Herbe Sainte or Herbo Santo (Langue d'Oc) : means whole of aromatic plants
with médicinal virtue.
Localization : located near one of the high places of History in Languedoc : the
Cathar City of MINERVE.
The Domaine is bordered by the river CESSE which flows into t h e Canal du Midi
(located at 500 meters of the Domaine), classified World Héritage.
A METHOD O F CULTIVATION
VITEALYS : the winegrowers who use VITEALYS are engaged t o produce grapes
according t o the rules of sustainable culture. Those are defined in spécifications
whose application is checked each year by Veritas Bureau, independent
organism.
Methods and cultivating practices limiting parasitic diseases - Maintaining a high
biological variety of t h e viticultural ecosystem and its environs - Reducing the

T e r r o i r : rolling shingles on plateau near t h e Canal du Midi.

Harvest : grape variety per grape variety, f u l l maturity.
Red v i n i f i c a t i o n : systematic distalking and fermentation in vats (27 C).
W h i t e v i n i f i c a t i o n : nocturnal harvests, distalking, pressing, fermentation in
vats (15-1 8 C) and ageing on fine lees.
RANGE : Minervois (syrah, carignan, grenache): T r a d i t i o n , Prestige, Ambroisie
(ageing in oak casks f o r 6 t o 12 months depending on the Vintage). The grapes are
vinified separately, blended according t o t h e defined identity and harmony and
aged in vats for one year.

Colombard ; Rosé (Syrah or Cinsault depending on the Vintage) ; Syrah ; Merlot ;
