We wish to create a social and informal atmosphere around the table
and allow the guests to take part in the meal by sharing, cutting and
pouring.
The menu will change frequently with the seasons.
If you would like, you can choose to order several dishes and the
food is meant to share.
The dishes for lunch are available as whole or half portions and we
recommend 2 half dishes to enjoy a few different tastes.

Wines of Sentralen
We believe that a good wine is a wine that reflects where it is from
and how the winegrower works.
All wines on this list are made from grapes that are organically or
biodynamically grown and some of the wines are also natural wines,
i.e. without additives. You will not find wines that are characterized by
oak at Sentralen. If the wine has been stored in oak barrels, it is the
old large oak casks which do not detract from the wine’s taste.
Organic certification means that chemical pesticides are not used in
the vineyard, but many other pesticides are still allowed. There is also
no guarantee that chemical additives have not been used in the wine
making process.
Biodynamic certification is more strict. There are some rules for the
winemaking process, so there is a bigger chance that you get a naturally produced wine, however there is still no guarantee. The wines
can still be very heavily filtered and can still contain unnecessarily
large amounts of sulfites.
Nature wine requires no certification, it is only a concept and many
producers claim they make natural wine while in fact they do not.
Some nature wine producers are bio-certified, while others boycotted
certification because they do not want to be put in the same box with
the producers who use additives. We, at Sentralen, are sticking to the
strictest definition of nature wine:
Zero additives, nor sulfur. A nature wine should only contain grapes.
All our wines are produced without shortcuts. The wine is always
spontaneously fermented, contains no additives, is unoaked and unfiltered or only lightly filtered. If sulfites are added (for preservation),
it’s only in minimal amounts.
When all this is said, the most important thing is that you like the
taste of the wine! We tend to say that the best bottle on the table is
the one which is empty first! :-)
