Although nowadays
Lisieux is known around
the world because of Saint
Thérèse, its origins date
back much further in time.
In Gallo-Roman times, its
inhabitants were called
Lexovii… and are now
called Lexoviens.
A market town with
modern cultural and sports
facilities (media library,
aquatic centre, Italian-style
theatre, and more), Lisieux
is a town where life is good.
Take time to stroll around
the town centre and
discover the wealth of civil
and religious heritage, the
many townhouses, the
incredible half-timbered
houses… not to mention
its Basilica and all the sites
representative of Thérèse’s
life (Carmel, Maison des
Buissonnets, and so on).
Enjoy your visit!
Specialising in metal
production from Antiquity
to the 17th century, above
all, Livarot is known for
its cheese. The famous
“Colonel” brought riches
and wealth to the town
throughout the 19th
century and the first part
of the 20th century. This
cheese speciality continues
to be of interest today
and the manufacturing
secrets of Pays d’Auge PDO
cheeses can be discovered
at the Graindorge cheese
factory, a free visit which is
well worth the detour.
The Pays de Livarot
also benefits from a
network of hiking trails
for experienced walkers
as well as a selection of
itineraries for families.
Manors, wash houses and
typical churches adorn the
bocage landscapes. And,
many farmers will titillate
your taste buds with their
delicious local produce.
Mézidon-Canon
Mézidon Canon, between
the Pays d’Auge and
the Caen plain, is the
westernmost gateway to
the region. The gardens
of Canon Castle, listed
as “remarkable gardens”
or Crêvecoeur en Auge
medieval castle are two
essential tourist sites in this
region which will delight
history enthusiasts and
all those who appreciate
beautiful sites.
Moyaux
The heritage of this typical
village with a population
of about 1,200 people
will delight you. Around
the village square and the
church with its leaning
steeple, you will be able
to admire a beautiful
collection of half-timbered
houses very characteristic
of the architecture of Auge.
Situated on the border
of the Eure and Orne
Departments, the small
medieval town of Orbec
(about 2,500 inhabitants)
will charm you with its
well-preserved traditional
heritage. A walk through
the town will allow you to
discover the half-timbered
houses typical of the region
and appreciate the quality
and variety of Norman
produce available at the
local shops. The many
hiking paths leaving from
Orbec are a great way for
visitors to discover the
region and its charms:
manors, stud farms,
little country churches,
traditional wash places…
Saint-Pierre-sur-Dives
In addition to its Abbey,
Saint Pierre-sur-Dives, a
town with about 3,700
inhabitants, is proud of
its monastic buildings, a
medieval Covered Market,
and a town centre which
offers an incredibly rare
architectural heritage. The
town is particularly lively
on Monday mornings with
the traditional market…
indisputably one of the
most famous in the region.

THE CITY WITH THREE SAINTS
Therese Martin was born in Alençon
(Orne) in 1873. She died of tuberculosis
on 30 september 1897 at the Carmel
of Lisieux which she entered at the age
of 15. Published a year after her death,
her autobiography “A Story of Soul” (or
“Autobiography of a Saint”) is known
the world over. In 1997, Therese, as
patron saint of the Missions, became
the third woman saint to be raised to
the rank of “Doctor of the Church”.

On October 18, 2015, Louis and Zélie
Martin, the parents of Saint Thérèse,
were canonized together by Pope
Francis in Saint Peter’s Square in Rome.
This event makes Lisieux a unique
place in the world, a city with three
saints who were members of the same
family
One of the biggest churches
to have been built in the 20th
century. Construction started in 1929,
it was blessed in 1937 and consecrated
in 1954. Its walls and the crypt walls
are decorated with mosaics reflecting
on the message of Ste Therese. There
are relics of the saint in the Basilica
transept. The crypt contains the relics
of the saints, Louis and Zélie Martin.

Cathedral Saint-Pierre
Saint Peter’s Cathedral : A GothicNorman building from the late 12th
century, it illustrates the transition
between the Romanesque and Gothic
styles. It was the headquarters of a
diocese until the French Revolution.
Its parishioners included Saint Thérèse
and Saint Louis Martin. There are many
reminders of her time here. It was in
these chapels that Thérèse’s vocation
was revealed to her.

The Carmel chapel contains
the tomb of ste Therese. She is
represented there lying on her
deathbed wearing the habit of
the Carmelite order. Pilgrims are
offered a spiritual tour, combining
modern means and numerous
authentic objects, to enable them to
rediscover and explore the message
of st Theresa.

Saint-Jacques Church
This Gothic edifice without a
transept, which was begun in 1498
and completed in 1540, now houses
exhibitions. Church open only for
temporary exhibitions.

The Wax Museum Wax museum located on the site
of the basilica. It depicts 11 scenes
from the life of Saint Thérèse,
using full size models. The highly
realistic scene is accompanied by
an appropriate commentary in 6
languages (French, English, German,

Some of the churches in the Southern
Pays d’Auge are open every day and
reveal a little more of the history of
our villages and our heritage. Do not
hesitate to visit them because they
are a major part of village life. Each
one has something interesting to
offer: stained glass windows, statues,
furnishings, retables, architectural
features… and some of them, which
look so small on the outside, hide
features of great beauty within their
walls. Along the paths, we also invite
you to discover wayside crosses and
oratories. The Tourist Offices in the
area will provide you with details
about the sites open to visitors.

Stained glass windows at the
church
All the stained glass windows at Tôtes
Church was created in 2004-2006
by the master glassworker Florent
Chaboissier, whose studio is based in
an old cheese dairy at La Varinière in
Notre-Dame-de-Fresnay. Half-figurative, half-abstract narrative panels, inspired by the Old and New Testament.
The suggested tour includes a variety
of symbolic imagery.
ORBEC
Notre-Dame d’Orbec
Its large 15th century tower crowned
with a 16th century steeple is very
original. Rebuilt after the town was
pillaged during the Hundred Years
War, extended in the 16th century
and restored in the 19th century, it
has preserved its beautiful Renaissance stained glass windows.
Not to be missed: Saint Remy d’Orbec
Chapel and the churches of Cernay,
Saint-Cyr-du Ronceray, Saint-Denisde-Mailloc, and Saint-Pierre-deMailloc open every day from 10 am
to 6 pm.
MEZIDON CANON
Saint-Germain Church
12th and 15th century. Both massive
and insubstantial in its exterior architecture, it is characterised by a large
Romanesque door surmounted by a
roof which protrudes from the main
body of the building.
MOYAUX
Saint-Germain Church
11th-15th century. The church tower
is crowned by an eight-sided steeple
which rises in a spiral giving passersby the impression that it is leaning,
regardless of the angle from which
they are viewing it.
SAINT-PIERRE-SUR-DIVES
Abbey Saint-Pierre-sur-Dives Benedictine abbey was founded in the 11th century
by Countess Lesceline, William the
Conqueror’s great-aunt. Destroyed
by a fire, the abbey was rebuilt in the
12th century thanks to great popular
support.
Many architectural changes have
been made over the centuries but
these do not in affect the building’s
overall harmony in any way. Inside
the church, discover an unusual
meridian line drawn on the floor in
the 18th century. The abbey’s choir
provides an exceptional haven for
a Pré-d’Auge ceramic pavement
from the end of the 13th century, a
rare example of the art of terracotta
paving. The tiles offer an alternating pattern of lilies and fantastical
animals with, at the centre of the
composition, a rosette three metres
in diameter. The adjoining conventual
buildings, the cloister courtyard and
the superb 13th century chapter
room make it one of the most
complete examples of monastic
architecture in Normandy.

Saint Germain de Livet CastleMuseum is characterised by its
architecture, combining a 15th
century half-timbered manor and
a stone and Pré d’Auge glazed
brick structure from the end of the
16th century. The salle des offices
is a must when visiting the Castle
because it offers superb frescoes
from the end of the 16th century.
The museum presents collections
of furniture and works of art
belonging to the Riesener-Pillaut
family. This building bears witness
to the refined way of life in the 19th
century and offers the opportunity
of discovering the artistic and
personal career of the artist Léon
Riesener (1808-1878), the grandson
of the cabinet-maker Jean-Henri
Riesener and the cousin of Eugène
Delacroix.

SAINT PIERRE SUR DIVES
The convent buildings of
the abbey
The town of Saint-Pierre-surDives can boast a remarkable
architectural site made up of
the church and various convent
buildings from the former abbey,
founded in the 11th century.
Only the east wing of the convent
buildings was restored in the
1980s and 1990s. It contains the
13th century chapterhouse, the
press room and the library with its
impressive framework.
(All these areas are open to visitors).
After over 40 years of work and
effort, the town of Saint-Pierresur-Dives acquired almost all the
former convent buildings, so that in
2013 a vast restoration programme
could begin, which is due to be
completed in early 2017.
The former refectory of the SaintMaur monks will house a 100-seat
auditorium.
The west wing, which is currently
being renovated, will soon house
an exhibition area where the
objects and frescoes found during
the archaeological excavations will
be shown to the public.
The abbey of Saint-Pierre-sur-Dives
is today one of the last complete
abbeys in Lower Normandy. Free
entry. Guided visits for individual
visitors.

Crèvecœur Castle
Surrounded by water, the castle has preserved its
original layout in two areas:
- the outer bailey contains the half-timber
farm buildings (15th century) and the chapel
(12th century) - in the inner bailey, the central
building (15th century) is protected by a series
of fortifications. Crèvecoeur is also a group of
exhibitions: “Once Upon a Time There was a
Little Domain”, “The Timber Frame and TreeRing Dating”, “The Schlumberger Adventure”,
“Images from Over There and Elsewhere”, “History
Reconstituted”, as well as special activities: The Egg
Festival on Sunday 27 March/The Middle Ages
Celebration from 10 to 29 July /The Medieval Days

Coupesarte manor
Coupesarte Manor has preserved its
original timber frame and offers exceptional
architectural unity. Built on moats in the 15th
century, the barns, stables and cowsheds date

limestone and pale-red brick.

Le Kinnor Castle
A vast 14th and 16th century property. A prime
example of building from the end of the 16th

plane in France and Chateaubriand’s Copper

Museum gardens of
Château de Vendeuvre
Vendeuvre Castle
Several areas to visit: a unique
collection of miniature furniture
to discover in the orangery (800
masterpieces made by master
craftsmen, models by woodworkers,
ivory workers, silversmiths, etc.). The
sumptuous interior of the castle is
furnished throughout and animated
by mechanical models; among the
castle’s secrets and curiosities is an
amazing collection of dog kennels. In the 18th century kitchens
commentary is provided by an
animated model chef. The gardens,
classified as a “Remarkable Garden”,
are famous for their “surprise” water
features (Chinese bridge, crystal tree,
turtle waterfall, etc.), the mazes, the
shell grotto and the exotic garden.

VENDEUVRE
Chateau de Grisy
The Château de Grisy, on the banks
of River Dives, comprises a main
dwelling, farm outbuildings, a
lake, and adjoining orchards. This
harmonious ensemble nestles in
a delightfully peaceful spot. It was
built in the 16thcentury, and later
extended in the 17th century. It
boasts elegant, elongated façades
and one of the outbuildings houses
an impressive, fully intact cider press.
Non-guided visit to grounds every
day from 2 July to 15 August, and
European Heritage Days from 1.30 to
7.30 p.m. Admission free.
SAINT-PIERRE-SUR-DIVES
Carel Castle
Built on top of an old fortified
house on the banks of the Dives in
the late 17th century, Carel Castle
and the buildings surrounding it
form an unusually elegant classic
ensemble, enhanced by the pure
lines of its majestic dovecote built
in the 16th century.
The grounds, park and dovecote
are open to visitors every day
from Monday, 4 July to Friday, 12
August , from 10 am to noon and
from 2 pm to 6 pm.

visits and workshops for children
aged 8 to 12 are coordinated by
professional tour guides. Ask for the
complete programme produced by
the Pays d’Auge tourist offices and
the heritage activities department
at the reception of the tourist
offices.

Lisieux Museum of Art and History,
awarded the Musée de France label,
reopened its doors to reveal a new
exhibition in June 2013. Located in
one of the last half-timbered houses
that remain in Lisieux, it presents,
in chronological order, the history
of the city from its origins to the
present day, and discusses its many
faces: the Gallo-Roman, medieval
and classical city, the textile city,
famous figures, the Reconstruction
... There are also two themes: the
bishops of Lisieux and the Lexovien
living environment. An eventful
history, illustrated by more than
three hundred objects, paintings,
photographs... But the indisputable
centrepiece of the museum cannot
be contained within a cabinet or
room, since it is the city itself.

Municipal Museum
In a richly ornamented timber-frame
house built in 1568, visitors can
discover the history of Orbec and
the Pays d’Auge. Objects recalling
local artists and writers such as
Raymond Bigot, Malbranche,
Marie-Laure Grouard and Lottin de
Laval is joined by artefacts linked
to local customs. Representations
of Orbec are shown side by side
with objects testifying to textile,
ceramic and cheese production.
The 1st floor is devoted to the
charitable organisations, while
Norman traditional costume is
richly represented on the 2nd floor.
Archaeology is displayed in the
basement area, with a presentation
of artefacts dating from the
Palaeolithic era to the Middle Ages,
some of which come from the
Louvre Museum.

Medieval Covered Market
Built at the initiative of the monks
at the abbey between the 11th and
16th centuries, the imposing market
hall of Saint-Pierre-sur-Dives is one
of the jewels of medieval Norman
heritage. Ranked among the largest
in France thanks to its length of 70
metres and width of 20 metres, it
still retains its commercial purpose
by welcoming the authentic market
on Monday mornings, and several
annual fairs. Many other events are
held throughout the year: trade fairs,
concerts and a Christmas market on
the second weekend of December.
A magnificent oak roof crowns the
building. Damaged by bombing
during the Second World War, it was
restored in 1949 in accordance with
medieval building techniques.

engine from the LEROY factory in
Livarot.
This machine, which once produced
the factory’s electricity, is a symbol
of the industrial revolution which
swept the town at the end of the
19th century.

The gardens of Canon Castle

Bishopric Garden
The Lisieux Bishops’ Palace Garden
(recreated from 1830 to 1840)
adjoins the old Episcopal Palace
and the cathedral. It was originally
formed of three parts: the parterre,
the waterfall garden and the Jardin
de la Couronne garden. Currently,
the main central esplanade with
its circular pool is lined by rows of
plane trees. This arrangement is
traditionally found in this type of
garden known as “à la française”.
The bandstand (1910) is a reminder
that Lisieux had all the charms of
a 19th-century sub-prefecture,
with soldiers and their brass bands
playing there.

Parc du Manoir de l’Isle

exotic plant species in this park
designed by the cheesemaker
Georges Bisson, at the time of
building his manor. Nowadays,

of an underground karstic network.

press, this Sensitive Natural Area

This “apple wine” made with
fermented apple juice was called
“sidre” and then cider in the first
millennium. The use of cider in
France dates back to the end of
the 6th century or the start of the
7th century, when, enjoyed by
sovereigns and the clergy, cider
became a lifestyle in the 15th
century. Normandy offers apple
trees, a type of soil and a favourable
climate for their development and,
over the years, their farming became
a source of wealth. An orangey
colour with a light foam of delicate
bubbles, cider is appreciated for its
refreshing qualities and is ideal as an
aperitif and during meals.

It was in the 16th century that a
gentleman from Cotentin, a Lands
and Forestry Officer, Gilles de Gouberville, recounted for the first time
how cider was distilled to produce a
spirit. Calvados is obtained by double
distillation in a pot still. In order to
make a harmonious Calvados, four
main families of apple have been
identified (sweet, bitter, bitter sweet,
acidulous). A spirit to be reserved for
peaceful moments or good company,
served at the end of meals to prolong
the evening, it can also be enjoyed
with cocktails and aperitifs.
Pommeau
In olden days, the fruitiest apple juice
was mixed with Calvados and kept in
oak casks to make the year’s aperitif. A
product of this traditional technique,
Pommeau has now become the region’s quintessential aperitif. You will
appreciate its attractive amber colour,

The Cider Road

In this superb hilly setting, a real-life postcard of
Normandy with castles, manors, half-timbered houses
and apple orchards, all of which offer the region some
of its most beautiful images. The land of horses, where,
hidden behind their walls, you will find prestigious
stud farms, the Pays d’Auge is a world of authenticity
and opulence. Set in the heart of the geographical
area covered by the Appellation d’Origine Contrôlée
of Pays d’Auge Ciders, the Cider Road brings together
about twenty farmers, all indicated by the sign “Cru
de Cambremer”. These farmers undertake to welcome
visitors and to offer them visits to their warehouses,
tasting and an explanation of their work.
Look out for the signs bearing the words “Cru de
Cambremer” and pay them a visit!
This signposted tourism route is accessible from the
RD613 and N175 main roads.

For 4 people : 2 large filets of duck breast, 4 apples, 2
soup spoons of cider confit, 5 pepper seasoning, salt,
pepper.
Put the filets of duck breast in an oven dish with the
skin facing upwards and score a cross in the fat of the
skin. Coat the skin with cider confit, add a few twists of 5
pepper seasoning and put some water in the bottom of
the dish. Bake in a hot oven for 10 to 15 mins according
to taste. Remove from the oven and cut the duck breast
into strips, place them on four hot plates and serve with
apple quarters peeled while the duck was cooking.
Season to taste and baste the duck. Serve immediately.

1 pear, 30 g chopped
hazelnuts, salt and pepper
from the mill.
Remove the rind from the
Livarot and chop the cheese
into cubes.
Heat the crème fraîche with
the Livarot.
Make a compote of onions,
pear and gingerbread. Pour
into ramequins.
Add salt and pepper. Add
3 egg yolks and pour the
mixture into the ramequins.
Place in a bain-marie. Bake
at 120°C (gas mark 4) for 30
minutes.
Sprinkle with the grilled
chopped hazelnuts.

With an apple corer, remove the core from the
apples then cut each one into five slices of the
same thickness. Lightly fry slices in butter (they
shouldn’t be too soft).
Assembly: Place a layer of apple against a
layer of andouille and then a fine slice of Pont
L’évêque, and then repeat until you have put
the apple together again. Insert the cinnamon
stick through the middle to hold the ingredients in place.
Place in the oven at 180°C for 7 to 8 minutes.
Cider caramel:
Make a caramel with the sugar and a little
water. When it has turned a nice colour, pour in
the cider and cook for a few minutes until the
sauce thickens slightly.
Put some lettuce on a plate, place the apple on
top and pour over the cider caramel.
