COMTE CHEESE FONDUE FONDUE COMTOISE INGREDIENTS FOR 6 GUESTS INGRÉDIENTS POUR 6 PERSONNES 1 pound Comte cheese 1 pound Emmenthal cheese (Slice the cheese very thin - less than 1/8 inch; can be done very nicely with a vegetable peeler) 3 cups (Jura) dry white wine 2 tablespoons kirsch liquor (optional) 1 or 2 garlic clove(s) 1 teaspoon salt (depending how salty the cheese is) 1/2 teaspoon pepper 1/4 teaspoon nutmeg one-day old crusty (but not too dry) bread/baguette cut into bite-size cubes PREPARATION *Place a tabletop alcohol burner or electric warmer in the middle of the dining table so it is functional as soon as the fondue is ready. *Rub the inside of a fondue pot with the garlic cloves and leave them in the pot or use a garlic press. *Place over heat with a tablespoon of butter just long enough to soften the garlic. *Add the wine. and bring the wine to just before bowling point. Remove the garlic cloves. *Add the cheese, with the pepper, nutmeg, salt if necessary, and the kirsch if you wish. *Lower the heat. *Stir with a wooden spoon until the cheese melts and the mixture is smooth. *Immediately place the fondue on the burner or warmer and adjust the heat so the fondue bubbles slowly. Taste and adjust the seasonning. *Guest can now dip pieces of bread with their fondue fork (longer than regular fork) to coat with the fondue. *Don’t drop your crouton… or you will treat your friends with a bottle of Jura white wine ! 1 livre de Comté 1 livre d’Emmenthal (Coupez le fromage en fine lamelles de 2mm au plus) 75 cl de vin blanc sec (du Jura, c’est meilleur !) 5 cl de kirsch si vous aimez 1 ou 2 gousse(s) d’ail sel si le fromage n’est pas trop salé poivre muscade du pain un peu rassis mais pas trop sec coupé en cubes PRÉPARATION Préparer le réchaud à fondue pour qu’il soit prêt dès que la fondue arrive sur la table. Frottez un poêlon à fondue avec l’ail ou pressez l’ail et faites le fondre avec une noix de beurre. Faites chauffer le vin sans le faire bouillir. Ajoutez le fromage et l’assaisonnement, et baissez le feu. Mélangez avec une spatule en bois en formant des huits pour que le fromage n’attache pas. Ajoutez le kirsch si le cœur vous en dit. Quand la fondue fait le ruban, portez le poêlon de fondue à la table et posez-le sur le réchaud. Goutez et ajustez l’assaisonnement. Vos convives peuvent maintenant tremper leur croûtons dans la fondue en faisant attention de ne pas en laisser tomber un, si non il ou elle offrira une bouteille de Jura blanc à la compagnie…
