French gastronomic food was given Unesco humanity heritage status in 2010 and Paris is
certainly the best place to enjoy it! The city also serves up modern, creative and
innovative cuisine, inspired by the great Parisian movement le Fooding®.
Current food trends in the capital range from a rise in the popularity of street food to a craze for
multidisciplinary restaurants. There is constantly something new on the food scene, which is
always state-of-the-art and inventive. You can dine at a tiny restaurant or at a
grocer’s, watch professional chefs cooking, enjoy a special set menu, or even take
lessons from a Michelin-starred chef. There are so many ways to experience good food
in Paris.

gastronomy!

Street food continues in popularity! The association Street food in Movement was
launched by Thierry Marx with the aim of ‘overseeing and developing’ street food. And
the craze for food trucks, which began in 2011 with the burgers of Kristin Frederick’s
Camion qui fume (she trained at Grégoire Ferrandi and Apicius), has spread to other
types of food. Since then, some 20 or so new ‘gourmet food trucks’ serving ice-cream,
chips and tacos circulate in the capital with the same standards: quality products and
cooking. Locations can be followed via the social networks. But this craze for street
food extends beyond food trucks. Quick snacks: burgers, hot dogs, and dim sum … at
specialist food stalls have popped up all around the city and have never been so
popular. As for burgers, Blend, Big Fernand and Le Comptoir de Brice have opened
new outlets in different parts of Paris. Plus, the United States continues to inspire
French restaurateurs with the opening of diners or American coffee shops like Le
Dépanneur at Pigalle. La Candelaria launched a trend for tacos among trendies in the
Haut-Marais, the L de Liza specializes in Lebanese sandwiches and the empanadas at
Clasico Argentino have been such a success that the food outlet opened three new
addresses during the year. Hot dogs are also popular. They can be savoured with a
cocktail at Glass, a trendy bar at Pigalle, or French style at Little Fernand, or even
USA style at the Hot Dog House. Fish has come to counter the trend for meat and
lobster bars and fish & chips have increased in number in Paris! The Oyster Bar of
Dessirier offers a delicious club sandwich with lobster whilst British fish & chips at the
Sunken Chip or at Frenchie to go get top marks for their crispy golden texture and
light and healthy accompaniments. Oysters are now popular and can be enjoyed during
happy hour at the Mary Celeste; at the Fish Club, ceviche, home-made taramasalata
and fish croquettes feature on the menu. Is a craze for fish about to oust the iconic
burger?

Lunch breaks are more popular than ever in trendy districts of the capital! The three
essential criteria: it has to be good, healthy and … look appetizing! There are
vegetarian tartlets, organic salads, scones and carrot cake to snack on in an American
style cafe or take away. Difficult to choose between the fresh open sandwiches at La
Buvette and the home-made soup at the Tuck Shop. L’Aubrac corner, the new
Aveyron-style fast food, has the surprising dish aligot to take away; Caluc offers a
green wrap stuffed with duck from the Aveyron. The very girly Ten Belles serves filter
coffee on the premises, which can also be taken away. Twenty Peas and the Pipelettes
appeal to women looking for healthy salads. The organic canteen Soya attracts bobos,
who are also fans of falafel sandwiches at the Daily Syrien.

shops, bird shops or dairy shops.
Their original decor gives these new places a singular charm. After Le Plongeoir tea
room at the Hermès boutique, housed in a former art deco swimming pool, or the
trendy Argentineans Anahi and Unico, in a former butcher’s shop, the Josefin
restaurant has opened in a former bank at the Banke Hotel and features voluminous
spaces and theatrical decor. The trattoria Vilia is installed in a former fur merchant’s,
whilst Chez Aline, voted ‘Best snack 2013’ by Fooding®, is housed in a former horse
butcher’s. And finally, the restaurant Pan, a former light shop, was awarded the
Fooding® 2013 Prize for the best decor.

>Another big trend: ‘open kitchen’ restaurants, like those in New York and
Asia.
Watching chefs working and creating dishes, behind a counter, is entertaining and
creates a convivial atmosphere. Alain Dutournier’s restaurant Le Pinxo or the Atelier
de Joël Robuchon at Saint-Germain started the trend several years ago, and since
then, several other open-kitchens have opened: the Spring Restaurant with its single
menu signed Daniel Rose or Yam’Tcha where Michelin-starred chef Adeline Grattard
pairs food and tea, from her tiny kitchen. At the Workshop Issé Bis, which seats less
than 10, the chef Ofuji serves fine noodles, sashimi and prepares a surprise menu in the
evening, like at Kunitoraya which offers delicious breaded pork, whelks and leeks in
Yuzu-miso sauce. The concept has also been adopted by former candidates of the TV
programme ‘Top Chef’: Le Comptoir de Brice Morvent at the Marché Saint-Quentin, Le
Galopin of Romain Tischensko and Pierre Sang-Boyer, Pierre Sang in Oberkampf (voted
‘Best comptoir 2013’ by Le Fooding®) have their kitchens opening onto the dining area.
Anne-Sophie Pic has opted for a glassed-in kitchen in her recent starred restaurant La
Dame de Pic, which offers passers-by in the street a view of the cooking in the kitchen.
And at Saint-Lazare train station, Michelin-three-starred chef Eric Fréchon serves
generous balanced portions of food at his restaurant Lazare.
In the same vein: restaurants organized around a wood-burning grill for roasting meat
in front of customers. The newest on the scene: Beaucoup opened by the talented and
trendy team Glou and Jaja, L’Atelier Vivanda, the new address of starred chef Akrame
Benallal, and Le Drugstore Steakhouse at the Publicis Drugstore.

Tables d’hôtes in grocery stores, shop areas in restaurants, bars to eat at in markets,
tasting areas in shops, hotel restaurants and restaurants which are also bars or even
clubs and art galleries … The trend is for breaking down frontiers and blurring
genres, and for restaurants designed as lively places, and especially a trend for
concept establishments. After Le Thoumieux by Jean-François Piège, chef Flora Mikula
opened her Auberge Flora, a restaurant-bar-hotel, and the Hôtel Amour also has a
variety of offerings with its restaurant, brunch and a little garden for dining or to have
a drink.
Grocery stores with a few tables for finishing off one’s shopping with a light meal
are very popular: at Claus, there are great breakfast products to buy and taste on the
premises. At the Alain Milliat shop, people come from afar for high-quality fruit juices
to enjoy with flavoursome and healthy snacks. Causses has some of the best gourmet
products, from charcuterie to dairy products, as well as fruit and vegetables; the small
tables d’hôtes enable customers to enjoy a snack while doing their shopping. Finally,
La Boutique des saveurs, on the Saint-Martin covered market, strives to showcase
producers from France’s national parks whose products are labelled ‘Parc Naturel’. At
Au Comptoir de Brice run by Brice Morvent, you’ll enjoy hamburgers and other dishes
according to market produce. Always popular, this market also includes Allen’s Market,
the new address of New Yorker Joe Allen, where you can also enjoy a 100 % USA snack
in the grocery section. Taking the idea of a global venue even further, Le Purgatoire, a
large loft in rue de Paradis, is a lively place where you can party, create culinary
dishes, carry out research, make culinary discoveries and encounters, and find out
more about food products and related professions. Merci, the fashion, home decor and
design shop, also has an organic-vegetable canteen, located near to the lightbulb
section on the shop’s ground floor. And handy for film buffs is the ‘lounge’, an upstairs
150 m² loft at the Cinéma du Panthéon, where customers can enjoy dishes of the day,
and cakes and pastries with a nice cup of tea. Nanashi, the organic ethical brand in rue
de Paradis, has also opened on the lower ground floor of the hôtel particulier inhabited
by the Bonpoint brand! As for Le Caviste Bio, this wine shop has several table d’hôtes
in its cellar: 300 different wines and 10 dishes of the day. And finally, the Boucherie
Les Provinces invites customers to enjoy a rib of beef, sirloin steak or an entrecôte
steak in a tasting corner of the butcher’s.

> Fooding® attitudes
Fooding ® was created, at the instigation of Radio Nova, in 2000. The word is a
contraction of ‘food’ and ‘feeling’, and was created to put a modern touch into
gastronomy that was resting on the laurels of its starred cuisine. This movement which
has taken off in Paris and abroad is a concept, an art, a state of mind, a new way of
seeing and experiencing cooking. Le Fooding® advocates creative and trendy cooking
full of surprises and new things. Events like Fooding® Week and the Grand Summer
Fooding® are organized throughout the capital to familiarize the public with this
innovative approach to cooking. Plus, every year, the Fooding® bureau publishes a

guide, which from the 2013 edition covers the whole world, and which enables the
public to discover new culinary talents and daring gourmet initiatives according to a
new classification: restaurants that are ‘so good’, ‘atmospheric’, ‘budget’, ‘feel good’

For the last 10 years, the Omnivore Food Festival has unveiled the creativity of a
young generation of cooks from all backgrounds. Since 2012, the event has taken on a
new global dimension by becoming a travelling cooking festival ‘the Omnivore World
Tour Paris Food Festival’. Over the year, 12 major cities, including Paris, play host to
the caravan-big top, (sweet and savoury) chefs’ master classes and other gastronomic
evening functions and tasting sessions. Since 2010, the public have also been able to
enjoy Omnivore dinners prepared solely by young chefs twice per month at the
Centquatre, an alternative cultural centre in Paris. Two chefs take up residence in the
kitchens to offer a contemporary view of cooking through 4 dishes at the Centquatre’s
restaurant, Les Grandes Tables du Centquatre, to offer a vision of contemporary
cooking in 4 dishes.

A contraction of ‘bistro’ and ‘gastronomy’ the term ‘bistronomy’ became a concept in

The profession of chef, long the preserve of men, now has for an array of talented
young women in its ranks, who rival with the greatest. In Paris, several top restaurants
with women at the helm attract gourmet diners: Hélène Darroze, Rougui Dia at
Vraymonde, Ghislaine Arabian at the Petites Sorcières, Hélène Samuel at the Café
Pleyel, Julie Rivière at Le 23 Clauzel, Renata Dominik at Café Prunier and Adeline

red meat has made a big comeback. Argentinean canteens, American-style steakhouses,
