Sommelier’s Suggestions White Wine 311 ‘Olivar’ Cesconi, Pinot Grigo/ Pinot Bianco/ Chardonnay, Trentino, Italy 2012 £65 The 2 brothers Cesconi run 21ha of only organic and biodynamic vines, about 400 meters above the sea level around the village of Pressano. This Olivar 2011 is light gold in colour with complex aromas of ripe stone fruit such as apricot and peach with notes of white flowers. On the palate, the fresh, citrus character is rounded out by the vanilla notes from the oak ageing and complemented by a nervy, mineral quality. The long finish is floral and fragrant. 502 Riesling Trocken ‘Erstes Gewächs, Schloss Vollrads, Rheingau, Germany 2011 £79 Located in the heart of the Rheingau, where the quality of Riesling is unsurpassed by any other region in the world. Schloss Vollrads has been producing wines for 300 years on. The estate is still going from strength to strength under the watchful eye of Rowald Hepp and his winemaker Ralph Herke. This production of 21 hectares are classified as First Growth or the very best that Germany has to offer: a brilliantly clear nose, loaded with minerality and layers of fruit. Dry with gentle acidity, this Riesling has notes of peach, pear, apple and flint stones on the palate and an almost endless length with elegance and complexity. Puligny Montrachet 1er Cru ‘Les Folatières’, Burgundy, France 2013 £130 Domaine Chavy Chouet Les Folatière is a 1er Cru of Puligny Montrachet located on the same level of altitude and just a couple hundred yards away from Montrachet Grand Cru, south of Meursault and north of Chassagne Montrachet. This very famous plot of vines gives some outstanding quality Chardonnay, elegant and generous, given by the very good maturity of the grapes. Domaine Chavy Jouet produce a wine with delicious hints of honey and stone fruit, combine with zesty and a spicy touch, some of the most elegant invitation to tasting. It feels soft with a creamy texture and a zesty finish, long harmonious and lively. A real treat and a perfect pairing with Chef fish courses! 141 Red Wine 1430 Lalama, Dominio do Bibei, Mencia, Ribeira Sacra, Galicia, Spain 2011 £65 Made from low-yielding Mencía - with 10 per cent from Garnacha, Brancellao and Mouraton, this is a top class Spanish wine reflecting the high potential of the North West peninsula. Like an illegitimate liaison between the Burgundy and the Northern Rhône; it's all fluid raspberry and redcurrant succulence bound by velvet tannins with crunchy, juicy freshness, red fruits, violet, smoky minerals and peppery spices, with a hint of blood orange in the background. Concentrated, offering black raspberry and bitter cherry flavors. 1701 Pinot Noir, Mornington Peninsula, William Downie, Victoria, Australia 2013 £130 Bill Downie established his own label in 2003 after several years living and working in Burgundy. Bill is fanatical about the quality of his fruit and where it comes from, so where possible, sources fruit from vineyards which use biodymanic and organic viticultural practices. This is a very complex Pinot nose. Raspberry, cranberry and blood plums with violets, lavender and undergrowth. Very precise, detailed and distinctly Mornington Peninsula. The palate has sweet red fruits and some subtle oak derived spice. Textured, fine and long with crisp, noticeable acidity. 1355 Cepparello, Isole e Olena, Paolo de Marchi, Sangiovese, Tuscany, Italy 2006 £180 The Super Toscan Cepparello is Isole e Olena's flagship wine. It is made exclusively from Sangiovese grapes that are hand-picked from the best sites on the estate’s vineyards. Bright ruby red. The nose shows aromas of red fruits and cherries along with a touch of spice from the well-judged use of French oak. The wines are so effortlessly, stunningly pale yet powerful, burgundian and beautiful to boot. On North facing terraces of volcanic grit, between 500 and 1100 metres, Frank asks miniscule yields of his ungrafted vines. Nerello Mascalese is the main red grape, with several whites for his 'orange' wine.
