“DYNAMIC VINES is an independent organic and biodynamic wines merchant that has built a strong reputation by
providing individual wines which reflects their place of birth. We believe that wine is made in the vineyard rather
than in the winery therefore all of our producers are growing their vines naturally. We feel that this viticulture
enhances the unique “sense of place”. Thanks to a respect of the soil, plants and wine, nothing interferes with nature
to avoid creating a standardized style of wine.
The people featured in this calendar are “sommeliers & wine buyers from some of London’s finest restaurants
and wine bars” who are passionate and dedicated often pioneers, combine talent and enthusiasm for individual
wines. We welcome their willingness to break the mould. The calendar represents how natural wine is becoming increasingly prominent within the UK’s hospitality industry.
Although this is fantastic news, we hope that the calendar will help to raise awareness within the public too. We are
extremely excited to celebrate our ethos and products in this way and hope that everyone enjoys it!”

respecting their origins, I have realized that being a “Vignerons” is to be observant, curious,
imaginative, hard-working, thick-skinned, meticulous, passionate about nature and about life
and filled with respect for your fellow man. Being part of this adventure is nothing less than a
privilege and the journey has just started...

At Victualler we love natural wines because they are fun to drink, lively and full of character. With
La Poudre d’Escampette and Element Terre we discovered an elegant journey of spicy choucroute
followed by generous red and dark fruits, and even notes of lemon-grass, leather and biscuit in the
bouquet. Matched with more red fruit, toasted spice and creaminess on the palette, their exuberance
and tickly effervescence ensure our enduring imbibing pleasure.

It’s easy to follow the norm but it requires more courage to carve out your own path. Despite
obstacles, Jacques Maillet chose to do things differently, or ‘Autrement’, and I admire that. The first
time we met, he walked into the restaurant with two bottles sticking out of his winter coat pockets,
but he had more clothes on than I do on this photo!

Jean Charles Abbatucci’s vineyard is located in the South West of the Island of beauty. I love Jean
Charles’ wines. They represent Corsican wines as their best associating complexity, elegance and
freshness. Jean Charles is not only a talented “vigneron”, he is also a very good cook. If you pay him
a visit and stay over, ask him to cook his rare breed of Corsican tiger veal with homemade preserved
mandarin. A killer!

You have to be a true Magician to achieve what Olivier Riviere has done with his wines. The
appellations (Rioja) he has chosen to grow his grapes in are hot spots during the summer, and it’s
really hard to keep freshness in the wine usually. Our friend has made sure that altitude would be a
key factor in his locations, to produce fresh and elegant wines in Spain. Once you open a bottle, you
can witness a real disappearing act right in front of your eyes as the bottle seems to vanish in thin air.

Wine has always been about creating special moments during meals with family, friends or guests at
the restaurant. Henri Milan is such a great character: funny, knowledgeable and generous. I was very
lucky to try so many different wines with him when I first started up as a young sommelier. I discovered Henri’s wines when I was 16 and I fell in love with them straight away. I visit the estate
every time I go back to see my family who leaves right next door.

I like the idea behind the labels faces matching the personality of what’s in the bottle, also I like that the
wine are labelled under Landwein even though the quality is a lot higher, like the cool and relax approach
of the wine maker. I found there a link between the style of the wines and his ideology: relax, approachable
but precise. The wines are fun and express great personality without sacrificing balance. Eduard make
me discovered one of my favourite beer: the Trumer Pilsner. A great discovery that I am almost drinking
every day.

I first discovered Domaine Josmeyer at the Loire Renaissance tasting in early 2013. I was struck by
the freshness, precision, complex aromatics and great balance of the wine. I had found my Alsace
producer for Buon Vino. As you can see in the photo, Josmeyer style also turns heads; the striking
Mise du Printemps Pinot Blanc in Magnum is a great centre piece to any dinner table. It is impossible
not to appreciate the elegance and fabulous drinkability of Josmeyer wines, even for a beer swilling
northerner like me!

I moved down to London at the beginning of 2011. It was around the same time as the first RAW wine
fair. I was just starting my journey through minimal intervention wines. I still remember going there
with my mentor Raphael and the first producer we met was Yvonne Hegoburu from Domaine de
Souch. I instantly fell in love with Yvonne’s wines, She was sitting, slightly hung-over from the winemaker’s dinner the night before but when Raph and I got to her table she jumped into life. We tasted
her Jurancon Sec and I was amazed with the purity & elegance of this wine, but I was about to be really surprised when Yvonne poured a few drop of her Jurancon “Marie Kattalin” into my tasting glass;
the complexity of aromas that followed, the expression and the length was incredible. I consider it as
the best sweet wine in the planet. Longue vie a elle!
