Participants will be required to visit the University of Guelph for:
Healthy, non-smoking men and women, not taking medications between the ages of 18 – 55 years are needed to participate in a human nutrition study at the University of Guelph. The purpose of this study is to determine the bioavailability of anthocyanin/phenolic acids and antioxidant capacity after consuming purple wheat products. Participants will be required to visit the University of Guelph for: • One hour screening visit to determine eligibility • 30 minute orientation session • 2 separate study visit sessions: 8 hours each, where you will be asked to consume a purple wheat product and provide blood and urine samples over a number of time points. A 10-14 day washout period*** before each session is also required. • 2 separate 15 minute urine collection drop-offs, 24 hours after each study visit. *** Participants will be asked to avoid consumption of high anthocyanin/phenol containing foods (e.g. blueberries, red wine, chocolate) during the entire study period. This study has been reviewed and has received clearance through the University of Guelph Human Research Ethics Board (REB#15JN008) and will be conducted at the Human Nutraceutical Research Unit in the Department of Human Health and Nutritional Sciences.
