Production : 15 000 bouteilles de Château La Croix Bonnelle, disponibles en 750ml et 1500 ml. Vineyards : 13 hectares planted with 80% Merlot and 20% Cabernet Franc, most of which are over 40 years old. Density is 6000 vines per hectare. Soils : Lay and sand with iron deposits over deep gravel. Viticulture : Grasses are allowed to grow between the rows of vines and organic fertilizers are used by rotation every five years. Pruning is in a double ‘Guyot’ system severely limiting the number of buds. Manual de leafing and ‘reasonable’ treatment of vines. Green harvesting when necessary. Manual and mechanical harvesting. Vinification : Total de stemming and double sorting of grapes. Pre fermentation, cold maceration for optimum extraction of fruit aromas. Fermentation in small, temperature controlled, stainless steel tanks to respect the grapes’ maturity and ‘terroir’. Ageing : 6 months in French oak barriques renewed every 3 years. Part of the wood used in the barrels come from our own forests in the Dordogne. Bottling and storage at the Chateau.
