Analis LES 2 ET 3 MARS À PARIS Le sandwich fait son show endez-vous incontournable des professionnels de la restauration rapide et de la consommation nomade depuis 2000, le salon Sandwich & Snack Show s’est tenu les 2 et 3 mars à Paris Expo, Porte de Versailles (pavillon 5.2). Pendant ces deux journées, plus de 300 exposants et 12 000 visiteurs venus de 65 pays sur 10 000 m2 ont pu échanger des informations sur les tendances du marché et les dernières innovations. Parmi les nouvelles animations prévues pendant le salon, le Carnet de Tendances, réalisé par Cate Marketing, a été dévoilé aux visiteurs pour comprendre les axes de développement du marché de la restauration rapide et de la vente à emporter. Le Laboratoire de Tendances, en partenariat avec Cate Marketing et France Snacking, a illustré les grandes tendances en termes de produits alimentaires avec cinq traiteurs et cinq boulangers. Le panel boulangeries-pâtisseries, proposé en partenariat avec CHD Expert, constitue un baromètre des activités et des attentes en matière de vente à emporter sur les différents segments de la boulangerie. Les trophées Concepts Tendances BRA ont récompensé les établissements qui se sont distingués par l’originalité de leur décor, de leur concept et de leur offre. Par ailleurs, la Snack Academy a présenté les cinq concepts de restauration rapide ayant le plus d’avenir. Outre ces nouveautés, le Sandwich & Snack Show a proposé ses rendez-vous habituels : l’indice Jambon Beurre, le Snacking des Chefs, le baromètre nutritionnel de la restauration rapide, le pôle nutrition et le parcours innovations, ainsi qu’un programme riche de 14 conférences, le tout réunissant 20 intervenants et 15 chefs cuisiniers. Le salon ne cesse de croître d’année en année, tout comme la consommation des Français qui ont avalé plus de 2 milliards de sandwiches l’année dernière pour un chiffre d’affaires global de 6,39 milliards d’euros. Parallèlement au salon s’est tenue la première édition de Parizza, nouveau rendez-vous dédié au monde de la pizza, des pâtes et de la restauration italienne en général (2 et 3 mars, pavillon 5.2). Plus de 80 exposants et 3 000 visiteurs étaient attendus lors de cet événement qui ne s’est pas déroulé à Paris par hasard. Selon une étude menée par le salon en 2010, les Français occupent le deuxième rang mondial pour la consommation de pizzas avec 8 kg par habitant et par an. Ils ne sont devancés que par les Américains (13 kg) et devancent leurs voisins italiens (5 kg) et Allemands (4 kg). Le marché global de la pizza représente en France 5,479 milliards d’euros. • 2 and 3 March in Paris R WHEN SANDWICHES STEAL THE SHOW A key meeting point for fast food and food-on-the-go market since 2000, the Sandwich & Snack Show took place on 2 and 3 March at Paris Expo, Porte de Versailles (pavilion 5.2). Over two days, more than 300 exhibitors and 12,000 visitors from 65 countries gathered in a 10,000 m2 space to exchange information on market trends and the latest innovations. Amongst the events planned for the show, the Trends Report, produced by Cate Marketing, was unveiled to visitors helping them to understand the axes of development for the fast food and takeaway market. The Trends Laboratory, in partnership with Cate Marketing and France Snacking, illustrated the big trends in terms of food products, as interpreted by five caterers and five bakers. The bakery-pâtisserie panel partnered by CHD Expert constitutes a barometer of activities and expectations in terms of takeaway sales in different bakery segments. The BRA Emerging Concepts Awards were awarded to establishments standing out for the originality of their decor, concepts and offers. In addition, the Snack Academy presented the five most promising concepts of fast food. Other than these innovations, the Sandwich & Snack Show offered its usual events: the Jambon-Beurre (Hamand-Butter Baguette) Index, Chef’s Snacks, the fast food nutritional barometer, the nutrition pole, the product innovation theme trail, as well as a rich programme of 14 conferences bringing together 20 speakers and 15 chefs. The Show does not cease to grow from year to year, in the same way as the consumption of the French, who swallowed over 2 billion sandwiches last year for the global turnover of 6.39 billion euros.
