CHABLIS Vincent Dauvissat is one of the most impressive gentlemen I have ever met. He is also responsible for some of the most ethereal wines I have ever tasted, driven by finesse, minerality and elegance. The “Feathered Touch” counterpoint to Raveneau’s “Hammer”, this man is the master of using his (very old) barrels to translate the beautiful nuanced aromas and flavors which embody the essence of Chablis. The wines, like the man, are thought provoking, gentle and even surreal at times. The Dauvissat-Camus bottlings are identical to the regular family label and are largely only marketed in Europe. Today the domaine is run by his sons Jean-Marie and Bernard. Wines are definitively traditional in style. There are no chemical treatments used in the vineyards and all the grapes are hand harvested. Fermentations are carried out with naturally occuring yeasts and the wines are aged in large old oak barrels . The typicity of the site is reflected strongly in each wine. These are wines which are the quintessence of purity, incredibly intense in aromas and flavors to exponential degrees. Over the generations the family has developed a reputation for some of the most intense and refined examples of Riesling in all the world. Today the thirteenth generation has begun working in the cellar. The wines lean towards a very dry style, with a great deal of finesse and focus. The Cuvée “Frédéric Emile” is sourced from the Grand Cru Vineyards Geisberg and Osterberg, and is a very powerful Riesling with a fair bit of richness and length. “Clos Ste Hune” is a parcel of vines approximately fifty years old in the heart of the Rosacker Grand Cru Vineyard, which has been in the family for some two hundred years. This is most certainly the world’s best site planted to Riesling, incredibly pure and with intense minerality and finesse. Making arguably the very best white and red Hermitage in any given vintage, this estate is currently run by Jean-Louis who started working with his father Gérard in 1982. The vines are spread over four parcels, offering a breadth of complex flavors and aromas that epitomize the hill of Hermitage and the pure charachter of the Marsanne and Roussanne vines. JeanLouis is also extremely passionate about the appellation of Saint Joseph, the origins of his family’s Domaine, and he produces both Domaine and Négociant bottlings here. The “Betts & Scholl” label Hermitage was produced by Chave in collaboration with Richard Betts, a Master Sommelier from Colorado and his business partner Dennis Scholl, a contemporary art collector. The Mosel River runs from Alsace in France through Luxembourg into Germany near the town of Trier and meanders its way towards Koblenz where it ends at the Rhine River. Throughout its history there have been vines planted along the river and it remains one of the most breathtaking sights, with the narrow river valley flanked by extremely steep hillsides planted to the vine. The name of the wine region refers to two rivers which join with the Mosel at Trier, the Saar and the Ruwer. These two river valleys are appellations in their own right, though wines from all three valleys may carry the whole appellation name on the label. The common factor is the slate found in the bedrock that produces wines of great acidity and minerality. Often bottled with some residual sugar to balance the high acidity, these are amongst the most long lived wines in the world. Here we are highlighting arguably the best estates in each of the three valleys, the powerful Scharzhofberger of Egon Müller in the Saar; the razor-like acid structure and focused minerality of the Grünhaus estate in the Rüwer and the ethereal and magnificent Prüm estate in the Middle Mosel. By a vast margin the very best of the best of the Château in Sauternes, Yquem is a truly ethereal experience. Making wines from botrytised grapes always produces concentrated and intense wines, but at Yquem the process of selection is so exact and painstaking that the grape pickers comb the vineyard for perfectly, which is to say, nobly rotten grapes. It is not unusual to have pickers make five or six passes through the vineyard to pick grapes at the optimum moment; often the harvest can take up to six weeks to complete. The result is the most concentrated and unctuous, yet most fine and balanced of all noble sweet wines with lingering aromas and flavors ranging from fruity peach and apricot notes with younger vintages to deeper, less opulent and finer notes of caramel, honey, toffee and spice with mature vintages. Indeed, with a large amount of sugar and a concentrated acidity, these wines truly are amongst the most ageworthy of all great wines. Young wines like the 2006 and the 1996 offer an opportunity to revel in the hedonistic richness of Yquem, while legendary mature wines like the 1975, 1967, 1959 and the much sought after 1921 offer a more intellectual and cerebral experience. At a time when little scientific knowledge was involved in winemaking Engel attended the school of viticulture in Beaune, later becoming a professor at the University of Dijon in the oenology department. One of his best students was none other than the legendary Henri Jayer. The early 30’s were not a popular time for Burgundy and Engel along with a few friends founded the Confrerie du Chevaliers des Tastevins in an effort to promote the region. But the greatest legacy of the Domaine is the wine. René’s son Pierre ran the Domaine from 1949 until his death in 1981 but an illness in the 70’s caused the Domaine to be neglected. It was only after 1981 when Rene’s grandson Philippe brought the wines to new heights making it one of the leading producers in VosneRomanée. Philippe was also one of the most colorful and loved personalities in all of Burgundy. With a total of about 7 hectares he produced a great Clos Vougeot (with vines near the top of the Clos next to the Château), Grands Echézeaux, Echézeaux, VosneRomanée “Les Brûlées” and Vosne-Romanée Village. Tragically, Philippe died of a heart attack in 2005 and the Domaine was sold bringing an end to one of Burgundy’s most important Domaines. At Restaurant Daniel we are proud to be the guardian of a collection from the glory years of the estate. Uncorking a bottle of Engel is a transporting experience to a time we can only savor and remember. BU RGU N DY BU RGU N DY Founded by Symphorien Chevillon just after the turn of the century, and made famous by Robert Chevillon, the fourth generation to work the Domaine, this is a truly traditional Burgundy house producing very elegant and pretty wines from the village of Nuits-St-Georges. With a small amount of whole cluster fermentation accenting the terroir expression of their eight different premier cru vineyards the Chevillon domaine stands apart from the rest of the appellation. The wines do not tend towards a hard acidity common in this commune, instead they are pure and yet more opulent of fruit and richness than the wines of their neighbours. Guigal has overseen a stunning 67 vintages in the Rhône valley and since 1961 has been joined by his son Marcel. These three single-vineyard bottlings have come to be recognized as Guigal’s top wines. The first to be bottled in 1966 was La Mouline, the most feminine and pretty of the three with the largest amount of viognier in the blend. La Landonne, more powerful and brooding and 100% syrah had its first vintage in 1978. Making arguably the very best white and red Hermitage in any given vintage, this estate is currently run by Jean-Louis who started working with his father Gérard in 1982. The vines are spread over four parcels, offering a breadth of complex flavors and aromas that epitomize the hill of Hermitage and the pure charachter of the nearly forty year old syrah vines. Starting in 1990, a micro-cuvée of Hermitage was produced exclusively in exceptional vintages and named for a local artist in the town of Tain Hermitage, Bernard Cathelin, who has designed a special label for it. The vineyards are planted in the hills facing the Mediterranean Sea, and are mostly planted to the variety Mourvèdre with Cinsault and Grenache often used in the blend. These wines are truly reflective of the terroir; warm, rich, often reminiscent of smoked meats, fresh herbs and blossoms and ripe black olives. Here we are highlighting some of the appelation’s best estates, all exhibiting a distinctive and unique style of wine. Château Pradeaux made in a very traditional style tend towards rusticity and power, often brooding and very deep in tannin. Domaine Terrebrune produces wine from areas with a limestone base giving the wines a bit of lift, with a lighter feel and great minerality.
