GRAPES: 40% Grenache noir, 30% Mourvèdre, 30% Syrah.
20 year old vines. Yield: 40 hl/ha. 4000 vines/ha.
TERROIR: a 320 m high limestone plateau at the foothills of the Mont SaintBaudille, the “Sentinelle du Larzac”. Plot selection of the most clayey part of
this plateau for a smoother style.
Warm and dry Mediterranean climate, tempered by the altitude and a
continental influence from the Larzac plateau.
VINIFICATION: hand-picking with sorting of the grapes. Destemming.
Fermentation in glazed concrete tanks with temperature control and daily
pumping overs. Short maceration of the Grenache (10-15 days). Malolactic
fermentation.
AGEING: 10 months in concrete tanks.
TASTING:
Colour: garnet red colour.
Nose: expressive fresh fruit aromas with smoky notes.
Palate: well balanced, with a silky structure and a long delicate finish.
To be tasted at 16-17°C with grilled meats, a game stew or matured cheese.
Can be laid down for up to 5-7 years.
