“Ice wine” is made from grapes that are picked after frost, so that most of the water in them is
frozen. Quickly pressed, these grapes give more sugar, acid and flavor extracts relative to

Breaking up the word, spat means “late” and lese means “picking.” Put them together and you
have “late picking.” That’s exactly what the wine is made of, grapes that were picked after
