Recipe : Christmas ginger biscuits
Ingredients (serves 8) : 125g cane syrup, 75g caster sugar, 80g buter, 250g plain four, 1-1/2 teaspoons of gingerbread spices*, one egg, 1/2
teaspoon of baking powder..
Preparaton : Prepare the dough on the day before : place a saucepan in a bainmarie and mix together the syrup, the sugar and the buter.
Remove from the stove and add the spices, the egg and the four mixed with the baking powder. Mix thoroughly. Cover and set aside. Next day,
roll out the dough - not too thinly. Cut out shapes (hearts, men, christmas trees etc…). If large shapes, makes 8 pieces; if small shapes, about 30.
Place on a tray in the oven (200C) and cook for 10 minutes.
If you chose to make ginger men, you can make eyes and litle butons with dried fruit which you push into the dough before cooking. You can
also decorate the shapes afer cooking. Before you cook the biscuits, make a hole with a big straw (far enough from the edge) so that you can
hang them from the tree as a garland or single decoraton.
If you cannot fnd ready-made gingerbread spices, you can order some delicious “poudre a pain d’épices” on the internet from
www.epices-roellinger.com
