Chocolate Cupcakes: Preheat oven to 375 degrees F (190 degrees C). Lightly butter, or line 16 muffin cups with paper liners. In a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature. In another bowl, whisk together the flour, baking powder, and salt. Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth. Fill each muffin cup about two-thirds full with batter and bake for about 16-20 minutes or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. (Do not over bake or cupcakes will be dry.) Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing. You can either spread the frosting on the cupcakes with a small spatula or if piping, use a large Wilton 1M open star tip to make lovely swirls. These cupcakes are best the day they are made, but can be covered and stored for a few days. Chocolate Frosting: Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature. In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until it is light and fluffy (about 2 minutes). Beat in the vanilla extract. Add the chocolate and beat on low speed until incorporated. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes). Makes about 16 cupcakes ! Scan for Demonstration Video ! Chocolate Cupcakes: 1/2 cup (50 grams) Dutch-processed cocoa powder 1 cup (240 ml) boiling hot water 1 1/3 cups (175 grams) all purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup (113 grams) unsalted butter, room temperature 1 cup (200 grams) granulated white sugar 2 large eggs 2 teaspoons pure vanilla extract Chocolate Fudge Frosting: 4 ounces (120 grams) unsweetened chocolate, coarsely chopped 2/3 cup (150 grams) unsalted butter, room temperature 50 gr. de poudre de cacao 240 ml d’eau bouillante 175 gr. de farine 2 cuillers à café(cac) de levure ¼ de cac de sel 113 gram de beurre à température ambiante 200 gr de sucre blanc 2 gros œufs 2 cac d’extrait de vanille pure Glaçage au chocolat 120 gr de chocolat amer découpé grossièrement 150 gr. de beurre à température ambiante 160 gr de sucre glace tamisé 1,5 cac d’extrait de vanille pure ! Chocolate Cupcakes: Préchauffer le four à 190°C. Embeurré les moules à muffins Dans un petit bol, mélanger l’eau bouillante et le cacao jusqu’à obtenir un mélange homogène. Laisser refroidir à temperature ambiante. Dans un autre bol, mélanger la farine, la levure et le sel. Dans un autre bol, battre le beurre et le sucre jusqu’à que cela devienne blanc et mousseux. Ajouter les œufs, un par un, battre jusqu’à ce que ce soit homogène. Bien nettoyer les bords au fur et à mesure si besoin est. Rajouter l’extrait de vanille. Rajouter le melange avec la farine et battre jusqu’à ce qu’elle soit incorporée complètement. Enfin rajouter le cacao et mélanger. Remplir au 2/3 chaque moule et faites cuire 16 à 20 minutes ou jusqu’à ce que ce soit levé, qu’un couteau fin planté ressorte propre et que le gateau soit élastique. Sortez du four et placez sur une grille. Une fois que les cup cakes sont froids, procéder au glacage avec une douille ou une spatule. Glaçage au chocolat : faire fondre le chocolat au bain marie. Retirer du feu et laisser refroidir à température ambiante. Dans le bol du mixer battre le beurre jusqu’à ce qu’il soit lisse et crémeux (1 minute environ). Ajouter le sucre et battre jusqu’à ce que le mélange soit mousseux et léger (2min) Y rajouter l’extrait de vanille. Rajouter le chocolat et battre à faible vitesse jusqu’à incorporation totale. Augmenter le vitesse jusqu’à ce que le glaçage soit lisse et luisant (2 à 3 minutes). ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! ! Beat the wet and dry ingredients together, at medium speed, until the batter is smooth and satiny, about 30 - 60 seconds. Scrape down the sides of the bowl as needed. Evenly fill the muffin cups with the batter and bake for about 20 - 25 minutes or until lightly browned and a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool. Once the cupcakes have cooled completely, cut about an 1/2 inch (1.5 cm) hole into the center of each cupcake, using a melon baller or a small spoon. Then spoon (or pipe) a heaping teaspoon of lemon curd into each indentation. Lemon Curd: In a stainless steel bowl, placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until blended. ! Vanilla Cupcakes: 1 1/2 cups (195 grams) all purpose flour 1 cup (200 grams) granulated white sugar 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup (113 grams) unsalted butter, at room temperature, cut into small pieces 2 large eggs, room temperature 1 1/2 teaspoons pure vanilla extract 1/2 cup (120 ml) sour cream or plain yogurt, room temperature Filling: 1/2 cup (120 ml) lemon curd (store bought or homemade) (recipe follows) Lemon Curd: ! 3 large eggs Lemon Curd Video Cook, stirring constantly with a heatproof rubber spatula or wooden spoon (to prevent it from curdling), until the mixture becomes thick (like sour cream or a hollandaise sauce) (160 degrees F or 71 degrees C). This will take approximately 10 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps. Cut the butter into small pieces and whisk into the mixture until the butter has melted. Add the lemon zest and let cool. The lemon curd will continue to thicken as it cools. Cover immediately (so a skin doesn't form) and refrigerate until cold (preferably overnight). The lemon curd can be made several days (up to a week) in advance. Lemon Flavored Whipped Cream: Place your mixing bowl and wire whisk in the freezer for about 15-30 minutes. Then place the cold heavy cream and sugar in the cold bowl and beat until soft peaks form. Then add the cold lemon curd and beat just until stiff peaks form. Spread frosting on each cupcake with a knife or spatula, 1/3 cup (80 ml) freshly squeezed lemon juice (2-3 lemons) 1 tablespoon finely shredded lemon zest (outer skin) 3/4 cup (150 grams) granulated white sugar 4 tablespoons (55 grams) room temperature unsalted butter, cut into small pieces Lemon Flavored Whipped Cream: 1 cup (240 ml) cold heavy whipping cream (35-40% butterfat content) 1 tablespoon (15 grams) granulated white sugar 2-3 tablespoons cold lemon curd ! ! Cupcakes à la vanille 195 gr. de farine 200 gr de sucre blanc 1,5 cac de levure ¼ cac de sel 113 gr de beurre à température ambiante coupé un petits morceaux 2 gros œufs à temperature ambiante 1,5 cac d’extrait de vanille pure 120 ml de crème fraiche à température ambiante Glacage: 120 gr de crème de citron (faite maison ou achetée - recette ci dessous Crème de citron: 3 gros oeufs 80 ml de jus de citron pressé (2 à 3 citrons) 1 cac de zeste de citron 150 gr de beurre en petits morceaux et à température ambiante Chantilly au citron: 240ml de crème fraiche entière froide 15 gr de sucre blanc 2 à 3 cac de creme de citron ! 12 Cupcakes à la vanille: Préchauffer le four à 180 C° et enduire de beurre 12 moules à muffin en papier Dans le bol de votre mixer électrique battre la farine, le sucre, la levure et le sel. Ajouter le beurre, les œufs, l’extrait de vanille et la crème fraiche. Battre tous les ingrédients ensemble a vitesse moyenne, jusqu’à ce la pate soit bien lisse et satinée, 3 à 60 secondes. Nettoyer les cotés du bol si besoin est. Répartir de manière égale la pate dans les moules et cuire pendant 20 à 25 minutes ou jusqu’à ce que les gâteaux soient légèrement brunis et que la pate de colle plus à un couteau piqué dedans. Les enlever du four et les mettre sur une grille pour qu’ils refroidissent. Une fois que les gateaux ont complètement refroidi, découper un trou de 1,5 cm au centre de chacun, en utilisant un cuillère à melon (pour faire des boules) ou une petite cuiller. Puis y mettre une cuiller à café de crème de citron. Crème de citron (là ca devient technique..): Dans un bol en acier inoxydable, place sur une casserole d’eau frémissante, fouetter les oeufs, le sucre et le jus de citron jusqu’a incorporation complète. Cuire, en mélangeant constamment avec une spatule en bois (pour éviter les grumeaux) jusqu’à ce que le mélange devienne épais (comme une sauce hollandaise) (71 C° !!! Au degrés près) Cela devrait prendre 10 minute environ. Retirer du feu et le passer immédiatement au tamis (passoire fine) pour retirer tout grumeau. Couper le beurre en petits morceaux et le rajouter au mélange avec un fouet jusqu’à ce que le beurre ait fondu. Ajouter les zestes de citron et laisser refroidir. La crème de citron devrait continuer de s’épaissir en refroidissant. Couvrir immédiatement (pour qu’il ne se forme pas de “peau” et mettre au frigo 5si possible au moins une nuit). La crème peut être faites plusieurs hours en avance (max une semaine) La crème Chantilly au citron: Mettre le bol et le fouet au freezer pour 15 à 30 minutes. Puis y battre la crème et le sucre mais pas jusqu’à ce que la crème soit tout a fait faite. Rajouter la crème de citron et finir de battre le tout. Mettre ce glaçage sur les gateau (poche à douille ou à la spatule). Ces cupcakes sont meilleurs manger le jour meme mail ils peuvent être couvert et conserves au frigo quelques jours. Les ramener à temperature ambiante avant de servir.
