outstanding depth and seriousness of this wine knocked me sideways on the very first sip. The tannins are as fine as I have

Disgorgement Dates...
The same Champagnes, disgorged at different times are, in effect, different wines.
The Champagne Bruno Paillard website has an interesting piece on disgorgement where they talk of “Life after dégorgement...” and
describe the five or six ‘lives’ the wine will pass through after a period of “convalescence” – “firstly fruit dominated, then by flowers
spices, toasted aromas, and finally candied fruit and roasted notes...It will take a minimum of four to five years after disgorging to
obtain the first spiced notes and even decades to attain full maturity.”

Egly-Ouriet - a tiny family owned house based in Ambonnay. Started in 1930 and now run by Michel Egly who owns six
hectares in Ambonnay and half a hectare in both Bouzy and Verzenay. Total production is less than 6,000 cases a year. The
vines are on average about 35 years old. Their Pinot Noir is considered so good in Champagne that Jacques Selosse buys it
for his Rose. The Grand Cru Rose [NV] is always bottled with a very low dosage [perhaps 2-3 grams per litre]. It has a bright
clear copper colour with a stream of exceptionally small bubbles that lasts forever. Quite frothy and unusually creamy and
mouth coating [rare in Rosé Champagne] it usually displays elegant toast, apple and cocoa notes. Not as ‘big’ as the other
Egly-Oriet wines, but very elegant and enjoyable.

Roederer own 180ha of land made up of small plots scattered all over Champagne, with the house itself based in Reims.
Cristal is the most sought after prestige cuvée in the world, having been originally created specifically for Russian Tsar
Alexander II in 1876; the Cristal Rosé is considered by many as the finest in the world.

Veuve Cliquot owns almost 300ha of land throughout Champagne. Clicquot wines are predominately Pinot Noir based and
generally produce fairly full-bodied, bready, rich and muscular wines. The opulent and powerful La Grand Dame, made only
in vintage quality years, is considered one of the world’s best prestige cuvées.

Diebolt-Vallois is a small family run house located in the Chardonnay producing village of Cramant that makes less than
6,000 cases of Champagne a year. The Fleur de Passion is the house’s prestige cuvée made from 65 year old vines in Les
Pimonts and Les Buzons. Each year there are only 250 cases made of this amazing wine and despite it not undergoing
malolactic fermentation, the wines are very expressive and rounded even when young.
1990 Salon Le Mesnil Blanc de Blancs Brut

Salon is a tiny house on the Côte de Blancs, produces what connoisseurs consider to be the quintessential Blanc de Blancs.
Salon produces Champagnes in minuscule amounts [20,000 bottles a year, if at all] from over 40-year-old vines in Le
Mesnil-sur-Oger [one of the greatest crus of the Côte de Blancs]. Salon makes no other wine, only this vintage Blanc de
Blancs and only in the greatest vintages. For this reason, it is the rarest of Champagnes, having released only 30 vintages
in the last 76 years. Salon is extremely delicate, subtly rich and with age [20-30 years or more] develops notable aromas
and flavours of coconut, walnut, coffee and vanilla. All champagne lovers should experience Salon at some stage. Exquisite.
Blanc de Blancs [Pinot Blanc]
2005 Roses de Jeanne La Borolée
Cédric Bouchard is the rising star of Grower Champagne producers. It is the smallest wine property of Champagne. Rose de
Jeanne philosophy is single-vineyard, single vintage and single-grape bottlings and the result is simply astonishing. At
Rose de Jeanne, the wines are released only when they are "ready". Cédric may keep a cuvée for 5 or 10 years in his cellar
until he decides when they are going to be shipped to the client.

2003 Cold at flowering lowering yields, below average temperatures during summer. Fruit quality worth the effort.

2004 Late flowering with a hot December resulted in good fruit set. Below average temperature and rain over
summer. Cool but dry led to late ripening. Hang time 3 days above average. Great flavour development.

2005 Lots of rain during budburst. Below average temperatures and average rainfall resulted in small bunches and
small berries. Our wettest February followed by above average temperatures in April meant a late and extended
period of ripening, 17 days above average hang time resulted in intense flavour development.

2006 Excellent flowering conditions, warmer than average and above average rainfall led to average fruit set. Cool
February followed by a warmer March resulted in great vintage conditions and great fruit quality.

2007 Cool dry budburst with frosts down the hill led to a poor fruit set ending with below average yields. Above
average temperatures in the last quarter of vintage lead to ripe fruit and a hang time 18 days shorter than average.

2008 Temperatures just above average; rainfall below average. Excellent flowering period with high percentage
fruit set. Cool February, warm March. Hang time 15 days shorter than average.

2009 Excellent budburst, cool & wet during flowering led to poor fruit set, resulting in low yields. Above average
temperatures in January & February as well as driest February on record. Severe hot days in February made quality
variable dependant on vineyard maintenance/aspect.

2010 Warmest November ever with above average rainfall. Above average temperature from December through to
March. Above average rainfall in the latter half of the season and finished with perfect harvest conditions, allowing

2003 Cold at flowering lowering yields, below average temperatures during summer. Fruit quality worth the
effort. Regionally some very good wines produced

2004 Late flowering with a hot December resulted in good fruit set. Below average temperature and rain over
summer. Cool but dry led to late ripening. Hang time 3 days above average. Great flavour development.

2005 Lots of rain during budburst. Below average temperatures and average rainfall resulted in small bunches
and small berries. Our wettest February followed by above average temperatures in April meant a late and
extended period of ripening, 17 days above average hang time resulted in intense flavour development.

2006 Excellent flowering conditions, warmer than average and above average rainfall led to average fruit set.
Cool February followed by a warmer March resulted in great vintage conditions and great fruit quality.

2007 Cool dry budburst with frosts down the hill led to a poor fruit set ending with below average yields. Above
average temperatures in the last quarter of vintage lead to ripe fruit and a hang time 18 days shorter than average.

2008 Temperatures just above average; rainfall below average. Excellent flowering period with high percentage
fruit set. Cool February, warm March. Hang time 15 days shorter than average.

2009 Excellent budburst, cool & wet during flowering led to poor fruit set, resulting in low yields. Above average
temperatures in January & February as well as driest February on record. Severe hot days in February made quality
variable dependant on vineyard maintenance/aspect.

2010 Warmest November ever with above average rainfall. Above average temperature from December through to
March. Above average rainfall in the latter half of the season and finished with perfect harvest conditions, allowing
fruit to be picked at optimal flavours.
