LA PURE ET DURE Autre recrue de l’alimentation vivante : le kombucha d’Eugénie Rochefort (Loutres Kombucha). Produite de façon artisanale à New Richmond depuis décembre 2015, cette boisson pétillante, consommée depuis des millénaires, est issue de la fermentation naturelle de feuilles de thé. Pour Mme Rochefort, il est important de maintenir la qualité et l’intégrité de la production du kombucha : pas de gaz carbonique, pas de filtration, et toujours les traditionnelles bouteilles en verre. « On travaille essentiellement avec des saveurs gaspésiennes : les bleuets, les framboises, le sirop d’érable. L’idée est de travailler sur la flore intestinale grâce aux probiotiques, nourris de bactéries issues d’aliments d’ici, adaptés à notre environnement », spécifiet-elle. Dès l’été 2016, Loutres Kombucha distribuera son produit en Gaspésie et ailleurs au Québec, notamment au nouveau pub montréalais de la microbrasserie gaspésienne Pit Caribou. POURTANT, C’EST UN SUPERALIMENT, QUI CONTIENT BEAUCOUP PLUS D’ANTIOXYDANTS QUE LE BLEUET ET LA CANNEBERGE. IL CONTIENT TANT DE TANIN QU’IL TACHE LES DENTS ET MÊME LES BOUTEILLES DE VERRE! CE DERNIER A UNE TEINTE ROSE VIOLACÉ, GRACIEUSETÉ DE LA BAIE D’ARONIA. ET C’EST SANS COMPTER LES TISANES ET FLEURS DE THÉ. ILS SONT VENDUS DANS LES ÉPICERIES FINES, MAIS AUSSI DANS LA PLUPART DES SUPERMARCHÉS IGA ET METRO DE LA RÉGION. Le Vert à boire opened to the public in 2014. The menu features juices and smoothies like the sprout-based Vie-8, the Lie-Cœur d’enfant (apple, ginger, carrot and lemon) and the Soleil du Maroc (carrot, clementine, mango, turmeric root and black pepper). Clients can also enjoy soups at the bar – the one made with beets, almond butter and coconut milk is particularly intriguing! – or try the raw lactose- and gluten-free brownies made with vanilla-flavoured hemp milk… The bar’s popularity is unwavering. “We get phone calls from people asking us to open juice bars all over the place,” says Alain. “Women are quick to try new healthy products. But it takes a bit more work for me to convince my construction-worker buddies! I’m going to have to create a juice called Hulk or something along that line…” he points out. PURE AND UNADULTERATED Another living food recruit: Eugénie Rochefort’s kombucha (Loutres Kombucha). Produced artisanally in New Richmond since December 2015, this sparkling beverage that people have been drinking for thousands of years is produced by letting tea leaves ferment naturally. For Eugénie, maintaining the quality and integrity of kombucha production is crucial: no carbon dioxide, no filtering and still the traditional glass bottles. “Basically, we work with Gaspesian flavours: blueberries, raspberries and maple syrup. The idea is to improve the health of intestinal flora by means of probiotics, nourished by bacteria derived from local foods adapted to our environment,” she explains. Beginning in summer 2016, Loutres Kombucha will distribute its product throughout the Gaspé and elsewhere in Québec, notably at the new Montréal pub operated by Gaspé Peninsula microbrewery Pit Caribou. 79
