 INTRODUCTION Wine and food are two elements that go together naturally through life. Separately, they are often both pleasant and satisfying, but hand in hand this partnership can sparkle and be the source of outstanding experiences – the whole is greater than the sum of its parts – if one understands how to do it right. But “right” does not necessarily mean only a single outcome. There is an essential factor to keep in mind when it comes to this partnership: personal taste and preference. Numerous, comprehensive books have been written about both food and wine, often separately, possibly because personal taste and preference means so much when it comes to this union. Thus, when a good marriage of food and wine takes place, the rules and theories about pairing becomes trivial. One’s inclination will (and should) in many cases triumph over fact. After all, we all perceive tastes differently and no two pallets are the same. Here at Kokkeriet we have designed the wine menu on the basis of “our taste”. We have tasted our dishes – and our wine – over and over again to find the combination which we find most suitable, even though it´s not necessarily everybody’s taste. For that reason have we also composed a wine list, so our guests can choose exactly that which fits their taste best. The wine menu is based on the philosophy of finding wines that suit our food –chosen with great insight, zeal and knowledge about the different wine areas and styles. Therefore our wine list includes some of the world’s best wine producers. We try to find wines which are ready, and will provide the best experience in the glass -­‐ to the food, to the atmosphere, to the moment – and to you. Nevertheless, our focus is not concentrated on having an extensive wine menu with depth in the vintages for each area, where there may be great diversity in good and not-­‐so-­‐good vintages. The choice has already been made: we have only placed the best vintages on the menu.
