Since the beginning Vilmart established itself as a ‘récoltant-manipulant,’ an estate that produces its wines from vineyards
owned by the estate. As a member of the Ampelos, an organization that promotes sustainable and organic farming, Vilmart
oversees a reasonable 11 hectares consisting of 12 vineyard plots. Peter Liem, a well respected author and expert in all things

Most of these wines are fermented and aged in stainless steel. Those that do see oak, it’s almost always neutral. From classic
expressions of a crisp, clean SAUVIGNON BLANC, to less common varietals like ALIGOTÉ, a wine driven by the limestone soil

Riesling Smaragd
This Austrian wine classification dates back to 1050 A.D.. In order to classify, the grapes must be picked one week after the main
harvest begins. Don’t let this fool you into thinking the wine will be sweet, because in fact in order to classify as Smaragd, the
wine must have less than 9 grams/liter of residual sugar (That’s less than Trocken Rieslings). The wines are put into large barrels
and fermented until the process comes to a natural stop, a process that is not all that common in winemaking, often sulfur is used
to stop fermentation. In addition wines must reach 12.5% alcohol by volume. Smaragd literally means “emerald” and refers to
the little green lizards that run around the vineyards.

Generally speaking, these wines see varying levels of oak and have a bit more weight to them. If you like the fresh style of
Chardonnay with not too much oak, try a CHENIN BLANC. If you like robust whites with more oak, look at those from SPAIN.

The Jura
One of France’s Most Exciting Regions
The Jura, a small region on the Eastern side of France about an hour away from the borders of Switzerland is home to some of the
oldest vines in Western Europe. The styles are vast but the notion is the same, clean and pure wines. Then again, that’s really the
goal with anyone. With a mixture of soil types that would make any winemaker giddy, the Jura is home to some of the finest
examples of CHARDONNAY outside of Burgundy. Even the Burgundian’s can be fooled by thinking some of the wines are their
own. That’s not to say they’re all done that way – many of the wines are heavily oxidized, on purpose, and super geeky. Nutty like
sherry on the nose, lots of minerality, and a finish that will last days. The wines certainly aren’t for everyone, but any wine lover
should discover the Jura.

Jean François Ganevat
Jean François’ family has been making wines since 1650, he’s currently the 14th generation to oversee the estate. After 9 years
studying in Beaune he decided he’d return to the Jura and make of his own. To some Ganevat is to the Jura as Harlan Estate is to
Napa – cult like and hard to get. The wines really speak for themselves. In 1999 he converted to biodynamic and in 2006
eliminated sulfur, with the exception of a very small bit in some of the 40 cuvee’s he makes. The wines are profound, expressive,
generous, all the while remaining remarkably elegant.

Many will say CHARDONNAY is an extremely versatile grape; we’re not ones to disagree. There’s no getting around it; we love
CHARDONNAY. California has caught a bad wrap among a few, but we’re here to show you that there is some exceptional
wine coming from both the North & South growing regions. Whether it’s a Chablisienne style to a more rich almost Burgundian
style, California has you covered. It’s not all about Napa, too. Santa Barbara County is home to some of the most radical terroirs,
from the ‘white hills’ resembling those in Chablis & Champagne, to grass covered hills that would make an Irish man jealous.

A Wine Made Just for
The thought of creating a true private label is something we’ve wanted to do here at Craftbar for many years. When ideas began
flowing immediately we gravitated to Santa Barbara County. In our opinion it’s one of the best wine regions within the entire
New World. We wanted to craft a true, honest, terroir driven CHARDONNAY that showed off how amazing this region is, but
would also provide a perfect marriage with our cuisine. Winemaker Sashi Moorman and partner Raj Parr were the obvious
answer for this project. Together they have made an exceptional CHARDONNAY from some of the best vineyards within Santa

What makes Chablis unique? While considered Burgundy, the small region of Chablis is actually closer to Champagne than it is
to the Cote d’Or where Burgundy proper is located. Chablis’s Kimmeridgean Limestone soil and cooler climate lead to more
acidity driven CHARDONNAY that are less fruity than most that come from Burgundy or even California. The French have a
saying, “goût de pierre à fusil” meaning ‘taste of gunflint’ that comes through in the wine. When it comes to oak, most village
Chablis never see it & the Premier and Grand Cru are aged in well seasoned oak. Do. Not. Overlook. These. Wines.

Burgundy a.k.a The CHARDONNAY Motherland
Whichever you prefer, there is little denying that quintessential CHARDONNAY is found in Burgundy, more specifically within
the Côte de Beaune. Many wine makers outside of Burgundy will tell you that they’ve achieved perfection by creating a wine like
those of Montrachet. We tend to lean towards the nuttiness of Meursault, but that’s just our palate. There’s little need for
explanation, just let the wines speak for themselves.

The Wines of VINCENT DAUVISSAT
When it comes to Chardonnay there is no better place on earth than Burgundy, and in particular the small region of Chablis to
find its best expression (In our humble opinion, of course). When it comes to the region of Chablis there are two producers that
rule the village, Vincent Dauvissat & François Raveneau. Dauvissat produces a very gentle and elegant style of Chardonnay,
continuing to use giant old barrels to age the wines and has vines in the best Premier and Grand Cru vineyards. His wines from
the vineyard of Les Forest in particular, move me every time I drink them; I can still remember every bottle. They have the ability
to silence a sommelier with only a sip. This is a collection of wines that will continue to grow and we’re thrilled to be able to offer
multiple vintages of our favorite producer. Dauvissat should not be missed by any lover of Chardonnay.

Côte de Nuits
This Northern part of Burgundy is home to a majority of the great Grand Cru vineyards in the Cote d’Or. The Côte de Nuits is
made up of fourteen communes with six producing wine at the Grand Cru level. The largest Grand Cru, Clos de Vougeot sits on
almost 50 hectares, where the smallest La Romanée is only a mere .84 hectares. Like most of Burgundy the soil types vary from
one vineyard to the next, however most are made up of a base soil of limestone with marl and often sand & gravel. Côte de Nuits
is known for its fuller bodied yet elegant style of PINOT NOIR and is home to some of the best domaines such as Romanée Conti,
Jacques-Frédéric Mugnier, Georges Roumier, Armand Rousseau, Meo-Camuzet, Comte Georges de Vogüé & many more.

Spicier Reds Medium Weight
When we think of Syrah our minds instantly go to the Rhône Valley. The Valley spans almost 300km, but all it takes is to walk
across the street to find a unique expression of terroir. The region is split into two parts, North & South. The North is known for
regions like Hermitage, Côte-Rôtie, and Cornas, to name a few. The South is known for two main regions, Châteauneuf-du-Pape,
and Côtes-du-Rhône Villages. In the North, Syrah is king, and nobody does it better than the master himself, Jean Louis Chave.
Moving South you’ll find more GRENACHE dominant wines, especially in Châteauneuf-du-Pape. These wines show elegance
and power as well as well integrated spice. These tend to be more elegant, not as ‘thick’ and more feminine in style than
Zinfandel.

The King of Piemonte: NEBBIOLO
No other red grape is singled out like Nebbiolo in our list, and with good reason. Nebbiolo is one of the greatest red grapes grown.
Almost impossible to define as its aromas and flavors are so diverse. In Piemonte, Nebbiolo is the king grape and makes up some
of our favorite wines, BARBARESCO and BAROLO. Piemonte is situated in the Northern part of Italy snuggled up along the
Alps. The hills of Piemonte are picturesque, breathtaking to say the least. The wines leave us mesmerized and wanting to seek out
more. Vines planted on one hill can produce a wine completely different than a neighboring hill. At times we feel Nebbiolo is
impossible to understand, and that is why we love it and constantly want more. Here is a diverse collection of some of the best

Sizeable Reds Medium Weight
It is hard to define this selection of wines. They’re not light in weight, they’re not spicy, but they aren’t exactly big. So we’ll stick
with ‘Other’ to make it easy. These wines have varying tannin structures, generally hover around medium in weight, and are all
unique in their own right. If it’s minerality that you seek, look at CABERNET FRANC dominant wines. If you prefer tart fruit
with elegant tannins, SANGIOVESE might do the trick. If it’s earth that you prefer, maybe try a TEMPRANILLO. You get the
idea. These wines cover a wide range of styles from a range of different countries and appellations.

The Wines of FARELLA-PARK Winery
Nestled on the eastern border of Napa lies the COOMBSVILLE appellation; a freshly minted AVA in California as of 2011. But
the history of the vineyards goes back decades, which brings us to one of the most important estates of the area, Farella Winery.
Founded in 1985 by Frank Farella, the winery used to farm grapes and sell them in bulk to some of the biggest names in the
Valley. It wasn’t until Frank decided to make a barrel of CHARDONNAY, SAUVIGNON BLANC, & CABERNET/MERLOT
blend that the family decided they make their own wine instead of selling off all of the grapes. These beautifully aged CABERNET
SAUVIGNONS are a pure expression of what Napa Valley does best, from an area many might not be familiar. The vineyards sit
at approximately 300-500 feet in elevation and face South, protected by 30 acres of untouched oak woodland. Until its expansion
in 2000, the winery was only producing a combined 300 cases each vintage. These are exceptional CABERNET SAUVIGNONs
that should not be overlooked.

The Wines of QUILCEDA CREEK Vintners
Quilceda Creek Vintners is one of the highest awarded wineries in the United States, and unbeknownst to many, they’re not
located in Napa Valley. Robert Parker has only rated fifteen wineries with a 100 point rating and Quilceda Creek has received this
score three times (2003, 2005, & 2007). Quilceda was founded in 1978 by a nephew of André Tchelistcheff, one of California’s
most influential winemakers who paved the way for some of the most legendary wineries in American history. The wines are
100% Cabernet Sauvignon sourced from some of the best AVA’s in Eastern Washington. We are very fortunate to have multiple
vintages of this incredible new world Cabernet Sauvignon, in our opinion it is the best expression of balanced New World
Cabernet.
