We have decided to bring together a fantastic selection of new, up and coming
grapes, regions and styles of American wines.
Some of our team have recently been visiting vineyards and meeting wine makers
from California, Oregon and the Washington State, who emphasise modern
winemaking techniques, whilst using unusual grapes for the location.
Our sommelier’s selection is a great way for us to share some of our cellar treasures
through a balanced selection available by the glass and by the carafe.
Using the revolutionary Coravin system, we are now able to sample some of our finest
wine in different measures.
We are also organising ‘Sommelier’s Booths’, an exquisite experience at New Street
Grill. These little gems means that with your food choices our sommelier will perfectly
match specific wines to your menu – these will also run along a theme whether it be
winemaker, country, region, grape variety or style of wine.

Collection:
Rimauresq takes its name from the Real Mauresque, the river that flows through the
vineyards. The domaine sits at the foot of the Massif des Maures mountain range, 20 minutes
from Toulon. With a unique microclimate, the estate benefits from both the cooling mistral
winds and the shade of the mountains above. This shade gives a longer ripening period in the
crucial weeks prior to harvest. Nine noble grape varieties are found at Rimauresq, including
Cinsault, Mourvedre, and Tibouren for the rosés.

Collection:
Made from Chenin Blanc, these are unconventional wines, and Craig Hawkins, the winemaker likes
to experiment quite a bit. Typically, long macerations on skin are involved, and Craig is a believer in
the importance of the lees for building the wine. El Bandito is made from grapes grown on the
Lammershoek farm, while Cortez comes from a farm called The Observatory, which some readers
will be familiar with because of Tom Lubbe’s wines from this property.

François Villard has grown his tiny wine domaine from four to seven hectares and still produces a
miniscule amount of highly allocated bottlings. Referred to by Robert Parker as one of the stars of
the Northern Rhone, François Villard’s strategy is to allow for the most optimal ripening possible. His
wines, as a result, are rich and concentrated with complex aromas of peaches, apricots, honeysuckle,
and honey. The whites are often allowed to develop botrytis and most of the wines pass through
wood ageing for an extended amount of time to prepare them for a very long life in bottle.

Laurent Vaillé spent his early career training under such masters as Jean­François Coche­Dury
(Meursault), Gérard Chave (Hermitage), and Eloi Durrbach (Provence), he settled in the l’Hérault of
the Languedoc and purchased his own land in 1989, near Aniane. The simultaneous restraint and
power of his wines makes them ideal for aging. His area of the Languedoc has since become known
to produce some of the greatest wines in the region.
In his words, “Nature gave us a partition of land. It is up to us to interpret it.”

John Duval is a legendary name. As only the third winemaker to be entrusted with the making of
Australia’s most famous wine, Grange, John worked for Penfolds for 28 years (including 16 years as
chief winemaker) until his departure in 2002.
Despite his legendary status, John is a quiet, unassuming man who just happens to be one of the
world’s great winemakers. He set out on his own with the 2003 vintage, sourcing fruit from some
long­time friends in the Barossa.

Collection: Château La Nerthe has a history stretching back to 1560. In the capable hands of Alain Dugas the estate has been making wines with a focus on organic viticulture. In 2008, Alain Dugas retired, and Christian Voeux took over from him. La Nerthe's wine is firmly in the modernist camp of accessible Châteauneufs ­ softer tannins than in Beaucastel or Vieux Télégraphe, and ready to drink earlier. Almost all La Nerthe wines are vinified in wood, many in small barrels, which is rare in Châteauneuf. No filtering takes place. In 1965 Renato Ratti bought his first vineyard for the production of Barolo: a small plot in the
historical zone of Marcenasco, right below the Abbey of L’Annunziata at La Morra. In the ancient
th
(14 Century) Abbey, he created his first single vineyard (cru) Marcenasco Barolo. Between the
middle of the 70’s and the end of the 80’s, Renato Ratti became an important point of reference for
Langhe and Italian wines in general. He was elected president of the Barolo Consortium and
subsequently General Director of the Asti Consortium. He directly participated in the drafting of the
rules and regulations governing the appellations of Alba wines and was particularly active in those
regarding the coveted “DOCG” (guaranteed) label. Today, his son Pietro is here to guarantee the
continuation of that mission of vinification and refinement.

Collection:
The most famous Bordeaux wine property in Sauternes has long and interesting history
starting in the middle ages when d’ Yquem was owned by the King of England. In 1953,
Jacques Sauvage was awarded feudal tenure over Yquem. Shortly after taking over the
property, the Sauvage family built the present Chateau in Sauternes that we know today.
When Chateau D’ Yquem is first bottled, it shows a dark yellow or gold hue. With aging, the
color changes and begins getting darker. 40 year old Yquems could resemble caramel, while
bottles twice that age, could have the color of dark coffee. Something else to consider, when
Yquem is young, not more than 25 years after the vintage, the flavors will better resemble
honey, drenched tropical fruit. As the wine ages further, often those yellow tropical fruit
flavors fade and tasters experience flavors of caramel, burnt toast, spice and crème brûlée.
