Always keep in mind, above all, that food and wine should never “upset” each other, except of course in some special cases like sweet-sour combinations. Needless to say that the two partners must "play" in the same category: for a flavour-rich dish you need wines of strong personality. With simple dishes, simple, fresh and young wines are generally the ideal choice. A rustic cuisine requires a rather crude wine, while a more refined cuisine calls for more sophisticated wines. In the case of spicy dishes, where the whole personality of the wine may fade away, it will be better to play with the "fresh" and lively aspect of young dry wines or the voluptuous and excessive character of Vins Doux Naturels (naturally sweet wines) which practically makes them an additional spice on your table. Finally, we too often forget that harmony is also about the colour of dishes and wines, since it determines, more than we believe, the general impression of the meal.
