Warm salad with peanut sauce Recipe serves 2 Time: approx. 60 minutes Ingredients SALAD - compose using ingredients of your choice • 50 g string beans or fine green beans, blanched for 5 minutes • 2 blocks deep frozen, unseasoned leaf spinach, thawed and blanched • 50 g julienne-cut carrots, blanched • 50 g julienne-cut white cabbage, blanched • 1 tomato, sliced or cut into eighths • 1 potato - boiled for 10 minutes and cubed • 1 cucumber, cut into slices or sticks • 4 cauliflower or broccoli florets, blanched for 5 min. • 50 g bean sprouts, blanched for 1 minute • 50 g tofu - fried and cut into slices • 50 g tempeh (fermented soy beans) - fried and cut into slices SAUCE • • • • • • • • • • 1 kaffir lime leaf, torn into pieces 1 clove garlic, crushed Peanut oil for frying 1 tsp AVOPRI sambal oelek* 1 tsp tomato puree 1 dl water 1 195 g jar AVOPRI satay sauce 1 tsp lemon juice 1 tbsp AVOPRI sweet soy sauce - kecap manis Pinch salt Level of difficulty: easy Recipe © Diane B. Maweikere GARNISH • AVOPRI sweet soy sauce - kecap manis • 1 egg, boiled and cut into eighths • Roasted onions Method Sauce: Fry kaffir lime leaf and garlic in oil. Add sambal oelek and tomato puree and stir. Add water and simmer for 2 minutes. Add satay sauce and stir. Remove frying pan from heat and season with lemon juice, kecap manis and salt. Divide all the vegetables, bean sprouts and tofu up onto two plates or serve on one large platter. Pour part of sauce over, serve remainder separately. Garnish with kecap manis, eggs and roasted onions.
