée et grasse qu’habituellement et appauvrie en fibres (peu de fruits et légumes frais) d’où la tendance à l’hyperglycémie. Les diabétiques non autorisés à jeûner le sont en général pour un déséquilibre glycémique préalable au mois de Ramadan, alors que l’apport calorique total est plus important dans ce groupe (1845Kcal/j ). La surconsommation d’aliments à index glycémique élevé prédispose au déséquilibre glycémique et aux complications métaboliques. D’où l’intérêt de l’éducation au respect des règles diététiques aussi bien pour les jeûneurs que les non jeûneurs. EVALUATION DE LA TENEUR DU SEL DANS LE PAIN DES BOULANGERS CASABLANCAIS MAROC ET APPORTS JOURNALIERS RECOMMANDES BOULGHANA A., TAKI H., JABARI M., ALAMI M., DEROUICHE AF. Université Hassan II Mohammedia Faculté des Sciences Ben M’Sik Casablanca Centre d’hygiène Sidi Othmane, Casablanca Université Hassan II Faculté de Médecine et de Pharmacie, Casablanca, Maroc Email : [email protected] Objectif : Evaluation de la quantité moyenne du sel contenu dans le pain des boulangeries au Maroc dans les perspectives d’élaboration d’un programme de prise de conscience de l’impact d’une surconsommation du sel, considérée comme un facteur de risque de l’hypertension artérielle et dont la prévalence est établie à 33,6% chez les marocains. Matériels et méthodes : 160 échantillons de pain (80 avec sel et 80 sans sel servant de témoins) on été récoltés durant les mois de mars-avril 2011 chez 80 boulangeries de 8 quartiers de Casablanca répartis en trois types : aisés, populaires et mixtes. La quantification du sel a été réalisée par la méthode MOHR : basée sur le titrage des ions chlorures par dosage colorimétrique Résultats : La quantité moyenne utilisée dans la préparation du pain par les boulangeries de Casablanca concernées par l’étude est 17.42g / Kg avec une répartition homogène de cette teneur dans les trois types de quartiers de l’étude. Conclusion: En se référant à la quantité moyenne du pain consommé par les marocains, estimée à 350g/j, l’apport journalier est estimé à 6.1g. Cette valeur à elle seule dépasse à la fois : • les indicateurs de référence pour le sodium établis par l'IOM (Institute of Medicine, des États-Unis) en 2004 situés, selon l’age, entre1500 et 2300mg/j de sodium « 3,75 et 5,75g/jour du sel » • et la ciblethérapeutique de 2000mg/j de sodium « 5g de sel » fixée en 2003 par l’Organisations Mondiale de Santé (OMS). NB/ Le présent travail est réalisé dans le cadre de la convention de partenariat entre La Faculté des Sciences Ben M’Sik, l’Association Tous Avec le Coeur et la ville de Casablanca Préfecture Sidi Othmane. NEZZAL Laboratoire de Recherche Alimentation, Nutrition et Santé (ALNUTS), INATAA, Université Mentouri de Constantine, Constantine, Algérie E mail: [email protected] Objectif: Elaborer une Table de Composition des Aliments Algériens (TCAA), outil standardisé indispensable à l’analyse nutritionnelle de l’alimentation. Matériels et méthodes : Sont considérés comme aliment algérien tout aliment commercialisé et consommé en Algérie, produit localement ou importé. Les données sont pour l’essentiel compilées selon les procédures préconisées par le réseau INFOODS (FAO/UNU) notamment pour l’identification des aliments, le choix des tagnames et les descripteurs Langual. Les aliments sont classés selon leur potentiel nutritionnel dominant. Résultats: La TCAA comprend actuellement plus de 300 aliments répartis en cinq groupes d’aliments (produits amylacés, légumes et fruits, produits animaux protidiques, produits à forte densité énergétique et à faibles densités nutritionnelles, divers produits qu’il n’est pas possible de classer dans les quatre premiers). Chaque aliment est présenté par une fiche où figurent énergie (kJ/kcal), eau, protéines, glucides disponibles, lipides, fibres, calcium, phosphore, fer, rétinol et équivalent-rétinol, thiamine, riboflavine, niacine et équivalent-niacine, vitamine C, et quatre principaux acides aminés indispensables (Lysine, acides aminés soufrés, thréonine, tryptophane). Ces données sont complétées par 19 densités nutritionnelles, la part comestible pour 100g tels qu’achetés, dix descripteurs Langual, et un diagramme illustrant la part des nutriments majeurs dans la densité énergétique. Conclusion: Cet outil encore peu connu, gagnerait à être adopté par les utilisateurs pour traduire les quantités d’aliments consommées en nutriments. Le travail de mise à jour, d’enrichissement et d’élargissement aux préparations culinaires et industrielles est permanent. Le laboratoire ALNUTS en afait un de ses principaux axes. Un réseau national se met en place pour valider les premières versions, corriger les données, et en faire un véritable outil standardisé. La mise en place d’un réseau maghrébin doit permettre d’échanger des données selon les procédures définies et diffusées par le réseau INFOODS. Matériels et méthodes : notre population est faite de 200 médecins internes et résidents de toutes les spécialités qui exercent au niveau du CHU Mohammed VI de Marrakech. Résultats: en cours Conclusion: les facteurs socio-culturels influencent d'une forme déterminante sur la perception et sur la satisfaction de l'image corporelle. l'image corporelle idéale désiré ou mieux considérée en rapport avec la beauté et la santé est différente dans les différentes cultures. Matériels et méthodes : L’huile d’olive et d’argane sont deux huiles végétales composées respectivement de 71et 44,8% d’acide oléique 12,9 et 33,7% d’acide linoléique, de 13,2 et 18,5% d’acide gras saturés et 1% de composés mineurs tels que les Polyphénols , les stérols , les tocophérols. L’intervention, qui est une étude d’efficacité, validée par le comité d’éthique, est composée d’une phase de stabilisation de 15 jours « P.S »suivie d’une phase d’intervention de 2 mois « P.I ». 152 femmes ménopausées d’age moyen 55,49±6,18 supposées saines, ne consommant ni hormones de substitutions ni additifs vitaminiques et ayant signées la lettre de consentement ont intégré dans leur petit déjeuner durant la P.S 25g /j de margarine végétale. Après randomisation, 75 femmes ont rationnaires pour la durée d’activité annuelle totale (108 jours). Pour chaque saison, nous avons calculé la part de chaque groupe d’aliments dans la ration, l’apport énergétique et les apports nutritionnels. Résultats: Les résultats obtenus entre la fin de la P.S et de la P.I ont monté que chez les F.O une diminution significative du Poids, BMI, Cholestérol Total et c-LDL respectivement 0,78%(p=0,012), -0,76%(p=0,019), -1,70%(p=0,006) et –3,86%(p=0,036) et chez les F.A une augmentation significative du VitE sérique +25,5%(p=0,027). Conclusion: Ce travail montre pour la première fois le bénéfice nutritionnel de la consommation de ces deux huiles sur les profils anthropométrique, lipidique et antioxydant chez les femmes ménopausées. L'effet antioxydant de la vitamine E pourrait lui conférer un rôle préventif important, chez le diabétique. Ainsi, le but de l’étude est d'observer une éventuelle relation entre la vitaminémie E, l'exposition à certains facteurs de risques liés au diabète, à variables quantitatives et qualitatives et la fréquence des cardiomyopathies ischémiques (CMI) au sein d'une population diabétique. Matériels et méthodes : Il s'agit d'une étude transversale à visée descriptive et analytique, portant sur une population de 100 diabétiques de type 2, résidants dans la région de Constantine (Algérie). Résultats: A l'issue de l'étude, les observations suivantes ont été émises: Une hypovitaminémie E a été recensée chez le quart des sujets, sans différence significative entre les deux sexes. En fonction de l’âge, les plus hautes fréquences de l’hypovitaminémie E ont été observées chez les sujets âgés de 50 ans et plus. Cependant, la vitaminémie E augmentait en fonction de l’indice de masse corporelle (BMI) et de la lipémie, chez l’ensemble des patients. Les complications dégénératives ont été recensées chez 66% des sujets étudiés, avec une prépondérance des CMI chez les diabétiques présentant une hypovitaminémie E. Chez les diabétiques ayant un bilan lipidique normal et une vitaminémie E élevée, la fréquence des CMI est significativement moins élevée, comparé aux sujets ayant une hypovitaminémie E. Par contre, chez les patients souffrant d’une perturbation lipidique, nous avons constaté que les CMI étaient significativement plus fréquentes même en cas de vitaminémie E élevée. Conclusion: Il semblerait que, l'effet antioxydant de la vitamine E ne pourrait s’avérer, efficace dans la réduction des risques de CMI, que s'il s'accompagnait d'un bon contrôle des facteurs de risque lipidique. Nevertheless, assessment of food systems and diets sustainability should take into account both their health benefits and their environmental impacts. This work aims at analysing the main environmental impacts of the Mediterranean food consumption patterns and at highlighting their nutrition and health benefits. Materials and methods: The paper provides a review on nutrition and health benefits of the traditional Mediterranean diet (MD) as well as on water and land resources and biodiversity in the Mediterranean. FAO food consumption statistics and standard footprint data were used to characterise the Mediterranean food consumption patterns and to calculate and discuss consumption environmental impacts, i.e. water, carbon and ecological footprints. Results: The Mediterranean hotspot is a major centre of plant and crop diversity. Mediterranean people gather and consume about 2,300 plant species. The share of plant-based energy in the diet is higher in the Mediterranean than in Northern Europe and America. Peoples adhering to the Mediterranean dietary patterns comply better with recommended nutrients and micronutrients intakes. The MD was associated with reduced mortality and lower risk for obesity, type 2 diabetes, cardiovascular diseases and some cancers. Conclusion: The traditional MD offers considerable health benefits and has lower environmental impacts than Northern Europe and American diets so measures aiming at its safeguarding and sustainability should be promoted. HEMATOLOGICAL PROFILE AMONG SCHOOL CHILDREN IN A COASTAL AREA OF MOROCCO MOHAMED EL HIOUI, AHMED AHAMI, YOUSSEF ABOUSSALEH Ibn Tofail University, Kenitra Morocco. E mail: [email protected] Objective: Hemoglobin, hematocrit, mean cell volume (MCV), and red blood cell distribution width are hematologic tests that are commonly used to assess iron status. Aims: The objective of the present study is to evaluate the hematological profile among school children healthy in Morocco. Materials and methods: 295 pupils aged from 6 to 16 years old composed the study group. Blood samples were collected for measuring hemoglobin (Hb), serum ferritin (SF), serum iron and other hematological indices (MCV, TCMH, Ht, GB, GR) , and subjects were screened for anaemia and iron deficiency. Results: The mean ferritin level was 27.26 μg/l ± 16.88 whereas the mean serum iron 2.4 mg/l ± 1.0 and the mean haemoglobin concentration was 12.45 g/dl ± 1.02. A significant difference by sex is observed for the number of red blood cells, values of hemoglobin and hematocrit (p [0.005). However, no significant difference by sex is noted for MCV, MCHC and MCH. There were significant correlations between the levels of Hb and SF, mean corpuscular volume (MCV) and SF were found to be significantly related to Hb Conclusion: Our study showed a positive correlation between hemoglobin and ferritin and a strong positive correlation between hemoglobin and MCV suggesting that anemia in children surveyed is dominated by microcytic anemia by iron deficiency. IRON DEFICIENCY IMPACT ON NEUROCOGNITIVE DEVELOPMENT AND SCHOOLCHILDREN PERFORMANCES IN KENITRA NORTH WEST OF MOROCCO YOUSSEF ABOUSSALEH, .AHMED AHAMI, MOHAMED EL HIOUI, FRANCOISE BONTHOUX, CHRISTIAN MARENDAZ Ibn Tofail University, Kenitra, Morocco E mail: [email protected] Objective: This work aims study the problem of iron deficiency and its implication on neurocognitive regulations and their impact on neurocognitive development and schoolchildren performances in Kenitra North west of Morocco. Iron deficiency remains an important public health trouble on a global scale, regional and local levels. The relations between iron deficiency and cognitive performance exist but the biochemical and physiological mechanisms linking it to an altered neurocognitive function are not yet clear. Materials and methods: A review on the studies relating IDA to Neurocognition especially on hippocamus functions alteration and consequently on learning abilities and memory. Then a set of cross sectional Observational studies carried out in the city of Kenitra and its region will be presented. A total of 600 pupils were observed since 2002 in different settings rural periurban and uban. After validation and adaptation of cognitive tools, extracted batteries were used to assess cognitive status. Iron status were assessed by Hemoglobin, hematocrit, seric ferritin and seric iron. Students were also screened for any parasites infection and excluded in the study and oriented for treatment. Results: The main results confirm that anemia is vey important in schoolchildren children and its prevalence varies from 20 to 30 %. A strong association was found between iron deficiency alone and Iron deficiency anemia with a global induced intelligence and Visual attention performances Conclusion: Scientists rely on the use of new exploration techniques and behavioral neurocognitive (f MRI, EEG evoked potentials) to enlighten in the near future. The next step is to work with infants in collaboration with Pediatric hospitals and conduct some research on animal models in relation to the food fortification vectors in Morocco. IMPACT OF SOCIOECONOMIC, NUTRITIONAL AND ENVIRONMENTAL DETERMINANTS ON SCHOOL PERFORMANCE AMONG CHILDREN LIVING IN COCOA FARMING AREA OF CÔTE D'IVOIRE: SOUBRÉ CASE PACÔME N’GO K, A.O.T AHAMI, F-Z AZZAOUI, Y. ABOUSSALEH A. EL HAMRANI Ibn Tofail Universiy, Kénitra, Morocco Email: [email protected] Objective: The objective of this comparative study, conducted in the area with a high cocoa farming practice Soubré southwest of the Ivory Coast and in the control region of Dimbokro, proposes to evaluate the association between socioeconomic determinants, environmental and nutrition in the area of housing and school failure. Materials and methods: A cross-sectional survey was conducted on a sample of 95 subjects from primary school: 49 recruited cocoa zone and 46 zone control. The methodology based on the questionnaire focuses on the critical economic and demographic (household size, education level and occupation of parents, family income etc.) and the living environment. Nutritional status is assessed by the indices weight-for-age, height for age and BMI-for-age. The academic subjects are defined by the average annual achieved in the classroom. Results: The dropout rate among study subjects was 67.34% as against 17.36% cocoa zone control, however it is more important category of children aged 7 to 10 years: 63.3% in cocoa area against 8.57% in control region ( χ ² = 21.63, p [ 0001). These results show that the adverse socioeconomic and demographic factors have a statistically significant relationship with habitat area Cocoa (p [ 0 .001). Statistical analysis shows that growth retardation affects 18.36% of children aged 7 to 10 years in cocoa area against only 6.52% in the control region (χ ² = 4.93, p = 0.02), however, this prevalence is slightly pronounced in the elderly 11 to 14 years in that area Cocoa area without agricultural practice but not statistically significant. Underweight 22.44% prevalent among young patients in cocoa area against 13.04% in control region (χ ² = 3.18, p = 0.06), while rates 10.2% and 8.69% respectively in cocoa area and control area are substantially similar in older subjects (χ ² = 0.33, p = 0.43). Conclusion: This article highlights the failure level of primary school subjects in areas of high agricultural practice of cocoa in Côte d'Ivoire. The impact of socioeconomic factors and family natural environments but also the relatively high prevalence of malnutrition among children in th cocoa area could be negatively associated with school failure. However, the new social issues related to children's involvement in agricultural activities in spite of their school work deserves the attention of authorities. ASSESSMENT OF NUTRITIONAL STATUS OF INDIVIDUALS WITH AUTISM AND ADAPTATION OF AN ADEQUATE DIET H .HARCHAOUI, AOT .AHAMI, Y. ABOUSSALEH Ibn Tofail University, Kénitra, Morocco Email: [email protected] Objective: Autism is a neurobiological disease onset before 3 years characterized by qualitative impairment in reciprocal social interaction, a verbal and nonverbal communication and disability representation and creative activities. In this present work we examine and follow three autistic individuals to assess their nutritional and biological parameters. Materials and methods: the study was based on the neurobiological method on a child tbased on blood, urine biology and biochemistry analyse and on the exploitation of results of a diagnostic scale for children (EDA) with autistic features, of pervasive development disorder severely atypical or other similar disorders. The scale consists of 79 items articulated on the analysis of clinical signs such as las behavioral and cognitive aspects of the child and the analysis of the characteristics of theory of mind and attention joint. The scale is also evaluating other aspe such hyperactivity, hypoactivity as well as the feelings of parents vis a vis their children. Results: Preliminary analysis of the results showed that neurobiological, cognitive and behavioral and nutritional allowed us to affirm an improvement in health status and autonomy of these three subjects examined after rehabilitation and cognitive-behavioral support. Conclusion: Given that autism is multifactorial, the research and monitoring of children with autism should be an integrated approach.Therapeutic care and education of autistic children in Morocco has grown significantly mainly at the institutional and associative. NUTRITIONAL EVALUATION AND STUDY OF ITS IMPACT ON ACADEMIC PERFORMANCE OF RURAL SCHOOL CHILDREN IN THE REGION OF SIDI TAYBI, PROVINCE OF KENITRA (MOROCCO) KAOUTAR ATEILAH, YOUSSEF ABOUSSALEH AND AHMED AHAMI Ibn Tofail University, Kénitra, Morocco Email: [email protected] Objective: The objective of this study was to evaluate the different forms of Malnutrition and highlight the relationship between nutritional status and school performance of children in college the rural commune of Sidi Taybi Province of Kenitra.This study is a descriptive crosssectional survey that was conducted using a structured questionnaire and measurements of weight and height. Materials and methods: A total of 254 college kids is observed, nutritional status is assessed by weight and height indices and the indicators weight for age and height for age. School performance of children is assessed through the overall average annual ranking of the student. Results: The results show that 15.35% of students suffert deficit in stature against underweight was observed in 9.84% of the students Both forms of malnutrition occur among girls more than boys and increase with age (p [0.05). Statistical analysis (student test) shows that the height for age is significantly related to student achievement p [0.05. By cons no significant differences were noted between the weight for age and academic performance. Conclusion: It seems necessary to emphasize that the conclusions are limited by the instrument used, the number of questionnaires returned and the geography of the survey which covers a single common areas. Therefore, it would be interesting to improve the measuring instrument, to expand the geography of the survey and include students from urban areas in a comparative perspective, and to reproduce the survey. To get more complete results and more useful in the interpretation and that of the implementation of a more effective access, retention and student success in school areas in Morocco. ENQUETE SUR LA CONSOMMATION DES BOISSONS ENERGISANTES ET SA CONSEQUENCE SUR LA SANTE D’UNE POPULATION CASABLANCAISE L. TAZROUT, H. BOUDAIR, S. EL AMRANI, I. M’TOUGUY, A. BELHOUARI, EL H. TAHRI, R. Faculté des Sciences Ben M'Sik Casablanca, Maroc Email : [email protected] Objectif : Une boisson énergisante est une boisson destinée à donner un regain d'énergie à son consommateur. Elle comporte généralement des composés organiques excitants comme la caféine, les vitamines de la série B, la taurine, la maltodextrine, l'inositol, la carnitine, la créatine ou le glucuronolactone, ainsi que beaucoup de glucides. Matériels et méthodes: Dans ce travail, nous avons étudié les risques liés à la consommation des boissons énergisantes et la prévalence de l’obésité chez une population casablancaise de 500 personnes, âgés de 17 à 46 ans, dont 46% sont de sexe masculin et 54% de sexe féminin. La prévalence de l’obésité a été réalisée par des mesures anthropométriques, notamment par la détermination de l’indice de la masse corporelle (IMC). Résultats : Notre étude montre que 39% des enquêtés consomment les boissons énergisantes, dont 29 % sont des garçons et 10 % sont des filles. 41% des consommateurs pensent que ces boissons les stimulent, 17% les tonifient, 11% trouvent un plaisir en les consommant. 2% des consommateurs présentent une obésité sévère, 16,5% un surpoids, 5,5% une obésité modéré et 7,6% des consommateurs déclarent associer ces boissons avec la drogue, 3,3% avec le tabac, 2,2% avec l’alcool, 43,5% avec des médicaments pendant les périodes des examens universitaires. Les conséquences de l’intoxication par ces boissons peuvent être graves, entrainant des problèmes de santé tels que les tachycardies (2,2%), agitation ou confusion (5,5%), céphalées (3,3%), douleurs abdominales et vomissements (10,9%), hypertension (9,8%). Ces effets peuvent être très graves et nécessiter une hospitalisation (2,2%). Conclusion : On peut conclure de cette enquête que l’obésité pourrait être en rapport avec la richesse en sucre de ces boissons. Les risques liés à leur consommation peuvent être en rapport avec la toxicité de certains de leurs composants, ou aux conditions dans lesquelles ces boissons sont consommées. Le sodium contenu dans le sel joue un rôle important pour notre organisme. Il aide notamment à bien répartir l’eau dans les cellules et à réguler la pression et le volume sanguin. Il est également essentiel au bon fonctionnement des muscles et du coeur et au cheminement de l’influx nerveux. Matériels et méthodes: Dans ce travail, nous avons étudié le type de sel consommé, son ajout, la sensibilité au sel en fonction du sexe et des tranches d’âge, les risques d’hypertension et d’obésité liés à sa consommation chez une population d’universitaires de Casablanca de 400 personnes, âgés de 17 à 26 ans, dont 44% sont de sexe masculin et 56% de sexe féminin. La prévalence de l’obésité a été réalisée par des mesures anthropométriques, notamment par la détermination de l’indice de la masse corporelle (IMC). Résultats : Notre étude a montré que 44,5% des filles et 38% des garçons consomment le sel iodé. La perception de la sensibilité au sel est différente selon le sexe (3% chez les garçons et 10,5% chez les filles) et surtout pour la tranche d’âge comprise entre 22 à 24 ans. Dans l’ensemble de la population étudiée, 81% mangent moyennement salé, 11% moins salé et 8% trop salé. La prévalence de l’hypertension, des problèmes cardio-vasculaires et de l’obésité augmente chez ceux qui consommant trop de sel, dont 2,5% présentent une obésité sévère, 2% ont un surpoids, 3% une obésité modérée. Conclusion : On peut confirmer avec ce travail que la sensibilité au sel varie en fonction des individus et qu’il existe une relation entre la consommation de sel, la pression artérielle, les problèmes cardio-vasculaires et l’obésité dans la population étudiée. L’abus de sel dans l’alimentation peut exercer des effets nuisibles sur la santé en accentuant notamment l’hypertension artérielle et ses conséquences cardiovasculaires. El Jadida, Morocco Email: [email protected] Objective: Various educational programs to fight cardiovascular risk factors are introduced in Morocco. We aim to examine trends in obesity prevalence, hypertension prevalence and weight perception among Moroccan Sahraoui women. Materials and methods: Data were collected from two regional Surveys conducted in 2001 and 2011 in South Morocco. The sample was randomly selected among adult healthy urban women aged 15 years and older, non pregnant. For the 2001 survey, the sample 249 was recruited from women who visited public health centres during an immunization campaign. In the 2011 survey, the sample (n=2001) was recruited from women who assisted at nutritional education campaign. The following data were collected: Body weight, height, waist and hip circumferences, arterial tension, food intake, physical activity, marital status, education level, desire to lose or gain weight and eating disorders information. Results: The prevalence of general obesity, abdominal obesity and overweight hypertension increased from 2001 to 2011. The overall prevalence of obesity increased from 49% to 51,7%, abdominal obesity increased from 76% to 90.5% and overweight increased from 30,1% to 31,8%. The similar trend was observed for hypertension that is more prevalent among obese and overweight women compared with normal weight women. Body image perception and physical inactivity were key factors in this elevated prevalence.During the past 10 years, there was a significant increase of percentage of women who want to lose body weight (4,9% to 33,7%) but the desire to gain weight remains very high even among normal weight women (69,7%). Obesity was negatively associated with time spent in walking and positively associated with time spent in some sedentary activities (tea consumption, afternoon sleeping, watching TV). Also eating disorders (snaking, overeating, nocturnal overeating syndrome, bulimia, compulsive overeating) seem to be an increased problem among Moroccan Sahraoui women. In fact 22,9% of studied women reported having an eating disorder. It's more common among overweight (21,9%) and obese (29,8%) compared to normal weight women (3%). Conclusion: High prevalence of obesity and hypertension trends are for a raise. The reported data suggest apparent needs for immediate attention in terms of prevention and health education among the studied population. Objective: The study was investigated the decreased effect of glucose level by used Guiera sengalenses, as treatment for 2type diabetic patients (insulin dependent). Material and Methods: A 60 patients (58% female and 42% male) with age average 48.2 years and 64.92mean of weight. The diabetic patients treated at first time characterized by similar the same ages, body weighed and glucose concentration. Results : The result showed that the education level about 40% of diabetic patients are primary and majority of the others ignorance belongs to four and five groups their glucose level is more than 300mg/dl. The patients divided in four groups each group tacked different dose such as 0.5 Oke (18.5g), 1 Oke (37g), 1.5 Oke (55.5g); and 2Oke (74g) respectively. The doses are boiled in 0.5 liter of water for ten minutes and clarified then drank by patients in all groups during five days continuously into consideration investigated the urine and blood after that the patient is tacked the boiling cup of G.senegalenses then after quarter a hours. Take (Some) also after2 a hours. The sample was tacked for each patient. A 29 patients treated with Dowanil for five days and investigated as G.senegalensis procedure the results showed that the mean of first day for all dose is greater than the mean of fine days for all treatment as (208.93- 320.29) respectively. Also the results showed that clearly when the dose of G.senegalenses is increased the blood glucose level is decreased too, till five days of treatment addition to table 3 showed the effect of level for 0.5Oke, 1.5Oke,and 2oke respectively of 219.25,243.053, 266.05; and 270.59 if compared with downil found that the dose 2Oke significantly (p≤0.05) similar to downil. Lastly the results showed that the 2Oke dose is similarly to downil if compared with five day. Conclusion: Also the results showed there is no side effect of G.senegalenses. THE ASSOCIATION OF FOOD CONSUMPTION PATTERN AND UNHEALTHY LIFE STYLE WITH DEPRESSION AND ANXIETY AMONG UNITED ARAB EMIRATES ADULTS H. MOSELHY, R. GHUBACH, O. EL-RUFAIE, T. ZOUBEIDI, P. BADRINATH, S. YOUSIF UAE University Email: [email protected] Objective: to evaluate the extent to which depression and anxiety were associated with smoking, physical inactivity, obesity, and food consumption pattern among United Arab Emirates adults. Materials and Methods: A total of 617 households were visited during the survey. A total of 1224 adults were assessed. A structured interview was conducted for participants. The questions on health risk behaviors covered smoking, physical activity, and food consumption pattern. Other health-risk factors including measurement of Body Mass Index (BMI) and blood pressure were also included in the survey. We used (HADS) 12 to measure the mental health of the participants. Results : Nearly 90% of the subjects consume fish at least once a week and similar results were obtained for red meat. One in twenty reported that they consume red meat every day. Daily vegetable consumption is least frequent among those aged 16-29 years (43.5%). Daily fruit consumption increased with increasing family income (p=0.000). Only 18% of subjects reported to be consuming low or no fat milk and frequency of consumption increased with increasing family income (0.000). The daily consumption of vegetables and fruits increased with increasing levels of physical activity. There was no significant correlation between type or pattern of food consumption and anxiety or depression.There was a negative association between depression, and physical activity. Adults who had depression were more likely to lead sedentary life than having highly active or relatively active life. Additionally, adults who had anxiety disorder were significantly more likely to be currently smoker or ex-smoker than being never smoked. The odds of anxiety among the past and current smokers are double the odds of those who never smoked. Conclusion: There are strong influence of psychiatric disorders mainly depression and anxiety as risk factors on the level of lifestyle in adults. Email: [email protected] Abstract: Gum Arabic (GA) is defined as the dried gummy exudate from the stems and branches of Acacia Senegal; it is very high molecular weight acidic heteropolysaccharides, arabinogalactan proteinn. Its unique properties endow it with a wide range of uses in food, beverage, pharmaceutical and industrial applications. GA used back to 5000 years by the ancient Egyptians, they used (GA) as a binder, cosmetics, inks, agent in the mummifications process. GA as a prebiotics, recently Calame et al concluded that GA establishes as prebiotic efficacy, at least good than inulin, a 10 g of GA significantly higher numbers of Bifidobacteria, Lactobacilli and Bacteroides. In renal disease GA increased faecal nitrogen excretion, decrease urea recycling. As treatment of diabetes, GA evaluated in supplemented with 25g in patient’s nephropathy a significant beneficial effect with diabetes. As health supplements, samples of GA gum were collected as natural exudate as nodules form, the gum samples were subjected for nutritive value, physicochemical and functional tests. The mean specific rotation of GA was (-14° 19.6°).Intrinsic viscosities were 9.9 and 10.2 ml/g. The mean value of the emulsifying stability of GA samples was (0.99 -1.60). The water holding capacities of all tested samples were in the range 65.0 - 67%. The nutritional value of GA samples gave approximately the same average moisture (10.5%) and ash (3.4%) contents. Nitrogen content was 0.30 to 0.42% (1.88 to 2.63 % protein). The mean concentration of reducing sugars was 0.23 and 0.16% for GA. Uronic acid contents of GA samples ranged from 12.02% to 17.30 %. The mean pH values of GA were (4.96-5.23). The mean value of the equivalent weight for GA (1397.90. On the other hand, GA samples gave average molecular weight of 3.29×103. With respect to the mineral contents, GA samples from the sources showed the same range of 35 to 70 μg/g sodium. Whereas GA samples recorded higher potassium in the range of 0.075 to 0.135 μg/g. Calcium content was 0.330 0.666 μg/g without significant differences between GA samples. The sugar components of the GA were determined in acid hydrolysated by chromatography. L+arabinose, L+rhaminose and D-galacturonic acid were detectable. These observations were confirmed by high performance liquid chromatography (HPLC) and showed that GA contained 1.5 and 0.49 mg/100g L+Rhaminose and L+Arabinose, respectively. The spectral measurements of ultra violet (UV) and infra red (IR) were scanned for gum samples. Lastly, the research contribution is enriching the medical and scientific literature, and ultimately the potential of development of new methods for prevention and treatment of gastrointenestinal diseases with naturally available and accessible ingredient to the poor communities in Africa which lack access to the expensive pharmaceutical drugs. It is well documented that gastrointestinal diseases associated with diarrhea and dehydration are the main killers of infants and children in Africa and other parts of the developing world. In the advent of proved value of the GA by this study, the vast developmental impact will reach far beyond Sudan and the region to the entire humanity. Keywords: Gum Arabic, Chemical composition, Gastrointestinal Diseases. VULNERABILITY OF THE PERIOD AFTER WEANING IN UNDERNOURISHED RATS: A BEHAVIORAL AND NEUROCHEMICAL STUDY M. ALAMY 1, K. E-mail : [email protected] Objective: In this work, we studied the effects of undernutrition on learning, memory and sensory reactivity. Moreover, we assessed the effects of this undernutrition on dopaminergic system by dosage of dopamine and its metabolites in striatum and by recording the effects of intraperitoneal injection of dopamine agonist and antagonist. Materials and Methods : Male rats from a same litter were paired; the control had free access to food, while undernourished one was restricted and maintained at 80% body weight of its control during a period of 8 weeks from weaning. After 3 weeks of undernutrition, rats were tested in an “open field” to evaluate levels of locomotor and exploratory activities. These activities were recorded after saline or amphetamine injection. After 6 weeks of diet some rats were selected for HPLC and their brain essayed for dopamine and metabolites. At 8 weeks, the remaining animals were daily testing in a radial maze to assess the effect of undernutrition on learning. 72 h after acquisition, retention was evaluated following haloperidol intraperitoneal injection. At the 14th week of diet, rats were tested in a “tail-flick” test to assess temperature reactivity. Results : Undernutrition induced an increase in locomotor and exploratory activities; amphetamine injection increased these activities in control but not in undernourished rats. However, undernutrition had no effect on learning and retention in an 8-arm radial maze. Haloperidol injection led to a marked deterioration in control performance during retention test, a phenomenon not observed in undernourished rats. Finally, our results also showed hyperreactivity in the test of tail flick and HPLC analysis an increase in dopamine turn over. Conclusion:Undernutrition after weaning induced hyperactivity and hyperreactivity, which may be related to an alteration in dopaminergic system. A decrease of responsiveness to drugs acting on this system was demonstrated. However, in our study, undernutrition had no effect on learning and retention. Ag BENDECH2 1 Institut Supérieur d’Enseignement Technologique /Département des Sciences et Technologie Alimentaires 2 Bureau national de l’Unicef (en collaboration avec ONS et le Ministère de la Santé) E-mail : [email protected] Abstract : En période de soudure, la prévalence de la malnutrition aigue globale était de 12.5% au niveau national (MS/UNICEF, juillet 2010). La prévalence des formes sévères selon la même enquête de juillet 2010 était de 0.9 %. Une deuxième enquête de la période de post récolte donne une prévalence dans le mois de décembre de 6,8% de malnutrition aiguë globale et 0,6% des formes sévères. Les malnutritions sont directement ou indirectement liées à au moins 50% de décès d’enfants de moins de cinq ans. Le travail de collecte des données s’est déroulé du 25 Décembre 2010 au 7 Janvier 2011. Au total 5938 ménages ont été enquêtés répartis dans 297 DR (district de recensement), et 5851 enfants de 6 à 59 mois ont participé à l’enquête. La prévalence de la malnutrition aiguë globale (MAG) obtenue par la présente enquête est de 6.8%. Cette prévalence montre une diminution très importante du niveau de la malnutrition aiguë globale au niveau national par rapport à l’enquête nutritionnelle de Juillet 2010. Cette prévalence confirme aussi les tendances observées lors des dernières enquêtes nutritionnelles réalisées en période post récolte ou la prévalence de MAG se situait également entre 6 et 8% au niveau national. La malnutrition aiguë globale est répartie entre la forme modérée (6,2%) et la forme sévère (06%). Il existe des disparités entre les différentes zones (régions) du pays. Les régions du Guidimakha et du Hodh Chargui avec respectivement des prévalences de malnutrition aigue globale de 13,2% et 10,6% sont les régions les plus touchées. Les prévalences dans ces deux régions dépassent le seuil d’alerte fixé par l’OMS et les classent comme des zones à risque. La région de Nouadhibou avec une prévalence de malnutrition aiguë globale de 2,0% présente le taux le plus faible. Les résultats de l’enquête indiquent que prés d’un enfant sur cinq (21,4%) souffre d’insuffisance pondérale modérée, et que (3,2%) des enfants sont affectés par la forme sévère. Du point de vue zone géographique, les résultats de l’enquête indiquent que les wilayas du Guidimakha et du Hodh Charqui sont les plus touchées par l’insuffisance pondérale avec respectivement des prévalences de 36,2% et 31,8%. Ces résultats ont également révélé que la prévalence de la malnutrition chronique se situe à 17% avec des disparités entre les zones définies par l’enquête. Les résultats de cette enquête confirment le maintien de la prévalence de la malnutrition chronique globale entre 17 et 19%. E-mail : [email protected] 2 : Service de Pédiatrie, Centre Hospitalo - Universitaire De Sidi- Bel –Abbés 2200 Algérie Objectif : L’objectif de cette étude consiste à évaluer le statut nutritionnel auprès de 100 adolescents diabétiques (diabète de type 1) âgés de 10 à 20 ans. De même des d'adolescents supposés sains de même âge ont fait l’objet de ce travail afin de nous permettre d'effectuer une étude comparative. Matériels et Méthodes : Pour cela, la méthode d’enquête du rappel des 24 heures a été effectuée. Elle s’est déroulée sur une durée de 6 mois de l’année scolaire 2008. Le recueil des données a été réalisé au centre médical de diabétologie (petit vichy) au centre ville de Sidi Bel Abbès. Résultats : Les résultats obtenus de l’enquête montrent qu'un niveau socioéconomique moyen caractérise l’ensemble des adolescents. Les mesures anthropométriques effectuées chez toute la population révèlent des valeurs moyennes de poids, de taille et d’IMC comparables par rapport aux valeurs idéales. Un apport calorique quotidien élevé chez les diabétiques par rapport aux non diabétiques est noté et par rapport aux recommandations en particulier chez les garçons diabétiques âgés de 16 à 20 ans (3800 ± 1000 Kcal/jour). Conclusion : L’apport quotidien en lipides est acceptable chez les diabétiques, alors que la répartition des acides gras est déséquilibrée avec un taux élevé d’acides gras saturés. Contre un taux bas d’acides gras mono insaturés par rapport aux recommandations est observé chez toute la population étudiée. Par ailleurs, l’apport quotidien en calcium et en zinc est inférieur aux recommandations chez les non diabétiques. Mots clés : statut nutritionnel, adolescent, diabète type 1, recommandations. Iraq Abstract : The goal of this study to explain and evaluate rice bran nutrition value which was by product produced during rice milling process its ratio was7% of rough rice,it was include of outré layer of rice grain and germ in order to have benefit by using it in food supplementation liked bread, it was added to bread formula as replacement of wheat flour its macronutrients content of Nutrition elements was determent which was protein, carbohydrate and fat also fibres and ash content ,amino acids of protein was separated and estimated by high performance liquid chromatography GLC .Rice bran content of microelements was determined ,rice bran added to bread formula at 5,10,15% as replacement of wheat flour in order to produce high nutrition bread type, locally rice bran was using ,rice bran oil was extraction by diethyl ether solvent .Oil content was 18% and it have deep green colure, rice bran oil have high content of unsaturated fatty acids .Oleic, Linoleic30.90,44.50% ,it s content of palmatic ,stearic and linolenic acids were 2.14, 17.70, 2.60% respectively. The result showed that rice bran have high content of protein and fiber13,9%respectively,amino acids analysis by HPLC showed that rice bran protein have all essential amino acids ,ash content was 10.3% and it s content of zinc and phosphor was high ,bread contain rice bran have good volume and soft texture than wheat bread especially 5% rice bran bread
