Rajouter le concassé et le concentré de tomate, cuire, ajouter le bouquet garni, suer. Incorporer les carcasses de homards concassées, bien suer, mouiller à hauteur avec de l’eau, puis ajouter le riz. Quand le fumet est gouteux égoutter, passer au chinois, réduire si nécessaire. Crémer, porter une ébullition, rectifier l’assaisonnement de sel, poivre et piment d’Espelette, incorporer la gélatine préalablement ramollie, refroidir une petite partie de la bisque afin de vérifier l’assaisonnement à froid si nécessaire. Sweat the vegetables (carrot, onion, celery, shallot, leek, and fennel) in butter without browning them. Add the crushed tomatoes and tomato purée, leave to cook and add the bouquet garni. Sweat. Add the crushed lobster bodies, sweat well and cover with water. Add the rice. When the fish stock tastes right, drain, strain and reduce if necessary. Cream, bring to the boil and make any adjustments to the seasoning with salt, pepper and Espelette pepper. Stir in the gelatine that has been previously softened, cool a small quantity of bisque to check the seasoning when cold. Gelée de tomates Tomato gelée Epépiner les tomates sans les monder, mixer puis détendre légèrement au jus de tomates. Assaisonner avec sel et poivre blanc, puis ajouter le Tabasco. Monter le coulis de tomates à l’huile d’olive. Passer l’appareil au chinois étamine, le coller le avec la gélatine à raison de 16 g au litre. Abaisser à nouveau à 2 mm d’épaisseur, refroidir en cellule, puis détailler en petits bâtonnets de 3 cm de longueur 3 mm d’épaisseur. Congeler légèrement, torsader du bout des doigts, plaquer sur une feuille de papier sulfurisé. Cuire au four à 180°C jusqu’à ce que les feuilletés soient dorés et croustillants Roll the puff pastry out to 1.5 mm thick.
