For lunch, cook it the night before - about 5 hours - and the next day trim of the fat and cook for a further 2 hours. For dinner, start cooking at about 2pm - but in any case take the lamb out of the fridge a couple of hours before you cook it. Ingredients (serves 6-8) : 1 shoulder of lamb - about 2 kilos, rosemary, 4 medium sized onions cut into large chunks, 2 garlic bulbs, 3 carrots (and 3 parsnips if you wish), 2 tablespoons of olive oil, 250ml dry white wine, salt and pepper. Preparation : Heat up the oven at 180C. Rub some oil, salt and pepper into the meat. Place the rest of the oil with the onions into a large casserole pot with a lid and put the lamb on top. Brown in the oven for 15-20 minutes. Turn the oven down to 110C. Add the rosemary, garlic and wine.Cook for another two hours with the lid on, bastng once in a while. Add the carrots (and parsnips) sliced lengthways and cook for a further 4 hours or so. The lamb should fall of the bone; if you need a knife, it’s not cooked enough. Serve with mashed potato or, even easier and delicious, with a couscous aux epices (e.g. Tipiak) Other sectons will be added according to your/our ideas: For sale, donatons, exchanges, etc. Please don’t hesitate to inform us of your news, ideas, tps : [email protected] If you do not wish to receive any informaton from us please let us know by responding to the e-mail The newsleter is writen by Patricia Clement and Annie Franklin and will be produced monthly.
