The coravin system allows us to access any wine that is under cork without breaking the seal. It is a great way to pour rare and interesting wine by the glass without having to cocnern ourselves with having the wine oxidise - a vôtre santé. 2008 Gisborne, NZ Vinoptima ‘Ormond’ Gewürztraminer A unique expression of gewürztraminer made in New Zealand. This wine is without doubt one of the country’s great wines. Arguably, one of the best examples of the variety in the world. Made by Nick Nobilo. Oppulent wine with exotic notes of lychee, made in an off-dry style. 28 1988 Nahe, Germany Schlossgut Diel Dorsheimer Goldloch Trocken Coming out of Germany’s forgotten wine region, the Shlossgut Diel showcases the power and intensity of the Rheingau crossed with the elegance of the Mosel. This is aged Riesling at the top of it’s game. 27 years old and with it all the aged riesling characteristics with some searing acidity that over the years has integrated harmoniously with the wine. 20 1997 Vouvray, France Marc Brédif ‘Grande Année’ Chenin Blanc The ‘ Grande Année’ from Marc Brédif is another wine that stands to the statement ‘great wine improves with age’. Chenin Blanc has an amazing versatilty in the way it expresses itself, the way it can be manipulated as part of a blend or on it’s own and as an accompaniment to great food. We particularly love this with our ‘plancha scampi’ dish. 30 2010 Central Otago, NZ Prophet’s Rock ‘Retrospect’ Pinot Noir Paul Pujol, the winemaker at Prophet’s Rock has firmly developed a cult winemaker status in New Zealand. He makes his wines out of Bendigo in Central Otago, which relates in his wines that tend to punch true and fast. The ‘Retrospect’ is the first, and so far, only vintage released as a premium label from the vineyard. It was a selection of individual parcels of fruit that had pronounced intensity. It has been barrell and bottle aged at the vineyard for release when Paul believed it was ready to drink. 60 1991 Multi-Regional, Australia Penfolds Grange Shiraz, Cabernet Sauvignon A name that is synonymous with great wine, Penfold’s ‘Grange’ (or Grange Hermitage) is arguably one of the greatest wines in Australia and one of the best expressions of the varietal blend. Sourced from various vineyards in South Australia, but prdominantly the Magill Estate in South Australia, the 1991 showcases the combination of a great vintage, phenomenal site and a powerhouse of viticulture. 2011 Tuscany, Italy Marchese Antinori ‘Tignanello’ Sangiovese, Cabernet Sauvignon The phrase ‘Super Tuscan’ came out of need in Italy, when the strict viticultural laws were far too suffocating. Central to this, was the Antinori family and the birth of ‘Tignanello’. These super Tuscans used varieties that weren’t permitted under Tuscan label laws (primarily Sangiovese). The Antinori family, found that, in ‘Tignanello’ when blending Cabernet Sauvignon with Sangiovese provided a more wholistic wine and in my humble opinion, a wine that punches well above it’s weight. 285 55 HALF BOTTLES Champagne NV NV NV G.H. This same year saw a legendary vintage and from this first vintage the house has produced unusually fine champagnes. The house recognised the potential of overseas markets early on and sent its first consignment to England in 1815 and to the United States a few years later. Responding to the evolving taste of customers, in 1854 the House pioneered a dry champagne, later to be re-named Brut and set the standard for the champagne we know today. Perrier-Jouët’s beautiful Belle Epoque bottle, set with anemones, was created in 1902 by the famous artist Emile Gallé and epitomises the Bohemian spirit of the Belle Epoque era. Hervé Deschamps, only the seventh cellarmaster to work at the House, tastes each base wine twice and then creates the blend in one go. Most houses make trial blends and a committee decides, but such is Hervé’s skill, he gets it right first time. The Chardonnay grape, floral and almost feminine in its elegance and finesse, is the signature variety of Perrier-Jouët’s vineyards and the cornerstone of the Perrier-Jouët style.
