...the town of Les Sables d’Olonne, sub prefecture of the Vendée department, is located
in the Pays de la Loire region.
Easily accessible by both motorway and TGV
train, its 50,000 permanent inhabitants and
equal number of secondary home owners,
make it the second largest urban area in the
Vendée, offering a wide range and high quality
of services.
The Sables d’Olonne district regroups six
towns: Le Château d’Olonne (pop. 13802),
Les Sables d’Olonne (pop. 14562), L’Ile
d’Olonne (pop. 2954), Olonne sur Mer (pop.
14783), Sainte-Foy (pop.1856), and Vairé
(pop. 1560).
In order to develop its maritime vocation
and host the Vendée Globe, the town of Les
Sables d’Olonne invested in an institution
specifically dedicated to water sports
(sailing, kayaking, wave-skiing, surfing …): the
Ocean Sports Institute.
With its 90,000 beds available to tourists,
Les Sables d’Olonne offers all the attractions
of a seaside resort: rated holiday resort,
conference centre, thalassotherapy spa, golf
course, 2 casinos, museum, zoo, racecourse,
4 equestrian centres, etc…
In addition to the south-facing, sheltered,
central beach of Les Sables d’Olonne, 7 other
beaches can be explored by sun worshippers,
nature lovers or surfers.

their natural heritage by protecting green
spaces (Olonne forest and marshland,

A long-standing
history
Sables, devout Catholics, came into conflict
with ‘Les Chaumois’ who had converted to
Protestantism.
by the aristocracy and artistic elite and
opened its first casino, the ‘Casino des
bains de Mer’ (now known as the ‘Casino
des Atlantes’). It was the Belle Epoque for
Les Sables. The arrival of the railway in 1866
injected new dynamism into tourism with
‘the leisure trains’, which connected Paris to
the ‘finest beach in Europe’. The new vogue
for Sea Bathing was born. A second casino
appeared in 1898, the ‘Casino des Pins’, and
in 1900 there were already more than 35
hotels close to the Embankment.
Traditions,
past and
present
The Pays d’Olonne has been occupied by
man since the dawn of time, as shown by the
many remains discovered in the region.
The sea once covered a large part of the
land. ‘Ol-ona’, meaning ‘Hill above the water’,
is thought to be of Celtic origin and to have
given its name to four of the six municipalities
forming the region. At the time, it was Olonne
that ruled over the area.
Under the Roman Empire, Olonne became a
major crossroads thanks to its tiny harbour ‘Le
Havre d’Olonne’ nestled in a bay sheltered by
the long island of Vertime (now Côte Sauvage
and forest of Olonne). The creation of the
salt marshes and vineyards of Ile d’Olonne
are thought to date from this time and have
brought wealth to the region for 2000 years.
Between the 5th and 9th century, the land was
ravaged by a succession of invasions and the
Normans were in occupation until the 10th
century.
Then, through the marriage of Eleanor of
Aquitaine to Henry II Plantagenet, the region
passed under English rule for more than fifty
years. For their son, Richard the Lionheart,
Talmont became his preferred residence and
the land of Orbestier his favourite hunting
ground.

In the Middle Ages, the land witnessed
an incredible economic boom under the
impetus of the lords of Olonne. This gave rise
to a wonderful religious heritage. (See p. 10)
The flourishing
Sables d’Olonne
In the late Middle Ages, sea trade was growing
& the flourishing Pays d’Olonne was exporting
its salt and wine to northern Europe, while the
surrounding villages (Château d’Olonne, Vairé, Sainte Foy) devoted themselves to a more
agricultural activity on fiefdom soil.
The 13th century saw their little sister town,
Les Sables d’Olonne, rise from the shadows,
or rather the sands. In fact, in order to replace
the harbour of Talmont, which was silting up,
Prince Savary de Mauléon decided to develop Le Havre d’Olonne. He granted lands and
rights to the district of La Chaume in 1218 to
set up an urban settlement. In 1472, Louis
XI separated Les Sables d’Olonne from the
town of Olonne sur Mer to turn it into the
main harbour for the region. The parish of Les
Sables d’Olonne was born in the 17th century,
and a church was built. The religious wars curbed the town’s expansion. The people of Les
The Golden Age and the
beginnings of Tourism
The 17th century marked the apogee of Les
Sables d’Olonne, now the leading cod-fishing
harbour in the kingdom. More than 100 boats
were fitted out for cod fishing on the banks of
Terre Neuve (Nantes 89, La Rochelle 32).
During the Revolution, the region remained
Republican (there were no less than six
prisons in Les Sables d’Olonne, one guillotine
and a revolutionary court). Under the
Empire, the town coped with the Continental
blockade instituted by Napoleon I and the
threat of the English warships. Then a long
decline began in the 18th century, which would
only end with the rise of fishing and tourism in
the late 19th century.
From 1845, the harbour was modernised.
Sardine and tuna fishing ensured the growing
success of the canning companies (known
as ‘confiseries’). The shipbuilding yards built
dundees and other sardine fishing boats on
the quaysides at La Cabaude.
As for tourism, although the first spa bath
regulations date from 1816, it was not until
1825 that the first thermal baths and bathing
machines appeared. Les Sables d’Olonne
became a sophisticated resort frequented

out, as can be seen by
their elaborate traditional
costumes: their relatively
short skirts and petticoats
in bright, shimmering colours, high-heeled clogs
called ‘YouYous’, elegant,
light headdresses measuring 43 cm high embel-
lished with fine embroidery, make the Les Sables
folk costume one of the
most colourful in France.
The wearing of the regional costume is a tradition
kept alive by the ‘Queens
of Les Sables’ and the
folk group ‘Le Nouch’. A

display at the Museum of
Folk Traditions in Olonne

at the Little Station Museum of Ile d’Olonne.
Le Nouch
Founded in 1950 under the patronage of Léo David,
‘Le Nouch’ draws together around fifty ambassadors
of the customs and practices of the Pays des Sables
d’Olonne. Performing all over France, but also
appearing on the international stage, the Sablais
group is undeniably the best representative of local
traditions. ‘Le Nouch’ is the patois name for a sailor's

The first large seaside villas at Les Sablesd’Olonne, initially on the seafront and then
towards the Dunes district, were built in the
late 19th century. A certain eclecticism can
be seen in Les Sables seaside architecture,
ranging from the chalet and neo-Basque
regionalist styles through to the Art Deco and
1950s styles. Les Sables architects, Charles
Charrier (Palazzo Clementina) and Maurice
Durand (Mirasol) are responsible for designing many seaside villas on the Embankment.
Le Remblai
Le Remblai is the name given to the long promenade bordering the beach at Les Sables
d’Olonne. Le Remblai is, in fact, a series of
promenades originally constructed to protect the town against attack from the sea
and the encroaching sand. It was gradually to
become the seafront promenade. In the late
19th century, a number of architects gave
free rein to their imagination and created
some magnificent villas typical of the seaside
architecture.
The embankment promenade was inaugurated on 6th August 1950. The total overhaul (2008-2013) of the embankment was
a decisive event in the history of Les Sables
d'Olonne, bringing about the terms "old
embankment" and "new embankment" as
if a new page in the history book had been
turned.Resulting from a lengthy thought process and debate with users, the main feature
of the new Remblai is the priority given to
pedestrians, bicycles, seaside planting (e.g.
green oak, pittosporum, tamaris…), shop
terraces and bold architectural choices, respectful of the town’s history.
Bathing machines
The practice of sea bathing at Les Sables
d’Olonne dates back to the 1800s. In 1866,
the Railway arrived at Les Sables d’Olonne
and with it the era of the leisure train… The
seaside resort became all the rage and was
very popular with the aristocracy and the
artistic elite. It was the Belle Epoque for Les
Sables…
The Bathing machine was a device on 4 wheels like a carriage with canvas walls and drawn
by a horse. The cart was usually rolled into the
water up to the axle. The bather could therefore enter the water away from prying eyes. In
1825 at Les Sables-d’Olonne, the tradesman
Pître Raguet set up eight wheeled huts of this
kind for the use of bathers on the shore facing
the Place d’Armes (the current Place du Palais de Justice). *

L’Ile Penotte
This small quarter was
known during the Revolution as the «lost Island».
The name Penotte, whose
origin remains of mystery,
appeared around the 19th
century in relation to a
street no longer in existence today.
This pretty and picturesque quarter is named
after an island whilst nestled in the town centre,
behind the Remblai,
amongst narrow and higgledy-piggledy
streets.
The houses are framed
by hollyhocks and decorated with multi-coloured shell mosaics. These
decorations are the work
of a local resident artist,
Danièle
Arnaud-Aubin
– the «Seashells Lady».
Since 1997, with the agreement of her neighbours as
well as permission from
the town council and
an endorsement of the
Architecte des Bâtiments
de France, Dan' has multiplied her frescoes on all
neighbouring walls. Nothing escapes the treatment: street plaques,
doors and their frames,
numbers… She finds her
inspiration in mythology
and fairy tales…
She uses all types of
shells in her work: whelks
and periwinkles, oysters,
clams, scallops, mussels
and exotic shells.

Rotundas
Clock
Works undertaken to extend the Embankment in
1949-1950 also included
the creation of three
semi-circular rotundas
between the Place Foch
and the Quai Joffre.
The rotundas served
as bars or puppet theatres. Among those to
be remembered are La
Bagatelle, Le Tacot, Les
Canaris, Casa Pépé and
Le Trianon.
Built on top of an old blockhouse, the eight-meter
high four-sided clock
tower was inaugurated on
1st July 1956.
It has, since then, been
known as an easy to find
meeting, and sometimes
dating, spot.

Located on the coast at Le Château d’Olonne, SaintJean d’Orbestier Abbey was built in the 12th century on
the orders of the Duke of Aquitaine and Count of Poitou,
William IX, on an 800-hectare estate. The recently restored monument stands testament to what was once
an important Benedictine monastery between the 12th
and 18th centuries.
Like many others, it lived through times of grandeur,
prosperity and destruction. Richard the Lionheart
contributed to the monastery’s fame by confirming the
privileges given to the Orbestier monks by his grandfather and by making the forest of Orbestier his favourite
hunting ground.

oldest and was for many
years the most important
church in the Pays des
Sables d’Olonne.
It is thought to have been
built in 1042.

to house a statue of the
Virgin, who is thought
to have saved the life
of Flandrine de Nassau,
shipwrecked off the coast
of Bourgenay.
It was a Holy place very
popular with sailors and
their families, tucked away
discreetly in the Rue de
l’Amidonnerie.

Located

the site of the
Rosaire chapel
in the 13th century and a dependency of
the parish of Olonne, the
church was built in 1646.
In the 17th century, Les
Sables d’Olonne became
a major cod-fishing harbour and the residents
asked Richelieu, bishop of
Luçon, to create a parish
and erect a church.
In 1646 the first stone was
laid. The Church retains
its Gothic appearance,
but the western façade is
evocative of the Renaissance. It is one of the rare
examples of the CounterReform.

Built by the Princes of Talmont in the 15th century, the chateau was seized by the Protestant
leader, Soubise, in 1622, whom ordered fortifications to be built. First a garrison under Louis
XIII, the château, which currently houses the Sea Museum, was bombed in 1796 by the AngloDutch, seized by the government in 1835, and finally restored between 1986 and 1994. The
tower forms part of the Chateau Saint-Clair’s defences. The first harbour light was introduced
in 1593. In the 18th century, the La Chaume lighthouse was the only lighthouse in the Vendée. Its
present appearance is the result of restoration work undertaken between 1857 and 1858.

• Towing of a tuna fishing boat in the channel,
early twentieth century.
The Fishing harbour
The first stones were laid in the 15th century
on the orders of Louis XI. In the 16th century,
whale fishing, and the salt, wine, corn and
sailing cloth trades made it one of the busiest harbours.
Then the great cod-fishing era took off on
the banks of Terre-Neuve. The fish was cured
on the boat immediately after being caught,
using salt from Olonne.
This was then followed by the sardine and
tuna fishing eras. A series of works were undertaken in the 18th century to give the fishing
harbour the form we see today, with its jetties
and quays…

Favourite harbour of the Vendée Globe, from
where all the latest racing prototypes set
sail, the Sables d’Olonne harbour has hosted
many generations of boats and sailors.
Some or all of them have cast their nets at
Terre Neuve, joined in the Flibuste festival,
given the English a run for their money, developed off-shore fishing or coastal fishing activities. Long gone are the times of the sardine
sailing boats, the sturdy whaling vessels and
other Dundees. It’s been a long and wonderful story…

Forest, green countryside, marshland, sand dunes, beaches and rocky coasts
stand side-by-side within just 150 sq.m. Follow the pathways that criss-cross
through the Pays des Sables d’Olonne in search of a truly verdant coastline.
Around one hundred kilometres of cycle paths and walks.
National forest of Olonne
Under the orders of Louis XV, the planting of
the very first pine seedlings was succeeded
by a series of major grow operations in 1837
across the dune ranges to protect the marshland. The forest stretches for more than
1,000 hectares and a number of random or
signposted trails invite walkers to discover a
variety of tree species (acacias, green oaks,
maritime pines, etc…)

At the beginning of our era, the land now occupied by marshes was covered by the sea. It was
known as the Golf of Olonne, which was separated from the ocean by Vertime Island (now
covered by the forest of Olonne). The first salt
marshes, which date from Gallo-Roman times,
witnessed a resurgence from the Middle Ages
until the 19th century. The region’s ‘white gold’,
as the salt is known, is at the very origins of the
salt merchants’ village known as Ile d’Olonne.

Most of the marshland became a breeding
ground for eels and mullet. Seven marshes
are still in operation today. The salt workers
will be more than happy to welcome you: at
Les Salines, there are 4 working salt marshes,
the Aubraie marshes in Les Sables d’Olonne
and the bean marshes, avocet marshes and
rivolia marshes in Ile d’Olonne. Salt marsh

Like an embankment, fringing the Atlantic ocean, the dunes protect part of the
hinterland from the prevailing winds and
the assault of the sea. Given the optimum
protection, a variety of dune-retaining plants
can be found here: beachgrass, bedstraw,
burnet rose, sea grape, purslane …

Extending south beyond the beach at Les
Sables d’Olonne, located on the rocky coastline of Château d’Olonne, you will find the
Puits d’Enfer (Pit of Hell), a deep cleft in the
rock where the sea comes crashing in at high
tide. To the north, the Chaume coastline presents an impenetrable rocky façade to the
onslaught of the ocean. Stunning panoramic
views along these wild coasts.

zoological gardens invite you on a journey into the
animal kingdom. Anchored near the ocean, the
Sables d’Olonne Zoo is a green islet, sanctuary to
wild fauna and flora. Its lush vegetation, ecological
commitment and scientific yet approach make it
a unique animal park of its kind. It is home to 400
animals belonging to fifty or so endangered species
(giraffes, red pandas, Atlas lions, wolves, gibbons,
parrots, meerkats, penguins …). Come and join the
zoo team at feeding time for the otters, pandas,
penguins, vultures, tapirs, giraffes and wolves.

Abbey museum
The museum of modern and contemporary art is
housed in the old Sainte-Croix Benedictine priory
founded in 1622.
Covering over 2,500m2, the museum houses an
extremely varied collection of exhibition spaces
ranging from the bright temporary exhibition room
to its 17th century attic in the shape of an upturned
hull, and displays the works of Gaston Chaissac
and Victor Brauner.
In terms of history, the collection includes major
works by Albert Marquet, Jean Dubuffet, Alberto
Magnelli and Max Beckmann…
Specifically focusing on its status as a
contemporary art venue, the museum has
assembled the works of Georg Baselitz, Robert
Combas, Denis Laget and Christian Jaccard.

Housed in an old school built in 1891, this museum
depicts the daily lives of the inhabitants of
the Pays d’Olonne at the beginning of the 20th

Seafood
Every day sees, depending on the catch,
a new arrival of delicious sea produce in
Sables d’Olonne: sea bass (locally referred
to as Loubine), the so-called Sablaise sole
(flat oval-shaped fish with a fine, white and
firm flesh), the famous Sablaise sardine (fish
with a blue-green back and silver belly, best
enjoyed fresh, grilled or in oil), as well as many
fish: cuttlefish, tuna, hake, red mullet.
Also to be savoured: lobsters, langoustines,
«Vendée Atlantique» oysters, shrimps (the
grey shrimp is called «bouc», the pink one
«bouquet»), winkles, brown crabs and balleresses (crabs), spider crabs…
Salt, Samphire
The salt, used in cod fishing, has, for a long
time, been a source of wealth for Sables
d’Olonne. Many salt producers are still
carrying on this tradition.

A leafless plant growing on the shores and
salt marshes, with a fleshy jointed stem, sometimes eaten like gherkins, and from which
soda is extracted (see salt marshes).
Canned seafood
La Sablaise canning factory continues to
produce culinary recipes from the Vendée.
For more than 20 years, the last remaining
canning factory in the Olonnes area has been
producing a comprehensive range of delicious specialities: fish soup, potted recipes,
marinades, sauces, mayonnaise "like grandma used to make"…
Local specialities
Set off on a journey of discovery of the local
markets and taste all their savoury delights,
including our famous tangy sea-fresh delicacies such as sole, sardines, oysters, salt,
samphire,… not forgetting our other local produce: mogette beans, Vendée ham, sweet
